Redolent of ginger and jalapenos, the tomato sauce is a lively addition to plain grilled chicken. If you like less heat, use only one jalapeno. Rice and beans or refried beans are typical Brazilian side dishes that taste especially good with chicken.

4 tablespoons cooking oil
3 garlic cloves, minced
1 chicken, quartered (3 to 3 1/2 pounds)
3/4 teaspoon salt
fresh ground black pepper
1 onion, chopped
1 tablespoon minced fresh ginger
2 jalapeno peppers, seeds and ribs removed, minced
1 1/4 cups canned crushed tomatoes in puree
1 cup canned unsweetened coconut milk
2 tablespoons chopped cilantro or 2 tablespoons parsley

Steps:

  • Light the grill.
  • In a shallow dish, combine 3 tablespoons of the oil with two-thirds of the minced garlic.
  • Coat the chicken with half of the garlic oil and season with 1/4 teaspoon of the salt and 1/8 teaspoon pepper.
  • Grill the chicken over moderately high heat, basting with the remaining garlic oil, until just done, about 10 minutes per side for the breasts, 13 for the legs.
  • Meanwhile, in a medium saucepan, heat the remaining 1 tablespoon oil over moderately low heat.
  • Add the onion and cook, stirring occasionally, until translucent, about 5 minutes.
  • Add the remaining garlic, the ginger, and the jalapenos, and cook, stirring, for 1 minute longer.
  • Add the tomatoes, the coconut milk, the remaining 1/2 teaspoon salt, and a pinch of pepper.
  • Bring to a simmer and cook, stirring occasionally, until thickened, about 5 minutes.
  • Stir in the cilantro and serve with the chicken.

Sauce:
1 cup water
1/4 cup plus 2 tablespoons tomato paste (from a 6-ounce can)
1 cup soy sauce
1 cup distilled white vinegar
3/4 cup sugar
3/4 cup minced onion (about 1 medium)
1/3 cup minced serrano or jalapeño chiles with seeds
1/4 cup minced garlic (about 9 large cloves)
Chicken:
6 large chicken drumsticks (about 1 1/2 pounds)
6 large chicken thighs (about 2 pounds), trimmed of any excess fat and skin
Lime wedges for serving

Steps:

  • Stir together water and tomato paste in a 2 1/2- to 3-quart heavy saucepan until smooth, then stir in remaining sauce ingredients. Bring mixture to a boil, stirring, then reduce heat and briskly simmer, stirring occasionally, until sauce is reduced to 2 1/4 cups, 50 to 60 minutes. Stir frequently toward end of cooking to prevent sticking. Reserve 1 cup sauce for serving.
  • Prepare grill for indirect-heat grilling over medium-hot charcoal (medium-high heat for gas grills; see Grilling Procedure ).
  • Pat chicken dry (do not season with salt and pepper). Lightly oil grill rack and place chicken, skin side down, on area with no coals underneath (over turned-off burner if using gas). Grill, covered, turning once, until chicken registers 165°F, 22 to 25 minutes. (Chicken may appear pale; no cause for worry.)
  • Brush generously all over with some of sauce, then move chicken directly over coals (turned-on burners if using gas). Grill chicken, covered, turning and moving to area with no coals or heat underneath if flare-ups occur, until browned, 3 to 5 minutes more. (Add more charcoal during grilling if necessary to maintain heat.)
  • Serve chicken with reserved sauce.

2 dried ancho chiles,* stemmed, seeded, torn into large pieces
4 1/2 tablespoons vegetable oil
1 3-inch-diameter slice white onion (1/2 inch thick), separated into rings
2 garlic cloves, peeled
1 5x3x1/2-inch-thick slice country white bread, crust trimmed
3/4 cup drained canned diced tomatoes
3 1/2 cups low-salt chicken broth
4 canned chipotle chiles*
1 cup canned pure pumpkin
1/3 cup whipping cream
2 teaspoons dark brown sugar
8 skinless boneless chicken breast halves
Fresh cilantro sprigs
Lime wedges

Steps:

  • Heat heavy large pot over medium heat. Add chile pieces; toast until aromatic and lighter in color around edges, pressing with potato masher or back of fork and turning pieces, about 2 minutes. Set aside one 2-inch piece of chile for garnish; transfer remaining pieces to medium bowl. Cover chiles in bowl with hot water; soak until soft, about 30 minutes.
  • In same large pot, heat 1 1/2 tablespoons oil over medium-high heat. Add onion rings and garlic. Sauté until brown, about 4 minutes. Transfer to processor, leaving oil in pot. Add bread slice to pot; cook until golden, about 30 seconds per side. Transfer bread to processor (reserve pot). Add tomatoes to processor. Puree mixture until smooth. Transfer tomato puree to small bowl (do not clean processor).
  • Drain ancho chiles and place in processor. Add 1/2 cup broth and 2 chipotle chiles. Puree until smooth.
  • Add 1 tablespoon oil to reserved pot. Heat over medium-high heat. Add ancho chile puree; cook until puree thickens and darkens, stirring often, about 1 1/2 minutes. Add tomato puree. Simmer until thick, stirring often, about 4 minutes. Whisk in pumpkin and 3 cups broth. Bring to boil. Reduce heat to medium-low. Simmer until mole thickens and reduces to 3 1/3 cups, about 30 minutes. Whisk in cream and sugar. Season to taste with salt.
  • Puree 2 tablespoons oil and 2 chipotle chiles in small processor or force through sieve to make thick glaze. Transfer to bowl. (Mole and glaze can be made 3 days ahead. Cover separately and chill.)
  • Prepare barbecue (medium-high heat). Rewarm mole. Spread chipotle glaze thinly over both sides of chicken breasts. Sprinkle chicken generously with salt. Grill until cooked through, about 5 minutes per side. Transfer chicken to plates. Spoon mole over each. Crumble reserved ancho chile piece; sprinkle over chicken. Garnish with cilantro sprigs and lime.
  • *Dried ancho chiles and chipotle chiles canned in a spicy tomato sauce, sometimes called adobo, are available at Latin American markets, specialty foods stores, and some supermarkets.

1 cup coconut milk
2 tablespoons fresh lemon juice
2 1/2 teaspoons kosher salt
1/2 teaspoon fresh ground black pepper
2 teaspoons crushed red pepper flakes
4 boneless skinless chicken breast halves
2 tablespoons olive oil
1/2 small yellow onion, minced
1 teaspoon grated lemon zest
1 inch piece ginger, peeled and grated
1 teaspoon crushed red pepper flakes
2 teaspoons double concentrate tomato paste
3 garlic cloves, minced
13 1/2 ounces coconut milk
1/2 cup heavy cream
kosher salt & freshly ground black pepper

Steps:

  • To make the chicken, buzz the onion, garlic, ginger, coconut milk, lemon juice, salt, black pepper, and red pepper flakes in a food processor until smooth. Drop the chicken pieces into a ziploc bag and pour in the marinade. Place the bag in a shallow dish and marinate in the fridge for at least 4 hours, but overnight is better, turning several times.
  • To make the sauce, heat the oil in a large skillet over medium heat. Add the onion and cook, stirring often, until golden brown, about 7 minutes. Reduce the heat to low, add the lemon zest, ginger, red pepper flakes, and tomato paste, and cook, stirring often, until the colors deepen and the mixture is very fragrant, 8 to 10 minutes. Toss in garlic and cook for 1 minute more.
  • Pour in the coconut milk and cream and bring to a boil, e turn heat to low and simmer, uncovered, until the liquid has reduced by one quarter, about 10 minutes. Season to taste with salt and pepper. Cover and keep warm.
  • Meanwhile heat a grill to high. Remove the chicken from the fridge and let sit out for 30 minutes.
  • Lower the heat of the grill to medium and brush the grate with oil. Remove chicken from marinade and grill until well marked and cooked through, about 5 to six minutes per side.
  • To serve, slice each chicken breast into 3 pieces on the bias. Place cooked rice onto plates, top with chicken slices, and spoon sauce over top.

4 boneless, skinless chicken breast halves (6 to 8 ounces each)
1 1/4 teaspoons fine sea salt
1 teaspoon black pepper, more as needed
1/2 teaspoon smoked sweet paprika
Finely grated zest of 1 lime
2 garlic cloves, grated on a Microplane
2 tablespoons extra-virgin olive oil, more for drizzling
1/3 cup packed fresh cilantro leaves

Steps:

  • Place a chicken breast between a layer of parchment paper or plastic wrap and use a mallet, rolling pin or the flat side of a heavy knife to pound to a thickness of about 1/2 inch. Repeat with remaining breasts.

  • In a medium bowl, toss cucumbers with a pinch of salt. Let sit for 5 minutes. Right before serving, toss cucumbers with sauce and serve alongside chicken, drizzling chicken with any leftover sauce from the bottom of the cucumber bowl, and a little olive oil.

Steps:

  • Apply sauce to chicken (I spoon it on). Grill to desired doneness, applying sauce liberally as you turn chicken. Cook until done through.
  • If you don't contaminate the sauce with the raw chicken, you can serve it with the cooked chicken. If it gets contaminated, simmer it on the stove for a few minutes.
