GRILLED COWBOY RIB EYE WITH WATERCRESS SALAD



Grilled Cowboy Rib Eye with Watercress Salad image

One 32-ounce cowboy-cut rib eye, center-cut, dry-aged and 2 1/2 inches thick
Kosher salt and freshly cracked pepper
Kosher salt and freshly cracked pepper
1 teaspoon Dijon mustard
1/2 teaspoon finely minced shallots
1/2 teaspoon sherry vinegar
3 cups watercress
10 fresh tarragon leaves
1 red radish, thinly sliced
Extra-virgin olive oil, for drizzling
High-quality aged balsamic vinegar, for drizzling
Flaky sea salt, such as Maldon, for finishing

Steps:

  • The night before, lightly sprinkle the steak on both sides with salt. Allow to sit, uncovered, in your fridge overnight.
  • One hour prior to cooking, remove the steak from the fridge and allow to come to room temperature. Preheat a grill to medium-high heat.
  • Sprinkle the steak on both sides with salt and pepper. It is important to use more seasoning than needed, as the steak is very thick and much of the seasoning will fall off during the cooking process.
  • Grill the steak on one flat side, 5 to 8 minutes. Stand the steak up on one short side and grill for 1 to 2 minutes. Turn over and grill on the other flat side, 5 to 8 minutes. Stand it up on the opposite short side and grill for 1 to 2 minutes. Move the steak to the cooler part of the grill and cook until the internal temperature reaches 125 degrees F for medium rare. Transfer to a plate and allow to rest until the internal temperature registers 130 degrees F, about 20 minutes.
  • Measure out 1 tablespoon of the steak juices that have settled onto the plate and put in a medium mixing bowl. Whisk in the mustard, shallots and vinegar. Toss the watercress in the dressing, along with the tarragon leaves and radish slices.
  • Place the salad on a plate with the steak. Drizzle the steak with the olive oil and aged balsamic vinegar. Finish with the sea salt.

GRILLED RIB EYE STEAK WITH ROMAINE MARMALADE AND WATERCRESS



Grilled Rib Eye Steak with Romaine Marmalade and Watercress image

One 24-ounce bone-in rib eye chop, about 2 1/2 inches thick
Extra virgin olive oil
Large grain sea salt
Cracked pepper
French butter
4 bunches organic watercress, stems removed (about 2 cups leaves)
2 whole leaves romaine lettuce
1 small clove garlic
1/4 bunch fresh cilantro, trimmed
1/4 bunch fresh flat-leaf parsley, trimmed
Fresh lemon juice
Fine sea salt and freshly ground pepper
2 tablespoons extra-virgin olive oil

Steps:

  • For the steak: Sprinkle the steak liberally with olive oil, salt and pepper; make sure the entire steak is covered. Wrap lightly and place in the refrigerator for 12 hours.
  • Get the grill hot 1 hour before cooking (a charcoal or wood fire, preferably with hardwood); the embers must be burned down and glowing and there should be no flames at all. Remove the steak from the refrigerator and leave at room temperature for the same hour that the grill is getting ready.
  • When ready to grill, place the steak on the center of the hot grill and rotate left and right to get proper grill marks. Do this for both sides, about 10 minutes. When this is done, move the steak to a cooler part of the grill and cook to rare, 25 to 30 minutes. You will have to test it with your fingers by pressing gently. When done, place the steak on a rack set inside a sheet pan so the steak does not sit in its own juices. Then place a knob of French butter on top and lightly tent it with tin foil to rest for at least 15 minutes before carving.
  • For the romaine marmalade and watercress: In a blender or food processor, combine the watercress, romaine, garlic, cilantro, parsley, lemon juice, salt and pepper. Add the oil and puree until smooth. Set aside. Yield: 2 cups.
  • To serve, slice each steak into 3 thick, equal-size portions. Spoon equal portions of the watercress-romaine puree onto each of 6 warm plates. Arrange the sliced steak on each plate. Strain the steak pan juices and pour them on top of the meat.

Two 8-ounce blocks halloumi cheese, each sliced into eight 1-inch-thick sticks
1 tablespoon zaatar
1 teaspoon caraway seeds
1 teaspoon dried oregano
Freshly ground black pepper
1 tablespoon chopped fresh flat-leaf parsley
Lemon wedges, for garnish

Steps:

  • Preheat a grill for cooking over medium-high heat. Brush grill grates with some oil.
  • Brush the halloumi with some of the olive oil.
  • Combine the zaatar, caraway seeds, oregano and pepper in a small bowl. Mix until combined, then sprinkle over all sides of the halloumi.
  • Grill on each side until charred, 1 to 2 minutes. Transfer to a serving platter, drizzle with olive oil and garnish with chopped parsley and lemon wedges.

LOIN OF BEEF WITH WATERCRESS PUREE



Loin of Beef with Watercress Puree image

1 1/4-pound piece beef top loin
3 tablespoons olive oil
1 tablespoon butter
7 ounces wild mushrooms (try chanterelles, cepes, oyster mushrooms, or cremini)
2 fat cloves garlic, minced
2 teaspoons chopped fresh parsley
Sea salt and freshly ground black pepper
10 ounces watercress leaves (about 3 cups)
4 ounces spinach leaves (about 1 cup)
1/4-1 cup heavy cream

Steps:

  • First, make the sauce. Put a pan of salted water on to boil. Push in all the watercress and boil for 5 minutes. Add the spinach and cook for another minute or so until wilted. Drain in a colander. Press with the back of a ladle to extract as much moisture as possible.
  • Put the leaves in a food processor and blend to a fine puree, scraping down the sides occasionally. Pour 1/4 cup of the cream through the processor funnel and keep the blades whirling for what seems like an eternity. You will eventually get a sauce with a texture like silk. It will be so smooth, you will not need to pass it through a sieve. If you want a pouring sauce, add the remaining cream. Check the seasoning, and pour into a small saucepan for reheating.
  • Cut the beef loin into 4 even steaks and rub each side using 1 tablespoon oil. Heat a heavy, non-stick frying pan until you can feel a good heat rising. Lay in your steaks-they should give a good hiss as they hit the hot pan. Season the tops and cook for about 3 minutes, then flip over and cook the other side for 2 minutes. Slip the butter into the pan at this stage and season the second side. Remove the steaks from the pan and leave to rest while you cook the mushrooms.
  • Saute the mushrooms with the garlic in the remaining oil. Season and mix with the parsley.
  • Reheat the watercress puree. Place the steaks on warmed plates (sliced first if you like), trickle any pan juices over, and spoon on the mushrooms. If your watercress puree is firm, shape it into quenelles. If it is a sauce, spoon some over the steaks and pass the rest separately. Serve whatever accompaniment you like to eat steak with. Fries are great, or why not try slices of really fresh baguette?

Chuck's succulent grilled rib eye steak, topped with creamy oyster sauce and grilled oyster mushrooms and served with a side of sauteed broccoli and oysters, is the perfect meal to wow your guests!

3 tablespoons/45ml butter
1 clove garlic, minced
1 shallot, minced
2 cups/500ml veal stock
1 cup/250ml 35-percent cream
1 dozen oysters, shucked and chopped, liquid reserved
1 tablespoon/15ml Worcestershire sauce
Pinch cayenne
Salt and freshly ground black pepper
2 tablespoons/30ml olive oil
1 clove garlic, minced
One 1-inch piece fresh ginger, peeled and minced
1 shallot, minced
1 dozen oysters, shucked, liquid reserved
1/4 cup/60ml honey
1/4 cup/60ml low-sodium soy sauce
1 head broccoli, blanched and cut into pieces
Zest and juice of 1 lemon
Pinch cayenne
Salt and freshly ground black pepper
3 tablespoons/45ml olive oil
4 rib eye steaks (1 1/2 inches thick)
Salt and freshly cracked pepper
1 pound/450g oyster mushrooms

Steps:

  • For the oyster sauce: Melt the butter in a saucepan over medium heat. Saute the garlic and shallots until the shallots start to brown, about 2 minutes. Add the veal stock and cream and cook for 5 minutes. Add the oysters and their reserved liquid, the Worcestershire sauce and cayenne. Season with salt and pepper. Cook until reduced by half, about 10 minutes. Keep warm.
  • For the sauteed broccoli and oysters: Heat the oil in a wok or large skillet and saute the garlic, ginger and shallots. Add the oysters and their reserved liquid. Add the honey, soy sauce and broccoli and saute for 2 minutes. Add the lemon zest and juice, cayenne and salt and pepper. Keep warm.
  • For the steak and mushrooms: Remove the steaks from the refrigerator 30 minutes before you're ready to prepare them. Rub the steaks with salt and pepper. Heat 1 tablespoon oil in a cast-iron skillet until hot. Sear the steaks on one side for about 5 minutes. Flip and continue cooking for 2 to 3 minutes on the other side. Transfer the steaks to a plate and cover loosely with foil. Heat the remaining 2 tablespoons oil in the skillet and saute the mushrooms. Season with salt and pepper. Top the steaks with oyster sauce and sauteed mushrooms. Serve the broccoli and oysters on the side. Wine suggestion for this recipe: Cabernet Sauvignon
