Delicious and flavorful chicken with mango, jalapeno, chili, lime, cilantro and honey salsa.

6 chicken breasts
1 tablespoon honey
1 1/2 teaspoons salt - plus more for seasoning chicken
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
1 1/2 tablespoons lime juice - about the juice from 1 lime
dash of cayenne pepper
1/4 teaspoon black pepper
Mango jalapeno salsa:
2 mangoes - peeled (cored and diced into chunks)
1/2 cup cilantro - chopped
1/2 jalapeno - seeds removed and minced
3 tablespoons lime juice - about 2 limes juiced
1/4 teaspoon salt - more to taste
1 tablespoon honey

Steps:

  • Pre-heat grill to 400 F.
  • In a bowl, add honey, salt, chili powder, garlic power, lime juice, cayenne pepper and black pepper and stir together into a glaze.
  • Sprinkle chicken breast with salt and place on grill or smoker.
  • Use a marinade brush to brush the marinade onto each chicken breast and let each side cook for about 10 minutes, brush more on and flip to the other side until marinade is gone and chicken breasts are cooked through to 165 F. internal temperature. Mine takes about 40 minutes to cook through.
  • To make the salsa, add all ingredients into a bowl and stir together. Taste and adjust salt to taste.

1/4 cup olive oil
4 tablespoons fresh lime juice
1 tablespoon fresh lime zest
1 tablespoon chili powder
1/2 tablespoon onion powder
1 teaspoon garlic powder
1 teaspoon cumin powder
1 teaspoon cayenne pepper
1/2 teaspoon ground coriander seed
3 boneless (skinless chicken breasts, cut into 2 inch chunks)
1/4 cup fresh chopped cilantro
8 6- inch wooden skewers (soaked in water for 1 hour)
1 1/2 cups diced mango
1/2 cup diced red pepper
1/4 cup cup minced red onion
1/4 cup chopped fresh cilantro
2 tablespoons minced serrano chili pepper (or jalapeno pepper for a milder flavor)
1/2 teaspoon kosher salt
juice of 1 lime

Steps:

  • Place the olive oil, lime juice, zest, chili powder, onion powder, garlic powder, cumin, cayenne and coriander in a resealable bag. Seal the bag and mix the ingredients together by gently squeezing the bag.
  • In a medium bowl, add the mango, pepper, onion, cilantro, chili pepper, salt and lime. Toss to combine. Cover and refrigerate until ready to serve.
  • Add the chicken to the bag and press out the air. Seal the bag and marinade for 1 - 24 hours.
  • Thread 4-5 pieces of chicken on each skewer being sure to leave space between each piece so the chicken cooks evenly.
  • Grill chicken for 4 minutes. Flip the skewer and cook for an additional 4-5 minutes or until cooked through.
  • Serve the chicken with the salsa. Sprinkle with chopped cilantro, if desired.

1 cup diced fresh mango
1 cup diced fresh papaya
1 large red pepper
1/4 cup shredded coconut
1/3 cup diced red onion
1 jalapeno pepper, seeded and minced
2 tablespoons of fresh mint, chopped
1 tablespoon fresh lime juice
1/4 cup olive oil
1/4 cup fresh lime juice
2 tablespoons finely chopped cilantro
1 tablespoon brown sugar
1 shallot, finely chopped
1/2 teaspoon ground cumin
1 teaspoon finely chopped lime zest
salt & freshly ground black pepper
3 large whole boneless chicken breasts (6 breast halves)

Steps:

  • Prepare the marinade: In a small bowl, combine all the marinade ingredients and whisk to combine. Taste for seasoning and adjust if necessary.
  • Place the chicken breasts between two sheets of plastic wrap and pound to flatten slightly with a rolling pin. Arrange the chicken breasts in a large shallow glass dish and pour the marinade over, Turning to coat evenly. Cover and refrigerate for 2 to 4 hours, turning several times to make sure the marinade covers all the chicken.
  • Meanwhile prepare the salsa: Place the red pepper in a preheated 425*F oven and roast until skin is well blistered. (alternatively roast over a gas flame) Place blistered pepper into a zip lock baggie and close the bag. Let it sit for about 10 to 15 minutes. Remove from bag. Slip peel off and remove seeds. Chop roasted pepper and combine with remaining salsa ingredients. Mix well, cover and chill until ready to serve.
  • Prepare a charcoal or gas grill for medium high heat grilling. Remove the chicken from the marinade and place on grill rack. Grill, turning once for 7 to 10 minutes on each side, or until juices run clear. Alternatively, you may broil the breasts for 7 to 10 minutes on each side, once again, until the juices run clear.
  • To serve, place the chicken on individual plates and spoon the mango salsa on top.

This is a recipe I came up with while trying to figure out what to do with stuff I had on hand. It was so good my husband asked me to publish it and share it with the world. Southwestern food is my specialty. It is especially good with the Fabulous French Loaves recipe on this site.

¼ cup finely chopped fresh cilantro
1 clove garlic, minced
¼ jalapeno chile pepper, seeded and minced
2 tablespoons finely grated fresh lime zest
1 ½ teaspoons salt
½ teaspoon onion powder
¼ teaspoon ground black pepper
¼ teaspoon chipotle chile powder
1 tablespoon olive oil
1 pound chicken breast tenderloins or strips
1 medium tomato, chopped
1 small sweet onion, finely chopped
2 tablespoons finely chopped fresh cilantro
½ jalapeno chile pepper, seeded and minced
1 clove garlic, finely chopped
¼ teaspoon ground black pepper
¼ teaspoon sea salt
⅛ teaspoon chipotle chile powder
1 tablespoon fresh lime juice
1 sweet onion cut into 1/2-inch slices
1 red bell pepper, quartered
1 tablespoon olive oil
¼ teaspoon salt
½ teaspoon minced garlic
½ cup mayonnaise
2 tablespoons fresh lime juice
16 thick slices French bread
2 mangos - peeled, seeded, and sliced
8 slices Monterey Jack cheese

Steps:

  • For the marinade: Place 1/4 cup cilantro, 1 clove minced garlic, 1/4 jalapeno, lime zest, 1 1/2 teaspoons salt, onion powder, 1/4 teaspoon black pepper, 1/4 teaspoon chipotle chile powder, and 1 tablespoon olive oil in a small bowl and stir until well combined. Place the chicken breast tenderloins in a large resealable plastic bag. Pour the marinade into the bag with the chicken, seal, and shake the bag to coat. Refrigerate for 1 hour.
  • For the salsa: Combine the tomato, 1 small onion, 2 tablespoons cilantro, 1/2 jalapeno, 1 clove garlic, 1/4 teaspoon black pepper, sea salt, 1/8 teaspoon chipotle pepper, and 1 tablespoon lime juice in a bowl. Cover with plastic wrap and refrigerate.
  • To prepare the grilled vegetables, toss the onions and red peppers with 1 tablespoon olive oil, 1/4 teaspoon salt, and 1 clove garlic in a bowl; set aside.
  • For the lime mayonnaise: Whisk together the mayonnaise and 2 tablespoons of lime juice; cover with plastic wrap and refrigerate.
  • Preheat an outdoor grill for medium-high heat.
  • Grill the marinated chicken on the prepared grill until no longer pink in the center and juices run clear, 8 to 10 minutes. Grill the red pepper and onions until tender and golden brown, 8 to 10 minutes. Remove the chicken and vegetables from the grill. Slice the grilled pepper into thin strips.
  • Spread each slice of bread with 1 1/2 teaspoons of prepared lime mayonnaise. Layer half of the pieces of bread with sliced mango, 1 tablespoon prepared salsa, grilled chicken tenderloins, grilled peppers, grilled onions, and a slice of Monterey Jack cheese. Top off the sandwiches with the remaining slices of bread. Return the sandwiches to the grill, turning when the bottom is golden brown
  • Return the sandwiches to the grill and grill them until the bread is toasted and the cheese melts, about 2 minutes per side.

4 chicken breasts, skinless boneless
2 tablespoons olive oil
1 lime
2 teaspoons ground cumin
salt
2 poblano peppers
1 large mango
1 tablespoon extra virgin olive oil
2 teaspoons chili powder
1 cup chopped tomato
1/4 cup chopped onion
1/4 chopped cilantro
1 jalapeno, seeded and chopped
1 lime
salt and pepper
8 ounces mexican white cheese, coarsely grated (Queso Fersco)

Steps:

  • Butterfly breasts into pieces about 1/2 inch thick. Rub with oil then squeeze on lime juice. Season with ground cumin and salt. Grill on stove top grill pan or outdoor grill 5-6 minutes per side.
  • Set aside and keep warm. Roast peppers until blackened on stove top or under broiler, let steam, peel, remove seeds and chop. Slice unpeeled mango and rub cut side with oil. Sprinkle with chili powder.
  • Grill cut side down for 3-5 minutes. Let cool and cut into cubes removing peel. Toss grilled pepper and mango with tomato, onion, cilantro and jalapeno. Squeeze lime juice over salsa and mix. Season the salsa to taste with salt and pepper.
  • Place grilled chicken in a baking dish and top with salsa and cheese Place under broiler until cheese melts.

This is great as a main dish, but if you have left-overs or make a double batch, the chicken can be cut into strips and frozen, then used on salads or in wraps for lunch. I have two recipes I'm posting that use these chicken strips: Chili-Lime Chicken and Avocado Wraps, Chili-Lime Chicken Mexi-Ranch Salad. I also use the leftovers for impromptu fajitas. (In our house, these are "Make it your own self" meals.) I've never tried this marinade on flank steak, but I bet all of the above would be great with it as well. If you try it before I do, please let me know how it turns out!

2 tablespoons green onions, minced
1 garlic clove, minced
4 tablespoons fresh lime juice

Steps:

  • Combine all ingredients except chicken in a large zipper bag. Squish to combine. Add chicken, turn to coat well. Refrigerate and marinate for about 3 hours or so.
  • Heat grill to medium high. Remove chicken and discard remaining marinade. Grill chicken 4-5 minutes on each side, or until juices run clear. This works well on an indoor or outdoor grill, but I wouldn't recommend baking it. If you absolutely can't grill it, you might get away with searing it in a skillet.
  • Leftovers can be sliced and frozen to be used later in other recipes. (See above).

4 boneless skinless chicken breasts
1 large lime
4 garlic cloves
1 tablespoon olive oil
2 ripe mangoes, peeled and chopped
3 very ripe roma tomatoes, chopped
1 sweet red peppers or 1 yellow sweet pepper, seeded and chopped
1 serrano pepper (only use as much as the amount of heat you can take)
2 green onions, chopped
1/4 cup chopped fresh cilantro
1 lime, juice of
1 -2 tablespoon sugar (if your mangoes aren't very sweet)
salt and pepper
4 cups steamed short grain cooked brown rice

Steps:

  • Marinate the chicken w/ the juice of one lime and the oil and garlic in a zip lock bag in the fridge for at least 2 hrs or overnight.
  • For the salsa mix all the ingredients and season with salt and pepper to taste, set aside for the flavors to blend, mean while grill the chicken breasts on low heat till no longer pink.
  • Place 1 cup of rice on each plate cover with a chicken breast and then divide the salsa amongst the 4 plates and serve.
  • Time does not include marinade time or time to steam rice.
