GRILLED BUFFALO SHRIMP
Fire up the flames for Buffalo-style shrimp tossed in a fiery butter sauce before being dipped in cool, creamy blue cheese dressing.

Steps:
- Preheat the grill to medium, or alternately, preheat a grill pan over medium heat.
- Toss the shrimp in a large bowl with the olive oil, salt and pepper.
- Combine the melted butter and hot sauce in a separate large bowl. Set aside.
- Grill the shrimp for 2-4 minutes on each side, depending on how large they are, and then transfer them immediately to the bowl containing the sauce. Toss to coat well.
- Serve the shrimp with blue cheese dressing and celery sticks.

- TOSS shrimp with 1/4 cup of the Buffalo Wings Sauce.
- GRILL shrimp over medium heat 2 to 3 minutes per side or just until shrimp turn pink.
- MIX remaining 1/4 cup Buffalo Wings Sauce and honey in medium bowl. Add grilled shrimp and toss to coat. Serve with celery, carrots and blue cheese dressing, if desired.

- Preheat a grill or grill pan to medium-high heat.
- In a medium saucepan add the butter, hot sauce and chili powder over medium-high heat. Once the butter melts, add the garlic and vinegar, and saute until it sizzles and is fragrant, about 3 minutes. Remove from the heat. Reserve a few tablespoons of the sauce for a later use.
- Stick 3 shrimp on each skewer. Sprinkle the shrimp with salt and pepper on both sides. Place the shrimp on the grill and cook for 3 to 4 minutes on each side, basting with the sauce the last few minutes of grilling.
- Remove the shrimp to a platter and drizzle the reserved sauce over the skewers. Serve the shrimp skewers with carrots, celery sticks and creamy blue cheese dressing.

- For the sauce: Heat a small saucepan over medium heat. Add the olive oil and shallots and saute for about two minutes. Add the cumin and smoked paprika and continue to cook, stirring, for one minute more. Add the cream and salt, reduce the heat to low, and simmer for about 5 minutes, until slightly thickened. Whisk in the goat cheese, a little at a time, until fully incorporated and smooth. Remove from the heat and let cool for 5 minutes before stirring in the chives and parsley.
- For the shrimp: In a medium bowl, toss the shrimp with the 1/4 cup hot sauce and the olive oil, lemon zest and garlic. Cover with plastic wrap and let sit at room temperature for 15 minutes.
- Preheat a grill or grill pan to medium-high heat. Sprinkle the shrimp with the salt and grill for 2 to 3 minutes per side, or until opaque at the center. Remove to a clean bowl and toss with the remaining 2 tablespoons hot sauce. Serve with the goat cheese dipping sauce.

Out of the Cleveland Plain Dealer. One of Cleveland Cavaliers' Donyell Marshall's favorite recipes. Originally called for broiling but everything is better grilled! I add more hot sauce than is called for and it still isn't too spicy.

Steps:
- Place shrimp in resealable plastic bag and refrigerate.
- Combine next nine ingredients in blender. Blend until smooth.
- Cook mixture over medium-low heat for 10 minutes. Allow to cool.
- Pour into the resealable bag with shrimp and allow to marinate in refrigerator for at least 30 minutes turning shrimp occasionally.
- Remove shrimp from marinade and reserve the marinade.
- Coat grill topper or basket (basket makes it much easier to turn shrimp) with non-stick spray.
- Grill for 3 minutes on high heat. Turn shrimp and baste with marinade. Cook an additional 3 minutes or until done.
- Serve with Bleu Cheese or Ranch dressing.

- In a medium bowl, cover the cellophane noodles with hot water and let stand until soft, 30 minutes. Drain and cover with a damp paper towel until ready to use.

- Put the shrimp and half of the hot sauce in a ziplock bag. Make the the shrimp are all covered. Put in the fridge and marinate for 15 minutes. If you are using wooden skewers, soak them in water while the shrimp are in the fridge.
- Pull the shrimp out of the bag and thread them onto the skewers. Sprinkle the skewers with salt and pepper.
- Grill the shrimp 2-3 minutes on each side. They are done when they just start to curl and turn pink. Don't overcook them!
