GRILLED BEEF ROLLS WITH SCALLION SOY DIPPING SAUCE
Similar to Japanese negamaki, these skewered beef rolls are filled with thin slices of red, yellow, and green bell peppers and served with an Asian-style dipping sauce.

Steps:
- In a small bowl, whisk together soy sauce and brown sugar until dissolved; set aside. Cut tenderloin crosswise into 1/4-inch-thick slices. Trim off any fat or connective tissue. Place 1 slice between 2 pieces of plastic wrap. Using the flat side of a meat mallet, evenly pound out the slice, keeping it roughly in a rectangular shape, until it is 1/8 inch thick. Do not overpound slices or they will begin to disintegrate. Remove plastic wrap, and transfer to a large plate. Repeat process with remaining meat.
- Dip 1 slice beef in the soy sauce mixture, and place it on a clean surface. Sprinkle with salt and pepper. Place 2 pieces of scallion green and 1 piece of each pepper across the shorter length of the beef, so that the vegetables extend over both edges by about 3/4-inch. Roll up lengthwise, and skewer near the edges with 2 toothpicks. Set aside. Repeat with remaining beef and vegetables.
- Lightly brush a grill pan with olive oil, and heat until hot, or heat the oven broiler. Grill or broil beef rolls, brushing with sauce and turning, until medium rare, 2 to 4 minutes. Cut each roll in half, or cut any longer rolls into 3 pieces. In a small saucepan bring remaining sauce to a boil for 3 to 5 minutes. Pour into a small bowl, and add scallion rings. Transfer beef rolls to a serving platter, and serve with sauce on the side.
KOREAN DIPPING SAUCE
We like this dipping sauce with grilled beef or chicken. I'm thinking it would also be good as a dip for grilled shrimp.

- Combine the soy sauce, sesame oil and rice vinegar in a small bowl.
- In a small, heavy, dry skillet over medium heat, add the sesame seeds and stir until they darken a bit.
- Remove and crush seeds.
- Add to soy mixture with sugar and scallions.
- You can double, triple, quadruple this recipe as desired.

SUMMER ROLLS WITH GINGER DIPPING SAUCE

- In a medium bowl combine the julienned carrot, cucumber, bean sprouts, scallions, water chestnuts, ginger, cilantro, soy sauce and fish sauce. Mix well. Take a rice sheet and dip in warm water. Place it on a clean surface and leave it for a few seconds to soften. Place a spoonful of the mixture in the center of the sheet and fold into a square packet as if you were making a burrito. Repeat with the rest of the rice sheets and mixture.;
- In a small bowl whisk sesame oil, soy sauce, ginger, scallions and cilantro and serve with summer rolls.;
GRILLED BEEF ROLLS
Steps:
- Whisk together soy sauce, and brown sugar in a small bowl until sugar is dissolved. Set aside. Cut beef crosswise into 1/4-inch-thick slices. Flatten each piece of beef, with a meat pounder, until it is 1/8-inch-thick. Don't over flatten. Transfer slices to a large plate.
- Dip a slice of beef into soy mixture and place on a clean surface. Season with pepper. Put 2 pieces of scallion green and 1 piece of each pepper across the width of beef. The vegetables should extend over both edges. Roll up lengthwise and skewer near the edges with 2 toothpicks. Set aside. Repeat with remaining beef and vegetables.

- In food processor, or wide bowl, add flour, butter, salt, and minced garlic. Start with adding 1/2 cup hot water. Pulse food processor to mix water with flour. (Mix with wooden spoon if using bowl.) Add a tbsp more until dough comes together. No more than 4 tbsp water. Dough should not be very wet or sticky.
- Take dough out of work board dusted with flour. Knead for 1-2 minute. this step makes dough pliable, and soft. Cover and set aside to rest for 20-30 minutes.
- Dipping Sauce: While dough rest, prepare dipping sauce. In a small bowl, add all ingredients listed for dipping sauce except sesame seeds and scallion. Stir will to make sure sugar is dissolved. Mix in scallions. Top with sesame seeds. Set aside.
- To make pancakes, divide resting dough into 3 equal portions. Cover two portion with towel, take one work board dusted with flour. Roll it to 9-10 inch wide circle. (use dusting of flour as or when needed) Brush rolled circle with coat of cooking oil. Make sure to cover fully including edges and center.

- To make the beef: In a small bowl, whisk together soy sauce, brown sugar, garlic, Shaoxing wine or sherry, ginger, 5-spice powder, sesame oil, and white pepper. Place beef in a large Ziploc bag, pour in marinade, and toss to distribute. Place bag in refrigerator and marinate for 1 to 4 hours.
- To make the scallion pancakes: Place flour in the workbowl of a food processor fitted with a steel blade. With the processor running, drizzle in water and process for 15 seconds. If dough does not come together, add additional water, 1 tablespoon at a time, until a solid ball forms. Transfer dough to a lightly floured work surface and knead until smooth, about 1 minute. Cover dough with a damp kitchen towel or plastic wrap and let rest at room temperature for 30 minutes.
- Divide dough into 4 equal pieces and roll each into a smooth ball. Working one ball at a time, roll out into a circle roughly 8-inches in diameter on a lightly floured surface. Paint a layer of sesame oil over surface of dough using a pastry brush, sprinkle with salt, then roll closed like a jelly roll. Starting at one end, twist the roll up into a spiral and tuck end of dough underneath. Re-roll dough into an 8-inch circle, brush again with sesame oil, and sprinkle lightly with sliced scallions. Repeat process of rolling closed like a jelly roll and twisting into a spiral. Roll dough out into a 8-inch disk. Repeat with remaining dough.
- Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and spread the coals evenly over entire surface of coal grate. Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Clean and oil the grilling grate. Place dough on grill and cook until crisp and lightly charred, about 1 minute. Flip dough over and continue to cook until second side slightly crisps and chars, about 1 minute more. Transfer to a plate and cover with kitchen towel.
