CHICKEN WITH ALMOND SAUCE

5 lbs chicken pieces
salt and freshly ground pepper
3 Tbs. STAR Originale Olive Oil
1 large onion, chopped
4 cloves garlic, minced
2 Tbs. all-purpose flour
1 1/2 cups chicken broth
1 bay leaf
pinch saffron strands
1/2 cup slivered almonds
3 Tbs. minced parsley
2 hard-cooked eggs, chopped
2 Tbs. STAR Capers

Steps:

  • 1.Sprinkle chicken with salt and pepper to taste. Heat olive oil in 1 very large or 2 medium skillets over medium-high heat. Add chicken and brown on all sides, about 3-5 minutes per side. Remove chicken and set aside. Pour off all but 2 Tbs. of pan drippings. In same pan, saute onion and half of garlic until soft. Stir in flour to blend, then slowly stir in 1 cup broth, bay leaf and saffron. Return chicken to pan, cover and simmer over medium-low heat 30 minutes.
  • 2. Meanwhile, in blender, combine almonds, 2 Tbs. parsley, remaining garlic and broth. Process until almonds are finely ground. With tongs or slotted spoon, transfer chicken to platter. Turn heat to high and stir almond mixture into pan liquids. Bring to boil and boil 1-2 minutes, or until slightly thick. Pour sauce over chicken and sprinkle with eggs, capers and remaining parsley.

A refreshing salad boasting grilled chicken, greens, tomatoes, avocados and pear. It includes homemade dressing and sweetened with sugar-glazed almonds. Adapted from Jan Roberts-Dominguez.

1/4 cup red wine vinegar or 1/4 cup white wine vinegar
1 tablespoon sugar
2 tablespoons lightly toasted sesame seeds
1 tablespoon poppy seed
1 tablespoon coarsely chopped onion
1/2 teaspoon Worcestershire sauce
1/4 teaspoon paprika
1/2 teaspoon salt
1/3 cup vegetable oil
4 boneless skinless chicken breast halves, grilled and cooled
6 cups salad greens
2 roma tomatoes, diced
2 Hass avocadoes, peeled, seeded and diced
1/2 cup sugar-glazed almonds (recipe follows)
1/4 cup minced sweet onion
3 leaves romaine lettuce
2 ripe pears, cored and sliced
1/2 cup sliced almonds
2 tablespoons sugar

Steps:

  • To Make The Salad Dressing: In a blender or food processor, combine the vinegar, sugar, sesame seeds, poppy seeds, onion, Worcestershire sauce, paprika and salt. Blend until most of sesame seeds are ground. Scrape contents into a small bowl, then whisk in the oil in a slow, steady stream. Makes 3/4 cup.
  • To Assemble: Cut the chicken into 1/4-inch pieces and combine with 1/2 cup vinaigrette, the salad greens, diced tomatoes, avocado, almonds and onion. Arrange the romaine lettuce leaves on salad plates, then divide salad mixture between them. Garnish with the pear slices.
  • To Make Sugar-Glazed Almonds: In a nonstick skillet, roast sliced almonds over medium-high heat until golden, shaking pan to prevent scorching. Sprinkle on about 2 tablespoons sugar, stirring constantly and cook until sugar melts around almonds. Remove from heat and quickly scrape almonds onto a sheet of waxed paper to cool. Makes 1/2 cup.

Purée grilled bell peppers, almond butter, sherry vinegar, and garlic into an irresistibly smoky-sweet sauce that's great served with a crunchy grilled chicken salad.

1 lb. skinless, boneless chicken thighs
1 tsp. kosher salt
3 Tbsp. sherry vinegar or red wine vinegar
2 garlic cloves, finely grated
Vegetable oil (for grill)
For the Romesco:
Vegetable oil (for grill)
2 large red bell peppers
1 garlic clove, finely grated
2 Tbsp. sherry vinegar or red wine vinegar
2 Tbsp. unsweetened almond butter
1 Tbsp. extra-virgin olive oil
1 1/4 tsp. kosher salt
1/4 tsp. cayenne pepper
For the Salad:
3 small heads of Little Gem lettuce, leaves separated, or 1 romaine heart, cut into 2" pieces
2 mini seedless cucumbers, halved lengthwise, sliced into half moons
1/2 red onion, thinly sliced
1 cup parsley leaves with tender stems
1/2 tsp. kosher salt
1/4 tsp. freshly ground black pepper
2 Tbsp. extra-virgin olive oil
1 Tbsp. fresh lemon juice
Hot smoked paprika (for serving; optional)

Steps:

  • Grill the Chicken:
  • Season chicken on all sides with salt in a medium bowl. Add vinegar and garlic and toss to coat. Let sit 15 minutes.
  • Prepare a grill for high heat and brush grate lightly with oil. Grill chicken, turning occasionally, until lightly charred and an instant-read thermometer inserted into thickest part of thigh registers 165°F, 12-15 minutes. Let cool.
  • Do Ahead: Chicken can be grilled 4 days ahead. Transfer to an airtight container and chill.
  • Make the Romesco:
  • Lightly brush grill grate with vegetable oil. Grill peppers over high heat, turning occasionally, until skins are blackened and blistered all over, 15-20 minutes. Transfer to a large bowl, cover with plastic wrap, and let sit until cool enough to handle.
  • Remove skins and seeds from peppers; discard. Purée peppers, garlic, vinegar, almond butter, olive oil, salt, and cayenne in a blender until smooth. Transfer to a small bowl .
  • Do Ahead: Peppers can be grilled 4 days ahead. Transfer to an airtight container and chill. Romesco sauce can be made 4 days ahead. Transfer to an airtight container and chill.
  • Assemble the Salad:
  • Thinly slice chicken. Transfer to a large bowl. Add lettuce, cucumbers, onion, and parsley. Season with salt and pepper and toss to combine. Pour oil and lemon juice over and toss to coat.
  • Spread about 1/4 cup romesco sauce across each plate, then top with salad. Sprinkle with paprika, if using.

This yogurt marinade, ideal for grilled chicken, is infused with a mix of fresh and dried herbs, lemon zest and plenty of garlic. Apply it at least a couple of hours before cooking or up to the night before: The longer it sits, the more effective the marinade will be, tenderizing the meat and infusing it with flavor. But even a short stint will improve your result and add a perfect complement to the heat from the grill.

5 garlic cloves, finely grated, pressed, or minced
1 lemon, zested
1/3 cup plain whole-milk yogurt
1/4 cup chopped fresh soft herbs such as cilantro, mint, basil, parsley, dill or a combination
3 tablespoons extra-virgin olive oil
1 1/2 tablespoons dried herb mix such as za'atar, herbs de Provence, Italian seasonings, or a mix of dried herbs such as oregano and thyme
1 tablespoon chopped fresh oregano, marjoram, or thyme
1 3/4 teaspoons salt
1/4 teaspoon freshly ground black pepper

Steps:

  • In a large bowl or container, stir together grated garlic cloves, lemon zest, yogurt, the fresh soft herbs, oil, dried herbs, oregano, marjoram, or thyme, salt and black pepper. (This yields about 1 cup marinade, good for about 2 pounds of chicken.) Let sit for a couple of hours and up to overnight.

  • Add bread cubes and garlic to same pot. Cook, stirring frequently, until bread is golden brown and crisp, 4–5 minutes. Using a slotted spoon, transfer to blender. Add broth, Sherry, 1/2 tsp. pepper, saffron, if using, and a large pinch of salt; process until almost smooth. Set aside.
  • Heat remaining 1 Tbsp. olive oil in same pot over medium-high heat. Season chicken with salt and pepper. Add to pot and cook, turning down heat if needed to prevent burning, until chicken is golden brown on all sides, about 12 minutes Total (this step is just to brown the skin). Transfer chicken to a plate.
  • Add onion to pot; cook, stirring often, until onion is caramelized around edges, about 6 minutes. Add sauce and chicken to pot, pushing down chicken to submerge. Bring sauce to a simmer, cover, and reduce heat to low. Simmer until chicken is just cooked through, about 20 minutes. Season to taste with salt and pepper.
