Not sure what to do with that delicious leftover char siu? Here's a great way to use the famous Cantonese barbecue pork to make the best ever fried noodles - divinely filling, sweetly-umami and loaded with different textures. This recipe uses plenty of fresh herbs and a rich sauce to bring you the best pork chow mein (fried noodles) in 30 minutes. It tastes even better than takeout!

Number Of Ingredients 12

1/2 lbs (225 g) Hong Kong style pan fried noodles ((or chow mein noodles) (*footnote 1))
3 tablespoons peanut oil ((or vegetable oil))
2 cups (130 g) baby bok choy (, cut into bite-sized pieces (*footnote 2))
1 1/2 cup (160 g) char siu pork (, chopped)
4 green onions (, sliced)
4 garlic (, minced)
1/3 cup chicken stock
1/4 cup oyster sauce
2 tablespoons Shaoxing wine ((or dry sherry))
1 tablespoon dark soy sauce ((or soy sauce) (*footnote 3))
2 teaspoons sugar
1/4 teaspoon white pepper powder

Steps:

  • If you're using regular dried noodles, bring a large pot of water to a boil. Cook noodles according to the instructions until al dente. Drain and rinse with tap water. Set aside. You can skip this step if you are using Hong Kong style pan fried noodles.
  • Combine all the ingredients for the sauce in a small bowl. Mix well.
  • Heat 2 tablespoons of oil in a large nonstick skillet (or a carbon steel or cast iron pan) over medium high heat until hot.
  • Add the noodles. If you're using Hong Kong style pan fried noodles, pour in 1/2 cup water. Cook and stir for 2 minutes, or until the noodles are cooked. If you're using boiled noodles, cook the noodles for 1 minute, stirring occasionally, until it's evenly coated with oil. If the noodles start to look dry or stick to the pan (which happens more frequently if you're using a carbon steel or cast iron wok), pour in more oil or water to loosen it up.
  • Move the noodles to one side of the pan. Add the remaining 1 tablespoon oil, green onion, and garlic to the other side of the pan. Stir for 20 seconds to release the fragrance. Then stir everything together.
  • Add the baby bok choy, char siu, and pour in the sauce. Toss with a pair of tongs to mix everything. Cover the pan. Let steam for 1 minute or so, or until the bok choy is cooked and the sauce fully absorbed. Toss a few times. Carefully taste the noodles. Sprinkle with a pinch of salt and stir again, if needed. Transfer everything to serving plates.
  • Serve hot as a main dish.

Vietnamese Grilled Pork and Rice Vermicelli Noodle Bowl image

You usually think about pho when going to a Vietnamese restaurant, but it's time to graduate to bun! Bun is a type of noodles, made of rice like pho but thinner and springier. They are cooked, chilled and then used as a base for cold noodle bowls. My favorite protein to top these bowls with is this delicious sweet, smoky lemongrass pork. I love cooking this on a hot griddle to get a great sear.

2 tablespoons (30 milliliters) lime juice
1/4 cup (60 milliliters) fish sauce
1/4 cup (60 milliliters) water
1 tablespoon (15 milliliters) rice vinegar
1/4 cup (50 grams) sugar
1 garlic clove, minced
1 Thai chili, finely chopped
1 large or 2 medium shallots, sliced thin
2 cloves garlic, minced
1 tablespoon (30 grams) minced lemongrass
2 tablespoons (30 grams) water
3 tablespoons (45 grams) granulated sugar
3 tablespoons (45 milliliters) fish sauce
Heavy pinch black pepper
1 pound (450 grams) pork butt, sliced paper-thin against the grain (see Cook's Note)
2 tablespoons (30 milliliters) vegetable oil
8 ounces (240 grams) Vietnamese thin rice sticks (bun)
1/2 cup (95 grams) shredded daikon radish
1/2 cup (95 grams) shredded carrot
3 tablespoons (45 grams) coarsely chopped roasted peanuts
3 scallions, thinly sliced

Steps:

  • For the dipping sauce: Combine all the sauce ingredients and stir to dissolve the sugar completely. Set aside.
  • For the pork: Combine all of the marinade ingredients in a blender; puree about 20 seconds until smooth. Place the pork in a medium bowl, pour the marinade over the meat and massage the pork well. Marinate for at least 1 hour if time allows. Heat a grill pan, medium skillet or griddle to high and add the oil. When you see white wisps of smoke, saute the pork for about 5 minutes until cooked through.
  • For the noodles: Soak the rice sticks in warm water for 20 minutes. Drain, then boil the soaked rice sticks in 3 quarts (2.8 liters) of water in a 4-quart (3.8-liter) pot for about 12 minutes until al dente. Rinse them well under cold water in a fine mesh strainer and reserve.
  • Assembly: Divide the noodles into 4 separate bowls. Place the pork on top of the noodles. Sprinkle the pork with radish, carrot, roasted peanuts and scallions. Pour Nuoc Cham Sauce over the noodles and mix them well like a salad.

CRISPY PORK WITH SAUCY SPICY NOODLES

Crispy fried pork served with saucy, spicy noodles is a delicious dinner and perfect substitute for your favorite takeout.

1 tbsp sesame oil
2 tsp chilli oil
3 garlic cloves (crushed)
1/3 cup soy sauce
1/3 cup hoisin sauce
1 tbsp rice vinegar
3 tbsp honey
2 tsp chilli flakes
1 cup water
2 tsp cornstarch / cornflour
500 g (1lb) pork tenderloin (cubed )
2 eggs
1 tbsp soy sauce
½ cup flour
½ cup cornstarch
1 tsp salt
500 g noodles (cooked and drained)
spring onion/green onion (finely chopped )

Steps:

  • In a large pan, heat the sesame and chilli oils together then add the garlic.
  • Cook until fragrant (30 seconds, or so) then add the soy sauce, hoisin sauce, rice vinegar, honey and chilli flakes.
  • Mix cornstarch with water to make a slurry then add and allow to simmer. Cook for a few minutes until the sauce has thickened slightly. Set aside.
  • Chop the pork into bite-size chunks. In a large bowl, whisk together the eggs and soy sauce.
  • In a separate bowl, whisk the flour, cornstarch and salt together. Coat the pork first in the flour, then in the egg and finally in the flour again.
  • Heat a large pot of vegetable oil over high heat and once hot, carefully add the pork in batches and fry until golden brown and cooked through, approximately 5-7 minutes.
  • Remove with a slotted spoon and allow to drain on a wire rack set over a sheet pan.
  • Cook the noodles in a large pot of salted water until al dente then drain. Toss the noodles with the sauce.
  • Serve the noodles and sauce in bowls topped with crispy pork and spring onion.

This is a recipe I have been making ever since the kids could chew meat. It's from one of my favorite cookbooks Better Homes and Gardens Low-Cost Cooking.

1 1/2 cups macaroni
6 pork chops, 1/2 inch thick
2 tablespoons oil or 2 tablespoons shortening
15 ounces tomato sauce
1/4 cup onion, chopped
1 teaspoon Worcestershire sauce
1/2 teaspoon dried basil
1/4 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon dried oregano
1 dash pepper
1/4 cup parmesan cheese, grated

Steps:

  • Cook macaroni according to the package directions.
  • Place in 12x7 1/2x2 inch baking dish.
  • Brown chops in oil or shortening on both sides. Drain off fat.
  • Season with salt and pepper and arrange on top of noodles.
  • Combine remaining ingredients except cheese and pour over the chops.
  • Sprinkle with cheese.
  • Bake covered at 350 degrees for 45 minute.
  • Serve with additional cheese if desired.

  • Remove some of the fat from pork shoulders (but it is not necessary to remove all the fat), and slice pork into thin slices. Bring them into a large ziplock bag.
  • Bring hot water and sugar (see ingredients under "Vegtables and Garnishes") together in a bowl to dissolve sugar. Add rice vinegar. Stir to combine.
  • Prep/chop the rest of the vegetables and garnishes - lettuce, cilantro, mint leaves, and peanuts. Slice lime into a few wedges.
  • Cook noodles base on package insutrctions. It's usually cooks quickly! If noodles needs to sit for a while before combining with the other ingredients, rinse them in cold water to prevent them from sticking to each other, continuing to cook and turning mushy.
