A simple barbecue sauce and jam mix to create a delicious glaze, and then applied on grilled chicken for an easy grilled glazed chicken recipe.

1 Chicken, quartered ((excess fat trimmed off))
2 tablespoons extra virgin olive oil
¼ cup chicken seasoning
½ cup KC barbecue sauce
½ cup raspberry jam ((Any jam will do if you don't have raspberry. Other options: cherry, strawberry))

Steps:

  • Preheat Grill: Prepare for two-zone grilling using lump charcoal and targeting 450 degrees Fahrenheit in the grill.
  • Season Chicken: Coat chicken in olive oil and apply dry rub. The rub will stick to the oil. Be sure to apply rub under skin on breast, thigh and leg.
  • Grill Direct: Place chicken on direct heat skin side down for 4 minutes or until the skin has a good sear. Flip Chicken and sear over direct heat for an additional 4 minutes to get a nice char.
  • Grill Indirect: Move chicken to indirect heat and continue grilling covered until the internal temperature of the chicken reaches 155 degrees in the thickest part of the breast (about 15 minutes, depending on each piece, knowing smaller pieces will cook quicker, thicker pieces like the breast will take longer).
  • Glaze Chicken: When meat reaches 155 degrees Fahrenheit brush first coat of glaze over all sides of chicken with a silicone brush and continue grilling covered. When the chicken reaches 160 degrees F, remove from grill and apply the glaze a second time.
  • Remove and Serve: Let it rest for about 5 minutes, then serve.

Sweet and Spicy Honey-Glazed Grilled Chicken with Spinach Salad and Pantry Dressing image

2 1/2 pounds chicken (I'm using thighs)
1 tablespoon olive oil
1 teaspoon favorite spice mix (I'm using Old Bay)
Kosher salt and freshly ground pepper
2 tablespoons honey (I'm using wildflower)
2 tablespoons mustard (I'm using sweet and spicy brown mustard)
2 tablespoons soy sauce
1 pound leafy greens (I'm using baby spinach)
One 14-ounce can beans, rinsed and drained (I'm using chickpeas)
1/2 cup sliced red onion
4 strips bacon, diced
1/4 cup vinegar (I'm using white wine vinegar)
1 tablespoon honey (I'm using wildflower)
1 tablespoon mustard (I'm using sweet and spicy brown mustard)
Leftover ketchup in the container (or about 1 tablespoon ketchup)

Steps:

  • For the chicken: Preheat a grill or oven to 450 degrees F. If using a gas grill, set to medium-high heat on one side and low on the other side. If using a charcoal grill, bank hot coals on one side of the grill.
  • Brush the chicken with the oil and season with the spice mix and a liberal amount of salt and pepper. Put the chicken on the hot side of the grill bone-side down, close the lid and cook for 3 to 4 minutes.
  • Meanwhile, whisk together the honey, mustard and soy sauce in a small bowl.
  • Flip the chicken, brush with the glaze and grill for 1 to 2 minutes. Move the chicken to the cool side of the grill bone-side down and apply the remaining glaze. Close the lid, open the vents halfway if using a charcoal grill and continue to cook until the chicken registers 160 degrees F in the thickest part, 15 to 20 minutes longer. If using the oven, place the chicken bone-side down on a baking sheet and roast, brushing with the glaze occasionally, until the chicken registers 160 degrees F in the thickest part, 25 to 30 minutes.
  • For the spinach salad: In a medium bowl, mix together the spinach, chickpeas and onions in a large bowl; set aside.
  • Put a heavy-bottomed skillet on the hot side of the grill, add the bacon and cook until crisp.
  • Add the vinegar, mustard, and honey to an almost-empty ketchup container and shake vigorously (or whisk together the vinegar, mustard, honey and ketchup in a small bowl). Remove the skillet from the heat and mix in the ketchup mixture to make a warm dressing.
  • Pour the dressing over the greens and toss together. Transfer the greens to a platter and top with the chicken.

Honey-Glazed Grilled Chicken image

This recipe calls for a whole chicken cut up, but feel free to use your favorite pieces. I like using the whole chicken because it gives everyone a choice. If you like your chicken saltier or spicy, add some seasoned salt before starting the grilling process. I find the soy sauce adds enough salt for me. Prep time does not include the time needed for your grill to get hot.

1/2 cup honey
1 teaspoon garlic powder
2 teaspoons dry mustard
1 teaspoon lemon rind, grated
2 tablespoons lemon juice

1/4 teaspoon seasoned pepper
1 whole chicken, cut up (3 to 3 1/2 lbs)

Steps:

  • Prepare your grill.
  • Combine all ingredients except the chicken, stirring well. Set sauce aside.
  • Grill the chicken, skin side down, over medium coals for 50 to 60 minutes or until done, turning every 10 minutes. Baste with the sauce during the last 20 minutes of grilling time.

2 cups peach preserves or jam
3 tablespoons olive oil, plus more for brushing
2 tablespoons soy sauce
1 tablespoon Dijon mustard
1 tablespoon finely chopped garlic
1 small jalapeno, finely chopped
Kosher salt and freshly ground pepper
8 frenched chicken breasts
4 ripe peaches, cut in half and pitted

Steps:

  • Combine the peach preserves, olive oil, soy sauce, mustard, garlic and jalapeno in a medium bowl and season with salt and pepper. Reserve 1/2 cup.
  • Preheat the grill. Brush the chicken with olive oil and season with salt and pepper. Place the chicken skin-side down and cook until golden brown, 6 to 7 minutes. Turn over and continue cooking for 5 to 6 minutes. Brush both sides with the peach glaze and continue cooking until done, an additional 4 to 5 minutes.
  • Place the peach halves cut side down on the grill and grill for 2 minutes. Turn over, brush with the reserved 1/2 cup of peach glaze and grill until the peaches are soft, 3 to 4 more minutes.

One 5- to 7-pound roaster chicken, butterflied
Kosher salt and freshly ground black pepper

3 tablespoons unsalted butter
2 tablespoons grated onion
1/8 teaspoon allspice

Steps:

  • For the chicken: Season the chicken with salt and pepper. Rest on the counter for 2 hours to come to room temperature.
  • Preheat a grill to 400 degrees F. Lightly oil the grill grates.
  • Grill the chicken over indirect heat, rotating occasionally, until the internal temperature reaches 165 degrees F, about 50 minutes.
  • For the glaze: While the chicken is grilling, melt the butter in a small pot. Add the onion, allspice, a pinch of salt and black pepper. Cook until the onion is tender, then add the garlic and cook until tender but not browned. Add the brown sugar, mustard, vinegar and hot sauce. Reduce about 5 minutes, then remove from the heat.
  • When the chicken is nearly cooked through, brush on the glaze. Cover the grill and continue to cook until the glaze begins to color and the chicken is done. Cover the chicken loosely with foil and rest for 15 minutes to allow the juices to redistribute. Then cut into sections and serve.

This is a recipe I do after work during the summer when I'm trying to keep the kitchen cool. I prepare it in the morning and let the chicken marinate in the fridge all day. Prep time does not include marinating time.

2 whole chicken breasts, split and skinned
1/4 cup minced scallion
2 cloves garlic, minced
1 tablespoon honey
2 tablespoons dry sherry
2 teaspoons fresh ginger, grated
1/2 cup soy sauce

Steps:

  • Combine scallions, garlic, honey, sherry, ginger and soy sauce.
  • Place chicken in a resealable plastic bag and pour the sauce over the chicken.
  • Close the bag and marinate at room temperature for 30 minutes to 1 hour.
  • Or, refrigerate it overnight.
  • Turn occasionally to keep sauce distributed evenly on the chicken.
  • Remove chicken from bag and pour sauce into a small saucepan.
  • Bring sauce to a boil and let boil for one full minute.
  • Grill chicken over hot coals, turning as needed to prevent charring and to cook evenly.
  • Grill until just done, about 25 minutes.
  • Brush with sauce as needed to keep moist.
  • Serve chicken with remaining sauce and hot cooked rice.

1/4 cup prepared mustard
1/4 cup butter or 1/4 cup margarine
2 tablespoons finely chopped onions
2 teaspoons water or 2 teaspoons fruit juice

1/2 teaspoon red pepper flakes
1/4 teaspoon ginger

  • Stir and cook 2 minutes more; remove from heat and set aside.

  • Brush curry sauce on the meat during the last part of the cooking time.
  • Turn and coat the other side.
  • Keep turning and adding sauce until the sauce is used up, allowing 1 or 2 minutes between turns to allow the sauce to cook onto the meat. (you can also make this in the oven).
  • Serve with lots of napkins.
