- Butter the outside of each slice of bread
- Spread aioli on the inside of each slice of bread
- Layer 1 slice of provolone on top of one slice of bread
- Add the roast beef, bacon, red onions (optional), top with colby jack cheese, and another slice of bread
- Repeat for the second sandwich
- Set the sandwiches in a heated frying pan, fry for 1 to 2 minutes until butter is browned
- Carefully flip sandwich over and brown the other side, remove once cheese is melted.
- Serve with more aioli if desired

- Pre-heat the oven to 400° F.
- Slice the bolillos lengthwise down the middle and place two overlapping slices of cheese against the top side.
- Heat a non-stick pan to medium or medium-high.
- Add 1 tablespoon of the olive oil and half of the onions.
- Toss until the onions are starting to brown.
- Remove from heat before they become too soft.
- Transfer to a paper plate and repeat with the rest of the sliced onions.
- Then add 2-3 tablespoon of olive oil to the pan, add the shaved pastrami, and sprinkle the pinches of garlic powder and oregano.
- Toss until the meat is heated, well covered in olive oil, and the seasonings are well distributed.
- Add the onions and toss to mix well.
- Spoon equal amounts into the prepared bolillos.
- Place in the hot oven for a couple of minutes or just until the cheese finishes melting.
- Serve hot.

- Cover one slice of bread with half of the provolone, so about 1/4 cup. If you can get a big chunk of provolone from the deli counter and shred it yourself, that would be best. Otherwise use sliced provolone and put one slice of cheese on one slice of bread.
- Heat the pan on medium.
- Add a slab of butter to the pan and let it melt completely.
- Sauté your peppers and onions. I usually put the onions in first, and then the peppers about a minute later. Cook until the onions start getting a little translucent and before the peppers get too charred. About 5 minutes should be enough.
- Scoop the peppers and onions onto the provolone, evenly spreading them around. Then top with the remaining 1/4 of shredded provolone, or the other slice if you're using sliced cheese, and the other piece of bread.
- Add a little more butter to the pan. Place the sandwich into the pan, and cook for 3-4 minutes on one side, checking to make sure it isn't burning. Sometimes my sandwich cooks a little faster since the pan is already hot from cooking the peppers and onions.
- Once the first side is golden brown, flip and cook the other side.
- When both sides are a crispy golden brown and the cheese is melty and holds the peppers and onions in place, your provolone grilled cheese sandwich is done and ready to eat.

PERFECT - ROAST BEEF AND PROVOLONE SANDWICH

- For the Beef: Place the leftover roast beef in a plastic ziplock bag with the juice from the pepperoncini peppers along with the giardiniera, a little salt, and pepper and allow to marinate at least 24 hours.
- Remove the roast beef from the oven and let it come to room temperature. Saute the mushrooms, red and green peppers until they begin to carmelize. Set aside.

- Use a serrated knife to slice off the domed top of the baguette, removing just a half inch or so (either discard, or butter and then toast on the grill, cut into cubes, and toss into a salad). Then slice the baguette in half horizontally.

- Add the ground beef to a hot medium to large-sized skillet over medium heat. Let the meat cook for a minute or two, developing a nice sear. Flip the chunk of meat, repeating to sear the other side. Once both sides are seared use a spatula to break the meat up as much as possible. Drain the meat and return to the skillet.
- Add in the salt, pepper, and Worcestershire, stirring occasionally and cooking until fully browned. Remove the meat from the pan, and set it aside.
- Add the 2 tablespoons of butter to the same pan and melt. Add in the pepper and onion and cook, stirring occasionally, until the onions have caramelized. Remove the pan from heat, stir in the cooked ground beef until everything's evenly incorporated, and set the mixture aside.
- Butter the outsides of all the slices of bread.
- Flip four slices of buttered bread over onto a clean work space. Add a slice of cheese to the un-buttered side. Top that with a quarter of the meat mixture. Top the meat mixture with another slice of provolone. Finish it off with the un-buttered side of one of the other pieces of bread. Press the top slice of bread down gently to 'seal'. Repeat until all four sandwiches are assembled.
- Heat a clean skillet or griddle to medium heat. Add one sandwich to the pan and cook until browned and the cheese on that side has melted, about 3-4 minutes. Use two spatulas to 'hold' the sandwich, and flip it cooking the other side until browned as well.
- Repeat until all the sandwiches are done.
