Green Bean, Corn, and Tomato Salad image

The vibrant colors of this green bean, corn, and tomato salad come from an artful blend of late-summer vegetables.

Coarse salt
3 ears corn, husks and silk removed
1 1/2 pounds green beans, stem ends snapped off
3 cloves garlic, peeled and gently smashed
4 tablespoons extra-virgin olive oil
3 tablespoons red-wine vinegar
1/2 small red onion, peeled and thinly sliced
1 medium yellow tomato, sliced 1/2-inch thick
2 cups of small, mixed red and green heirloom tomatoes, halved

Steps:

  • In a large pot of boiling salted water, cook the corn until tender, 5 to 7 minutes. Remove corn with tongs and set aside on a cutting board to cool. Using a strainer, remove any corn silk remaining in the pot.
  • Add the green beans, return to a boil, and cook until very tender, about 8 minutes (timing may vary depending on the size of the beans). Meanwhile, cut the corn kernels off the cobs and put kernels in a large bowl. Drain the beans in a colander, shake to remove excess water, and put in bowl with corn. Add garlic and 3 tablespoons of oil. Toss well and let stand at least 30 minutes for flavors to blend; refrigerate if longer than 30 minutes.
  • If necessary, bring beans and corn to room temperature by removing them from refrigerator 30 minutes before serving. Just before serving, remove the garlic and add the remaining tablespoon of oil along with vinegar, onion, and tomatoes. Add salt to taste and serve at room temperature.

3 tablespoons sherry vinegar
1/4 cup extra-virgin olive oil
1/4 teaspoon fine sea salt
4 ears corn, grilled
1 pound green beans, blanched and cooled
1 pint cherry or grape tomatoes, halved
1/2 red onion, thinly sliced in half-rings
1 cup fresh basil leaves, thinly shredded
4 ounces ricotta salata, shaved
1/4 teaspoon ground black pepper

Steps:

  • Prepare vinaigrette by whisking together mustard, vinegar, oil, salt and pepper. Set aside.
  • Cut kernels off corn cobs and put in a large bowl.
  • Add beans, tomatoes, onion and basil.
  • Drizzle with vinaigrette and toss to combine.
  • Top with ricotta salata and serve.

4 fresh or frozen ears of corn, husks removed
One 15-ounce can black beans, rinsed and drained
One 15-ounce can chickpeas, rinsed and drained
1 cup loosely packed fresh cilantro leaves, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
1/2 red onion, chopped
1/2 jalapeno or serrano chile pepper, seeded and finely chopped (wear plastic gloves when handling)
1 teaspoon kosher salt
Freshly ground black pepper
1/2 cup freshly squeezed lime juice (from about 2 large or 4 small limes)
1 tablespoon sugar
2 teaspoons kosher salt
1 teaspoon red wine vinegar
1 teaspoon ground cumin
Pinch chili powder
2 cloves garlic, pushed through a press
1/4 cup extra-virgin olive oil
Hot sauce, preferably Crystal Hot Sauce

Steps:

  • For the salad: Preheat a grill on high for 5 minutes. Reduce the heat to medium high and grill the corn, with the cover closed and turning occasionally, until some kernels are black, about 12 minutes. Remove and allow the corn to cool slightly.
  • Using a sharp knife, cut off the kernels into a very large, deep serving bowl. (Hold the narrow end of the cob, point the other end into the bowl and cut downward, so that flying kernels are trapped by the bowl itself.) Add the black beans, chickpeas, cilantro, green and red bell peppers, onions, chile peppers, salt and pepper to taste to the bowl and toss.
  • For the dressing: Whisk together the lime juice, sugar, salt, vinegar, cumin, chili powder, garlic and olive oil in a small bowl. Season to taste with hot sauce.
  • Pour the dressing over the salad and toss to thoroughly coat. Let sit at room temperature for 20 minutes, toss again and serve. The salad can be made a day in advance, covered and refrigerated. Bring to room temperature before serving.

Fresh Corn, Tomato and Green Bean Salad image

One of the great pleasures of summer is the abundance of fresh vegetables. I had some leftover grilled corn and a few other fresh ingredients lying around, so I made this salad. I prefer the simple sweetness of the fresh vegetables in here, and raw onions don't sit well with my husband, but I bet a little onion and garlic would be great in this salad, so I added them as optional ingredients. I bet this would also be good topped with a little crumbled bacon or feta cheese.

3 ears corn, grilled or microwaved,cooled
1 lb fresh green beans
1 pint cherry tomatoes or 1 pint red pear tomatoes, halved
1/4 cup green onions or 1/4 cup shallot (optional)
1/4 cup flat-leaf Italian parsley, chopped
assorted fresh herb (such as oregano, rosemary, sage, thyme, mint, etc. to taste)
2 tablespoons honey
1 teaspoon salt
1 teaspoon fresh ground black pepper
1/2 teaspoon freshly ground coriander
1/2 teaspoon minced garlic (optional)
1 lime, juice of
1 tablespoon seasoned rice vinegar
1/4 cup oil

Steps:

  • Break the green beans into 2 inch pieces and blanch briefly in boiling water or microwave for 2-3 minutes until bright green and slightly tender.
  • Immediately run under icy cold water to stop cooking and cool.
  • Transfer beans to salad bowl and add chopped tomatoes.
  • Slice kernals off corn cobs and add to salad bowl, along with chopped herbs.
  • Make Dressing: Combine all ingredients except oil in a small mixing bowl and whisk to blend.
  • Slowly whisk in oil in a steady stream until well blended.
  • Pour dressing over salad and toss gently so as not to break up too many of the chunks of corn.
  • Serve immediately or refrigerate a few hours until ready to serve.
  • Salad is still good after a day or two, but the color of the beans will fade.
  • Bring almost to room temperature before serving.
  • NOTE:You may have to adjust the dressing to your taste.
  • I continued to play with it after I dressed the salad.

This salad is as delicious as it is beautiful, and makes for a great BBQ sidedish. Sometimes when I get the winter blahs, I'll make this and it feels like summer again!

3 cups fresh corn kernels (3-4 ears)
1 lb fresh green beans, trimmed and cut in half
1 small red onion, cut half then into thin slices
1 garlic clove
1/4 cup red wine vinegar
1/3 cup extra virgin olive oil
1 pint cherry tomatoes, cut in half
1 cup fresh basil, roughly chopped
fresh ground pepper, to taste
kosher salt, to taste

Steps:

  • Cut the corn kernels from the ears, while bringing a pot of water to a boil.
  • When the water comes to a boil, add the corn kernels and blanch for about 1 minute. Remove them with a strainer and set aside.
  • Let the water return to a boil and season generously with salt. Add the beans and cook until tender, about 3 minutes. Drain the beans and flush with cold water until they are cool.
  • Meanwhile, put the onion slices in a bowl of ice water, which will crips them and mellow their flavor.
  • Using either a mortar and pestel or the flat side of a chef's knife, mash the garlic to a paste with a pinch of salt.
  • Add the paste to a small bowl (or leave it in the mortar) and whisk in the vinegar and let sit for 10 minutes. Add the olive oil and whisk again.
  • Just before serving, drain the onions. Put the beans, corn, onions, tomatoes, and basil in a large bowl. Season with salt and pepper, and then toss with the vinaigrette. Season further if required. Serve right away.

2 tablespoons apple cider vinegar
1 large shallot, finely chopped
6 medium ears fresh corn, husked
2 cups frozen baby lima beans
2 bunches watercress, thick stems trimmed, sprigs torn in half
2 cups halved teardrop tomatoes or cherry tomatoes
1 cup coarsely grated Parmesan cheese or crumbled soft fresh goat cheese
1 cup halved pitted Kalamata olives
Roasted Red Pepper and Tomato Sauce

Steps:

  • Prepare barbecue (medium-high heat). Whisk 1/2 cup oil, vinegar, and shallot in small bowl. Set dressing aside. Brush corn with remaining 1/4 cup oil; sprinkle with salt and pepper. Grill until tender and beginning to char in spots, turning often, about 10 minutes. Cool slightly. Cut corn from cobs. Transfer to large bowl. Cook lima beans in boiling salted water until just tender, about 4 minutes. Drain. Rinse with cold water; drain. Mix lima beans into corn. Mix watercress and tomatoes into corn mixture. Add dressing and toss to coat. Season salad with salt and pepper. Sprinkle with cheese; garnish with olives. Serve, passing roasted pepper sauce.

16 large garlic cloves, unpeeled
2 1/2 tablespoons extra virgin olive oil
1/4 cup extra virgin olive oil
1/4 cup balsamic vinegar
2 tablespoons fresh basil, chopped
1 lb green beans, trimmed (haricot verts)
1 1/2 cups red onions, thinly sliced
3 plum tomatoes, seeded, julienned

Steps:

  • Preheat oven to 350ºF. Place garlic cloves in small baking dish. Drizzle 2 tablespoons oil over. Cover and bake garlic until tender, about 20 minutes. Uncover; bake until garlic is golden brown, about 10 minutes longer. Cool.
  • Peel garlic. Transfer garlic and oil to processor. Process until smooth paste forms. Add vinegar; process until well blended. Transfer to medium bowl. Gradually add 1/4 cup oil, whisking until dressing is thick and smooth. Stir in basil. Season dressing with salt and pepper.
  • Cook beans in large pot of boiling salted water until just crisp-tender, about 2 minutes. Drain; transfer beans to large bowl of ice water. Drain; pat dry with paper towels. Toss beans in a large bowl with remaining 1/2 tablespoon oil. Season with salt and pepper. (Dressing and beans can be prepared 1 day ahead. Cover separately and refrigerate).
  • Prepare barbecue (medium-high heat) or preheat broiler. Grill or broil beans until beginning to brown, turning frequently, about 2 minutes. Transfer to large bowl. Add onions and tomatoes. Toss with enough dressing to coat. Serve salad at room temperature.

A wonderful salad that takes full advantage of summer's best bounty. Paired with grilled meats, this will work well at any BBQ or picnic. Finding this in November has be already longing for next year. In the meantime, I may try this with the frozen variety though I bet it won't be nearly as good. (Update: After WI Cheesehead's experiment with frozen vegetables I managed to track down some fresh corn and beans. Following the directions presented here, the result is sweet crisp vegetables that you simply can't get from the freezer.)

8 ears corn
12 ounces French haricots vert or 12 ounces slender green beans, cut into 1 inch pieces
3 tablespoons cider vinegar
1/4 teaspoon salt
1/4-1/2 teaspoon pepper

1/3-1/2 cup red onion, chopped
2 tablespoons fresh parsley, chopped

Steps:

  • Prepare corn by removing husks and silk. In a large soup pot bring water to boil and add corn. Add additional water if needed to make sure the cobs are fully submersed. Cook for five to seven minutes until corn is just tender. Remove corn and set aside to cool.
  • In the same water, add the beans and cook for two to three minutes, until crisp-tender. Drain beans and shock with cold water to stop the cooking.
  • In a large bowl whisk together the vinegar, oil, salt and pepper. Add in the onions, corn, beans and parsley. Toss the salad together until it is fully mixed and coated with the dressing.
  • Cover and chill for up to four hours before serving.

  • Make the vinaigrette. Zest one lemon first, then juice all three. You will need 2/3 cup of lemon juice for the vinaigrette. Whisk together the olive oil, lemon zest, and lemon juice. Add mint, garlic and season with salt and pepper. Set aside.
  • Ready a large bowl filled halfway with ice and topped with cold water. Bring a large pot of water (4-5 quarts) to a boil and add two teaspoons of salt. Add green beans and cook for 4-5 minutes. At 4 minutes, quickly toss one green bean into the ice water test for doneness. You want them crisp-tender. If it’s done enough for you, place the green beans in the ice water immediately to stop the cooking process and set the color. If not, cook that additional 1 minute then move to the ice bath. After a few minutes in the ice water, drain the beans and allow them to dry. At this point you can refrigerate the green beans until you are ready to serve them. You can even cook them a day ahead.
  • When ready to serve, make your vinaigrette. Add the green, tomatoes, feta and corn to a large bowl. Toss with a few tablespoons of the vinaigrette and season with salt and pepper to taste. Sprinkle on additional chopped fresh herbs if using. Pass more dressing at the table in case someone would like a little more.
