3 pounds medium to small red potatoes, halved
1 teaspoon garlic powder
1 teaspoon kosher salt
3/4 teaspoon smoked paprika
1/2 teaspoon freshly ground black pepper
3 tablespoons extra-virgin olive oil
2 teaspoons chopped fresh rosemary
2 teaspoons chopped fresh thyme
2 tablespoons chopped fresh parsley

Steps:

  • Preheat a grill to medium-high heat.
  • In a microwave-safe casserole dish, add the potatoes in a single layer. Cover with a damp paper towel and microwave until tender, 12 to 15 minutes. Let cool for 5 minutes.
  • In a small bowl, combine the garlic powder, salt, smoked paprika and black pepper.
  • Drizzle the olive oil over the potatoes and toss to coat well. Add the spice mixture, rosemary and thyme and toss gently to coat.
  • Add the potatoes to the grill cut-side down and cook until grill marks form, about 4 minutes. Flip and cook for 3 more minutes. Garnish with the parsley.

3 pounds red potatoes
1 small onion (sliced)
¼ cup butter (cubed, more to taste)
3-4 cloves garlic (sliced)
2 teaspoons fresh rosemary (chopped, or ½ teaspoon dried and slightly crushed)
salt & pepper (to taste)

Steps:

  • Wash potatoes and cut into bite size pieces. Place in a microwave safe bowl and cover tightly with plastic wrap. Microwave for 3-4 minutes or just until fork tender.
  • Preheat grill to medium-high heat.
  • Add seasonings to the potatoes. Toss to coat.
  • Lay out a sheet of heavy duty aluminum foil approximately 2 feet in length. Spray with cooking spray.
  • Add the potatoes, onions & garlic on one half of the foil and top with butter. Fold the other half of the foil over top. Roll the edges of the foil on all sides to create a tight seal.
  • Place the potatoes on the grill and cook 25-30 minutes, turning occasionally. Cook until the potatoes are tender and golden brown.
  • Serve warm with sour cream or desired toppings.

4 large red-skinned potatoes, scrubbed and cut into 1/2-inch rounds
1 red onion, peeled and cut into 1/2-inch rounds
1 sprig rosemary, leaves finely chopped
2 cloves garlic, smashed
Pinch crushed red pepper flakes
Kosher salt
Extra-virgin olive oil

Steps:

  • Preheat the grill and brush with a metal grill brush to loosen any crud and soot. After the grill has been brushed, run an oiled towel over the grill to pick up any loosened crud.
  • In a large bowl, toss the potatoes and onions together with the rosemary, garlic, crushed red pepper, salt, to taste, and a little olive oil. Try to keep the onions together in rounds, they will fall apart while grilling but try and keep them together as long as possible; it just makes things easier.
  • Arrange the potatoes and onions on the preheated grill. Once the potatoes have developed lovely grill marks, rotate them a quarter turn to create a lovely crosshatch pattern, (dont worry about the onions, they fall apart and you wont see the marks). Turn the potatoes over and repeat the process, turn the onions over to cook the other side as well. Cook the potatoes and onions until they are soft all the way through, about 8 to 10 minutes on each side.
  • Remove from the grill and serve hot or at room temperature.
  • Who knew you could grill a potato!

If you love onions, you will love this, I can make a meal just on these onions alone lol! Make sure that you purchase small sweet baby onions for this. Plan ahead the onions need to marinade for about 1 hour. You can double the recipe if desired.

15 small baby onions (peeled and stem intact)
5 -6 wooden skewers
1/2 cup olive oil
2 tablespoons apple cider vinegar
1 tablespoon French's mustard (can use honey mustard)
2 tablespoons liquid honey
2 teaspoons salt (or use white salt, or to taste)
1 teaspoon black pepper (or to taste)
1 pinch cayenne pepper

Steps:

  • In a large glass bowl, mix/whisk all the marinade together until well combined (or process in a processor).
  • Pour the marinade in a large resealable plastic bag.
  • Add in the peeled onions.
  • Seal bag and marinade at room temperature for about 1 hour (turning the bag occasionally to coat the onions in marinade).
  • Meanwhile soak the wooden skewers in cool water while the onions are marinating.
  • Preheat grill to 400°F.
  • Remove the onions from marinade and thread about 3-4 onions per skewer (depending on the size of your onions).
  • Place the onions on the grill and turn every minute to prevent them from burning (cook the onions for about 5-7 minutes).

  • Cut each onion into approximately 8 wedges.

  • Slice butter into dabs and place on top of the onion.
  • Add garlic, bouillon cube, and seasoning salt.
  • Wrap in foil paper ensuring that the seams are closed tightly. I usually wrap again with another sheet of foil.
