1 can (14 ounces) whole-berry cranberry sauce
1/2 cup maple syrup
1/4 cup cider vinegar
1 to 1-1/2 teaspoons ground mustard

Steps:

  • Preheat oven to 325°. Line a roasting pan with foil. Place ham on a rack in prepared pan. Bake, covered, 1 hour., Meanwhile, in a small saucepan, whisk remaining ingredients until blended. Remove 1 cup mixture for glaze; reserve remaining mixture for sauce. Brush ham with some of the glaze mixture. Bake, uncovered, until a thermometer reads 140°, 35-45 minutes, brushing every 10 minutes with remaining glaze., Warm reserved sauce mixture over medium heat, stirring occasionally; serve with ham.

A tangy cranberry-pecan relish adds a festive touch to a honey-glazed spiral sliced ham.

1 Cook's® Bone-in Spiral Sliced Half Ham (about 9 pounds)
1/2 cup honey (cranberry honey preferred, if available)
1-1/2 teaspoons dry mustard
1 teaspoon lemon juice
1 large Granny Smith apple, peeled, finely chopped (about 1-1/2 cups)
1 cup cranberry juice cocktail
1 package (6 ounces) sweetened dried cranberries (about 1-1/3 cups)
2 tablespoons Orange Marmalade
1/4 cup chopped pecans

Steps:

  • 1. Remove and discard glaze packet from ham or reserve for another use. Begin by preparing ham according to package directions.
  • 2. Make Honey Glaze: While baking, mix honey, mustard and lemon juice in small bowl until blended. Set aside until the last 30 minutes of baking time.
  • 3. Make Cranberry Relish: Combine apples and juice in medium saucepan. Bring to a boil over medium heat. Reduce heat to medium-low; simmer 5 minutes, stirring occasionally. Add cranberries; simmer an additional 5 minutes, or until fruit is tender, stirring occasionally. Remove from heat; stir in marmalade and pecans. Set aside until ready to eat. Or, if made in advance, cover and refrigerate until ready to use.
  • 4. Uncover ham and brush with the Honey Glaze for the last 30 minutes of the baking time.
  • 5. Let stand 10 minutes. Carve and serve with Cranberry Relish.

1 cup brown sugar, packed
1/4 cup fresh orange juice
1/2 teaspoon ground cloves
1/4 teaspoon cinnamon
1/4 teaspoon allspice
1/4 teaspoon black pepper (optional)
1 (5 lb) ham
1/3 cup water

Steps:

  • Set oven to 325 degrees.
  • In a small saucepan combine the cranberry sauce, brown sugar, fresh orange juice, cloves, cinnamon, allspice and black pepper, if using; heat slowly stirring until smooth.
  • Place the ham on a rack in a shallow roasting pan with 1/3 cup water.
  • Insert a meat thermometer in the ham.
  • Bake until the thermometer reaches 125 degrees (about 1-1/2 to 2 hours).
  • Brush a third of the glaze on the ham 30 minutes before the end of baking time.
  • Spoon on the remaining glaze every 10 minutes (within the 30 minutes).
  • After removing the ham from the oven, let stand for 15 minutes before carving.

7 1/2 lb (3.5 kg) bone-in ham or smoked pork picnic shoulder
1 small onion, cut into chunks
1 medium carrot, peeled and cut into chunks
6 whole cloves
2 whole allspice
1 tsp black peppercorns
1 bay leaf
1/2 cup whole berry cranberry sauce
2 tbsp Dijon mustard
2 tbsp packed brown sugar
1/2 tsp allspice
1/4 tsp coriander, optional

Steps:

  • Place ham in a large stockpot.
  • Cover ham with cold water. Cover and refrigerate for 8 hours or overnight. Drain; cover with fresh cold water.
  • Add onion, carrot, cloves, whole allspice, peppercorns and bay leaf to stockpot. Bring to a boil; reduce heat, cover and simmer for 1 1/2 hours.
  • Remove ham from cooking liquid and place on a cutting board. Discard cooking liquid.
  • Leaving a thin layer of fat, trim rind and excess fat from ham. Score fat in a criss-cross pattern, if desired. Place ham in a roasting pan.
  • Place ham in roasting pan.
  • Combine remaining ingredients (cranberry sauce through coriander) and spread evenly over ham. Bake at 425ºF for 30 - 35 minutes or until a meat thermometer registers 160F(71C).
  • Let stand 15 minutes before carving.
