30-MINUTE EASY GRILLED CHICKEN AND VEGETABLES
This easy grilled chicken and vegetables recipe takes 30 minutes to make and is a delicious, healthy family dinner plus it is great for meal-prep.

Steps:
- Pre-heat the grill/griddle pan.
- Season the chicken with salt and allow to sit while you make the marinade.
- Combine all the marinade ingredients and mix well. Pour half of the marinade over the chicken and the other half over the vegetables. Allow to marinade for a few minutes.
- Grill the chicken for 5-7 minutes per side (depending on thickness) until cooked to your preference. Remove from the grill, cover with foil and allow to rest while you grill the vegetables.
- Grill the vegetables until they are starting to char and are cooked to your preference.
- Remove from the grill and serve with the chicken and lemon wedges for squeezing.

- Toss the vegetables with the olive oil, salt, and pepper.
- Cook the sausages on the grill until fully cooked or warmed through. For raw sausages, this will take 6-8 minutes per side. For precooked sausages, they take 3-4 minutes per side.
- Cook the vegetables on the grill or in a grill basket.They should take 3-4 minutes per side. Roughly chop.
- Drizzle with vegetables with balsamic vinegar and toss with fresh basil. Season with salt and pepper as needed. Serve alongside sausages.

- Place the first 5 ingredients in a blender; if desired, add pepper sauce. Cover and process until blended., Cut peppers lengthwise in half; remove seeds. Cut eggplant lengthwise into 1/2-in.-thick slices. Cut zucchini and yellow squash lengthwise into quarters. Place all vegetables in a large bowl; drizzle with 1/2 cup of the sauce and toss to coat., Place vegetables on a greased grill rack. Grill, covered, over medium heat 8-10 minutes or until tender and lightly charred, turning once. Cool slightly. Reduce grill temperature to medium-low heat., Cut vegetables into bite-sized pieces. Toss with additional 1/4 cup sauce; keep warm., Grill sausages, covered, over medium-low heat 15-20 minutes or until a thermometer reads 160° for pork sausages (165° for turkey sausages), turning occasionally. - In a large bowl, combine the first six ingredients. In a small bowl, combine the oil, oregano, parsley, garlic salt and paprika. Pour over sausage mixture; toss to coat. Divide between two pieces of heavy-duty foil (about 14 in. x 12 in.). GRILLED CHICKEN AND VEGETABLES
A recipe from my Mr. Yoshida's Fine Sauces Cookbook which I haven't tried yet. Cut chicken into 1-inch cubes to make kabobs. I'd serve this with rice. Cooking time includes 30 minutes refrigeration time.

- Put chicken breasts (or cubes if making kabobs) in a zip bag with 1/4 cup of Gourmet Sauce; shake bag to coat chicken.
- Marinate 30 minutes in refrigerator.
- [Preparevegetables while chicken marinates.
- ].
- Grill or broil chicken for 8-10 minutes on each side or until juices run clear.
- Baste chicken using 1/2 cup sauce during grilling.
- Remove chicken from grill and keep warm.
- Place vegetables in a grill basket or on a broiler pan and grill or broil for 10-12 minutes until vegetables are tender-crisp.
- Heat remaining 1/2 cup sauce in a small saucepan.
- Slice chicken into strips and toss together with grilled vegetables and heated sauce.
- Alternate kabob method: While chicken is marinating, thread red pepper, mushroom halves, and zucchini cubes on soaked skewers.
- Thread marinated chicken cubes on skewers.
- Grill skewers until vegetables are tender crisp (15-20 minutes) and chicken is cooked (about 20 minutes).
- Baste the skewers during grilling.
ROASTED VEGETABLES WITH CHICKEN SAUSAGE
What to do when you have a little of this and a little of that in the vegetable drawer that needs to be used. Makes a hearty meal for 4 when served with corn bread or corn muffins. Be sure and cut the vegetables into equal pieces to ensure proper cooking.

- Preheat oven to 400 degrees.
- Cut vegetables and place in a 13 x 9 inch baking dish that has been sprayed with non-stick cooking spray. Toss in the garlic and sausages.
- In a small dish combine the oil, mustard and honey. Pour over vegetables and toss to thoroughly coat. Sprinkle with salt and fresh ground pepper. Place in the preheated oven and cook for 30 to 40 minutes or until vegetables stick fork tender. Stir at 15 minutes and then again at 30.
- Serve with corn muffins or cornbread for a delicious meal.
