Chinese vegetable stir fry is a quick, easy and delicious recipe. Take only 20 minutes to prepare, Best to serve with rice, noodles or just eat straight from the wok!

100 g broccoli
100 g cauliflower
100 g carrot
100 g snow peas
100 g capsicums
1 teaspoon salt
3/4 teaspoon sugar
Dash ground white pepper
1 tablespoon oyster sauce
1/4 teaspoon cornflour
2 tablespoons water
1 tablespoon chopped garlic
1 tablespoons vegetable oil

Steps:

  • Cut the broccoli and cauliflower into florets.
  • Peel and cut the carrots into wedges.
  • Remove the stings of the snow peas.
  • Cut the capsicums into triangular pieces
  • Blanch the vegetables. Drained and set aside.
  • Heat up the vegetable oil in the wok.
  • Saute the garlic until fragrant over low heat.
  • Add the salt, sugar, ground white pepper, oyster sauce, cornflour and water. Cook until the sauce becomes translucent.
  • Add the blanched vegetables. Stir-fried over high heat until it turns fragrant.
  • Dish out and serve.

1 tablespoon olive oil
1 red bell pepper (sliced)
1 yellow bell pepper (sliced)
1 cup sugar snap peas
1 cup carrots (sliced)
1 cup mushrooms (sliced)
2 cups broccoli
1 cup baby corn
1/2 cup water chestnuts
¼ cup soy sauce
3 garlic cloves minced
3 Tablespoons brown sugar
1 teaspoon sesame oil
1/2 cup chicken broth
1 tablespoon cornstarch
chopped green onions and sesame seeds for garnish (optional)

Steps:

  • In a wok or large skillet add 1 Tablespoon olive oil over medium high heat. Add bell pepper, peas, carrots, mushrooms, broccoli, baby corn, and water chestnuts. Sauté 2-3 minutes until veggies are almost tender.
  • In a small whisk together soy sauce, garlic, brown sugar, sesame oil, chicken broth, and cornstarch.
  • Pour over veggies and cook until the sauce has thickened. Garnish with chopped green onions and sesame seeds if desired

2 tablespoons peanut oil
1 tablespoon finely shredded ginger
2 cloves garlic, thinly sliced
2 bunches asparagus, sliced
2 green onions (scallions), sliced
7oz (200g) sugar snap peas, trimmed and halved
2 tablespoons chilli bean paste
2 tablespoons light soy sauce
2 teaspoons water
1 cup (140g) shelled edamame
7oz (200g) enoki mushrooms
9 ounces (250g) mature spinach, trimmed
8.8oz (250g) thin brown rice noodles, cooked and drained
Thinly sliced small red chile or store-bought Asian chilli jam, to serve
Cilantro leaves, to serve

Steps:

  • Heat the oil in a large non-stick frying pan or wok over high heat. Add the ginger and garlic and cook for 1 minute. Add the asparagus, onion and peas and cook, stirring, for a further 1 minute. Add the chilli bean paste, soy sauce and water and cook, stirring, for 1-2 minutes or until combined. Add the edamame, enoki, spinach, and noodles, toss to combine and cook for 1 minute or until warmed through. Top with the chile and cilantro to serve.

½ cup sugar snap peas
¼ cup cherry tomatoes, halved
½ cup dried fruit and nut mix, such as cranberries, almonds, and cashews
¼ cup chopped mushrooms
¼ cup bell pepper, thinly sliced
2 tablespoons chia seeds
2 teaspoons cayenne pepper, or to taste
1 tablespoon garlic, minced
salt to taste
3 tablespoons egg whites
2 tablespoons shredded Cheddar cheese, or as desired

Steps:

  • Grease a large skillet with cooking spray and heat over medium-low heat. Add sugar snap peas, cherry tomatoes, fruit and nut mix, mushrooms, bell pepper, and chia seeds. Stir-fry about 2 minutes. Season with cayenne, garlic, and salt. Cook and stir about 2 minutes more.

1/4 teaspoon cumin
1/4 teaspoon ground cinnamon
1/2 teaspoon mustard seed
1/4 teaspoon cayenne
1/4 cup halved walnuts, roasted
1 teaspoon olive oil
1 onion, julienned
1 clove garlic, sliced
3 bunches spinach, washed, stemmed, and coarsely chopped
1 bunch mustard greens, washed, stemmed, and coarsely chopped
1 bunch beet greens, washed and coarsely chopped

Steps:

  • Mix the first 6 ingredients together in a small bowl. Set aside until needed. Toast walnuts in 350 degree F oven until golden brown and fragrant, about 10 minutes. Set aside.
  • In a dry saute pan add half of the spices and toss to toast. Take care not to burn. Set aside in a bowl.
  • Saute onions in the olive oil until golden, for approximately 10 to 12 minutes. Add the walnuts to the onions and cook together 1 minute. Season with half the spice mix. Add the greens and spice mix, to taste, to the onion and walnuts and saute over medium high heat until the greens wilt, about 3 minutes. Season with salt and serve.

2 medium leeks (white and light-green parts only), halved lengthwise and rinsed well
2 tablespoons vegetable oil
2 tablespoons minced peeled fresh ginger
2 garlic cloves, minced
1 head bok choy (3/4 pound), cored and cut into 1/2-inch pieces
2 cups snow peas, trimmed
3 celery stalks, sliced 1/2 inch thick
Coarse salt
1/4 cup low-sodium vegetable or chicken broth

Steps:

  • Cut leeks into 2-inch pieces; separate layers. Heat a large skillet or wok over medium-high until hot. Add 1 tablespoon oil; swirl to coat skillet. Add half the ginger, half the garlic, and half the leeks. Stir until leeks begin to soften, 1 to 2 minutes. Increase heat to high; add half the bok choy, half the snow peas, and half the celery. Season with salt. Stir until vegetables begin to soften, 2 to 3 minutes. Add half the broth; toss until snow peas are bright green, 1 minute. Transfer vegetables to a platter. Repeat with remaining ingredients.

This is very yummy and makes a lot! The honey and vegetable broth make a tangy-sweet sauce. Frozen green beans are fine for this recipe.

2 cups green lentils
4 tablespoons butter
2 garlic cloves, crushed
2 tablespoons olive oil
1 tablespoon cider vinegar
1 red onion, cut in 1/8
1 (2 ounce) can baby corn
1 yellow pepper, cut in strips
1 red pepper, cut in strips
2 ounces green beans
1/2 cup vegetable stock
2 tablespoons honey
salt and pepper

Steps:

  • Put the lentils in a large saucepan with water. Bring to a boil. Reduce heat and simmer for 20 minutes or until the lentils are tender. Drain.
  • Add 1 tablespoon of the butter, 1 garlic clove, 1 tablespoon of the oil and the vinegar to the lentils and mix well.
  • Melt the remaining butter and oil in a skillet and stir-fry the garlic, onion, corn, peppers and green beans for 3-4 minutes.
  • Add the vegetable stock and bring to a boil. Simmer for 10 minutes or until most of the liquid has evaporated.
  • Add the honey and season with salt and pepper to taste. Stir in the lentils and cook for about a minute to heat through.

1 cup mushroom, sliced
1/2 cup onion, chopped
2 tablespoons garlic, smashed

2 cups leeks, white part only,chopped
1/2 cup celery, chopped
2 tablespoons hot banana peppers or 2 tablespoons jalapenos, chopped
