8 slices crisply cooked bacon
1 ripe avocado, peeled, cut into 12 wedges
8 slices tomato

Steps:

  • Spread 1 side of each bread slice with 1 teaspoon Butter with Canola Oil.
  • Layer 1 slice bread, buttered-side down, with 1 slice cheese, 2 slices bacon, 3 wedges avocado, 2 slices tomato and 1 slice cheese. Top with 1 slice bread, buttered-side up.
  • Heat 12-inch skillet or griddle over medium heat.
  • Place 2 sandwiches into skillet; cook, turning once, 8-10 minutes or until golden brown and cheese is melted. Repeat with remaining sandwiches.

8 slices sourdough bread
1/2 cup shredded sharp white cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded Gruyere cheese
3 tablespoons mayonnaise
3 tablespoons finely shredded Manchego or Parmesan cheese
1/8 teaspoon onion powder
4 ounces Brie cheese, rind removed, sliced
2 medium ripe avocado, peeled and sliced

Steps:

  • Spread 3 tablespoons butter on 1 side of bread slices. Place bread, butter side down, in a large cast-iron skillet or on an electric griddle over medium-low heat until golden brown, 2-3 minutes; remove. In a small bowl, combine cheddar, Monterey Jack and Gruyere. In another bowl, mix together remaining 3 tablespoons butter, mayonnaise, Manchego cheese and onion powder., To assemble sandwiches, top toasted side of 4 bread slices with sliced Brie; add avocado slices. Sprinkle cheddar cheese mixture evenly over avocado slices. Top with remaining bread slices, toasted side facing inward. Spread the butter-mayonnaise mixture on the outsides of each sandwich. I don't remember where I got this recipe, but it sure is delicious! To get the perfect grilled cheese every time, you should start by heating your skillet to low. Once you build your sandwich, leave the skillet on low and cover with a lid or foil. Cook for a couple of minutes to let the cheese get gooey and you fillings get warm. Then remove the lid/foil and turn up heat, flipping your sandwich until it is perfectly toasted. Yum!
