1 chicken breast (medium to large in size)
1 tablespoons Ultimate Dry Rub ((link in notes below))
2 pieces bacon
1 corn on the cob ((optional))
1/2 cup Franks RedHot hot sauce ((or your favorite wing sauce))
1 tablespoon unsalted butter
1 head romaine lettuce chopped
1/2 cup cherry tomatoes
1/4 red onion sliced thinly
1/2 avocado, sliced
1 carrot, grated
1 celery stalk, sliced
1/4 cup blue cheese crumbles
ranch dressing (pour to your preference)
salt and pepper to taste

Steps:

  • Prepare grill for direct heat.
  • Season chicken breasts liberally with dry rub.
  • Place chicken over direct heat, and grill, roughly 6 minutes each side or until an instant read thermometer reads 155 degrees. Glaze the hot sauce onto both sides of the chicken and then continue cooking until the internal temperature reads 165 degrees F (this should only be another 2 minutes or so).
  • At the same time, add bacon and corn to the direct heat of grill and grill bacon for 6 minutes per side or until crispy. Watch for flare ups due to grease, keep lid to grill closed or move bacon around outer edge of grill. Grill corn until soft.
  • In a small saucepan on low heat combine the hot sauce and butter and stir until butter is melted into sauce. About four minutes.
  • Combine all ingredients in a bowl, add sliced chicken, add preferred dressing, toss together, and serve.

Olive oil cooking spray
Salt and lots of coarse black pepper
1 teaspoon smoked sweet paprika
2 tablespoons butter
About 1/4 cup Franks Red Hot cayenne pepper sauce
1/4 cup buttermilk
1/2 cup low-fat Greek yogurt
Juice of 1 lemon
3 tablespoons mixed fresh herbs
such as dill
parsley and chives
1/4 cup blue cheese crumbles
Chopped hearts of romaine
4-5 cups
2 carrots
peeled and cut into matchsticks
3 ribs of celery
cut into matchsticks
1/2 seedless cucumber
cut into matchsticks
4 scallions sliced on an angle

Steps:

  • Heat indoor or outdoor grill to medium-high
  • Spray chicken with cooking spray and season with salt, pepper and paprika
  • Grill until cooked through, about 12 minutes or so
  • Melt butter in a skillet and add enough hot sauce to coat the chicken
  • Slice chicken into bite-sized pieces and toss it in the sauce
  • For the dressing, whisk buttermilk with yogurt, lemon juice, herbs, salt and pepper
  • Stir in blue cheese
  • Line a platter or base plate with a salad of lettuce, carrots and celery
  • Dollop dressing over salad, top with Buffalo chicken and garnish with scallions

24 (about 1 1/2 cups) refrigerated new potato wedges, from 1-pound 4-ounce bag
24 pieces (about 1 inch) celery
2 tablespoons olive or vegetable oil
1 teaspoon Frank's™ RedHot™ Original cayenne pepper sauce
1/2 teaspoon black and red pepper blend
1/2 teaspoon seasoned salt
6 cups torn romaine lettuce
1/2 cup shredded carrot
1/2 cup blue cheese dressing

Steps:

  • Heat coals or gas grill for direct heat. Thread chicken, potatoes and celery alternately on each of eight 8- to 10-inch metal skewers, leaving 1/4-inch space between each piece. Mix oil and pepper sauce; brush over chicken and vegetables. Sprinkle with pepper blend and seasoned salt.
  • Cover and grill kabobs 4 to 6 inches from medium heat 15 to 20 minutes, turning occasionally, until chicken is no longer pink in center and potatoes are tender.

1 pound chicken cutlets
Extra-virgin olive oil, for drizzling
1 stick (8 tablespoons) unsalted butter, cut into pieces (see Cook's Note)
1/2 cup hot sauce, such as Frank's RedHot (see Cook's Note)
1 cup mayonnaise
1/2 cup buttermilk
2 tablespoons minced fresh chives
1/4 teaspoon garlic powder

1 head iceberg lettuce, cored and chopped into bite-sized pieces
1 pint cherry tomatoes, halved

Steps:

  • For the chicken: Preheat a grill to medium-high heat. Combine the garlic powder, 1/2 teaspoon salt and 1/4 teaspoon pepper in a small bowl. Place the chicken cutlets on a large plate or baking sheet and drizzle each piece lightly with the oil. Season both sides of the chicken with the garlic powder blend.
  • Grill the chicken, turning once, until cooked through and grill marks appear, 2 to 3 minutes per side. Transfer to a clean platter to rest for 10 minutes, then slice into thin strips and place in a medium bowl.
  • Place the butter and hot sauce in a medium saucepan over medium heat, either on the grill or on a stovetop. Whisk to combine the hot sauce with the butter until melted and smooth. Add to the bowl with the sliced chicken and toss to coat.
  • For the dressing: Whisk together the mayonnaise, buttermilk, chives, garlic powder, 1/4 teaspoon salt and 1/4 teaspoon pepper in a medium bowl and mix well.
  • For the salad: Arrange the iceberg lettuce on a platter or in individual bowls. Top with rows of the cherry tomatoes, blue cheese crumbles, bacon, carrots, celery, eggs and avocado. Sprinkle the corn chips over the top and spoon over the sliced chicken. Finish with a drizzle of the dressing.

2 teaspoons ground mustard
1 tablespoon Worcestershire sauce
1/2 cup water
1/2 cup soy sauce
1 tablespoon canola oil
4 boneless skinless chicken breast halves
2 medium zucchini, cut into 1-1/2-inch slices
1 medium onion, cut into wedges
1 medium green pepper, cut into chunks
8 to 12 medium fresh mushrooms

Steps:

  • In a resealable plastic bag, combine the mustard and Worcestershire sauce and water, soy sauce and oil; remove 1/3 cup and set aside for basting. Cut chicken into 1-1/2-in. pieces; add to bag. Seal and refrigerate for 1-1/2 to 2 hours. Drain, discarding marinade. , Thread chicken and vegetables alternately on skewers. Baste with reserved marinade. Grill over hot heat for 10 minutes. This is my adaption of a Tyler Florence recipe. I cannot express just how dang good this recipe is. You can serve it as kabobs over Basmati rice or do as Tyler and serve as the recipe dictates below. Take note that you will not use all of the dressing, so the calorie and fat counts are way off. For a shortcut or to cut the calorie count even further, use a pre-made regular or low fat Caesar dressing.

2 medium boneless skinless chicken breasts
4 links sweet Italian turkey sausage, cut in half in the middle
1 baguette, crusty, cut into rounds
12 fresh bay leaves
2 lemons
1/8 teaspoon kosher salt
1/8 teaspoon fresh ground black pepper
2 anchovies
1 garlic clove
1 tablespoon lemon juice
2 egg yolks
1 cup extra virgin olive oil
2 tablespoons water
2 tablespoons parmigiano-reggiano cheese, grated
1/8 teaspoon kosher salt
1/8 teaspoon fresh ground black pepper
2 heads romaine lettuce, chopped
4 tablespoons parmigiano-reggiano cheese, grated (for garnish)

Steps:

  • Preheat grill to medium-high heat. Take 4 links of sweet Italian pork sausage and cut in half in the middle. Chop 2 medium boneless chicken breasts into chunks roughly the same size as the sausage. Take one crusty baguette, and cut it into rounds. Using metal skewers make two extra-large kabobs (two skewers per kabob). Thread the components alternating bread, chicken, sausage and fresh bay leaves until the skewers are full. Baste the kabobs with extra-virgin olive and season with salt and freshly ground black pepper.
  • Place skewers on the hot grill and cook until golden brown, turning to get an even color all over. Baste with lemon juice as they cook.
  • Prepare the salad. In a blender, combine 2 anchovies, 1 garlic clove, 1 tablespoon lemon juice, 2 egg yolks, and 1 tablespoon of grated Parmigiano-Reggiano cheese. Pulse a couple of times to combine, then add 2 tablespoons water and blend again. Keep the motor running, and gradually pour 1 cup extra-virgin olive oil through the feed tube and continue to blend until emulsified. Season to taste with salt and some freshly ground black pepper.
  • Chop 2 heads of romaine lettuce, and throw into a large mixing bowl. Dress the salad with homemade dressing, add some Parmigiano-Reggiano cheese and some cracked black pepper, and mix thoroughly. When the kabobs are done, remove them from the grill and serve alongside the salad. To plate, garnish with more Parmigiano-Reggiano cheese and fresh lemon.
  • NOTE: To serve with Basmati rice, as I do, rinse 1 1/2 cups of dry rice to a colander until the water runs clear. Add rice to 2 1/4 cups chicken broth, 1 teaspoon salt and 1 teaspoon olive oil. Bring to a boil, cover and simmer over a low flame until all liquid evaporates. Let rice sit covered for 5 minutes and fluff with a fork.
