GOURMET GRILLED CHEESE SANDWICHES
A fancy sandwich for a quick lunch. Cream cheese is blended with mayonnaise and shredded cheese, then grilled between slices of French bread.

- In a medium bowl, combine cream cheese, mayonnaise, shredded cheese and garlic salt. Beat until smooth.
- Preheat a large skillet over medium heat. Spread cheese mixture on 4 slices of bread, then top with the other 4 bread slices. Lightly butter both sides of each sandwich. Place sandwiches in skillet, and grill until golden brown on both sides, about 4 minutes per side.

Steps:
- Blend all ingredients except bread and butter in a medium bowl.
- Butter one side of each slice of bread.
- Put sandwiches together using about 1/2 cup of filling each.
- Place buttered side of bread on the outside of sandwich.
- Toast on griddle or in skillet until a deep golden brown. Make sure you cook this slowly over low to med-low heat, so that the inside has a chance to melt before the outside gets too done. Kick up the heat when it gets going.
- *Depending on the size of your bread, this makes 6-10 sandwiches.

I love all grilled sandwiches! This one is very easy to make and it's great on it's own or with additions. I use low fat cream cheese and it's always good.

Steps:
- Melt 1 teaspoon butter in a small skillet.
- Spread cream cheese on one slice of bread.
- If adding extras-do so now.
- Cover with second slice of bread and butter the top slice with the other teaspoon of butter.
- Place in hot buttered skillet on unbuttered side.
- Grill until lightly browned.
- Flip it and lightly brown the other side.
- Serve!

- Butter two slices of bread. Place one slice buttered side down on a piece of waxed paper. Cut slices of cream cheese approximately 1/2 inch thick to cover surface of bread. Put the other slice of bread on top, buttered side up.
- Preheat a frying pan on the stove. Using a spatula, place your sandwich in the pan. Fry it uncovered until the bottom turns golden brown. (You can test it by lifting it up just a bit with the spatula.) Flip the sandwich over and fry the other side until it's golden brown. Remove the sandwich from the frying pan, cut it into four pieces with a sharp knife, arrange it on a place and serve it immediately.

The technique I use to prepare these sandwiches insures that they will be crispy and golden brown on the outside and creamy on the inside.

Steps:
- Combine cheeses in a bowl.
- Brush top side of each bread slice with melted butter. Flip 4 slices over, sprinkle with cheese and compact lightly with hand. Cover with remaining bread slices, buttered side up.
- Heat large nonstick skillet or griddle over medium-low heat for 1 minute.
- Place 2 sandwiches in pan on the griddle. Weight them down with a round cake pan, pressing lightly. Leave cake pan on top and cook until first side is golden brown, about 3 to 5 minutes. Flip sandwiches, press again with cake pan and cook until golden brown, about 2 minutes.
- Repeat with remaining sandwiches.
- Variations: Add one very thin slice of red onion, rings separated, while filling sandwiches. Or, add slices of very thinly sliced salami.
