CITRUS SORBET WITH LIMONCELLO

Steps:
- In a small saucepan over medium-high heat, bring the sugar and 1 cup water to boil. Cook, stirring, until the sugar is dissolved, about 10 minutes. Remove from the heat, add the mint leaves and allow to steep until cooled, about 15 minutes. Strain the simple syrup into a medium mixing bowl. Add the lemon juice, lemon zest, orange zest, lime zest, orange juice and 1/2 cup water. Stir to combine.
- Pour the mixture into the frozen bowl of an ice cream maker and churn according to the manufacturer's instructions. Transfer the sorbet to a deep baking dish or loaf pan, cover tightly and place into the freezer until frozen, at least 4 hours and up to overnight.
- To serve, scoop the sorbet into a bowl, drizzle with limoncello and garnish with a mint sprig.

This version of a green tea smoothie was found in the May 2007 cookbooklet Smoothies & Summer Drinks. Preparation time does not include time needed for brewed tea to chill completely.

- Place tea bags in heatproof mug, then add boiling water & steep for 5 minutes.
- Remove & discard tea bags, & refrigerate brewed tea until cold.
- Place chilled tea, sugar, lemon juice, lemon sorbet & 4 ice cubes in blender, blending on high until mixture is frothy & ice cubes finely ground, up to 1 minute.
- Pour into pitcher, then add club soda & stir carefully to mix.
- Pour into 2 tall glasses & enjoy!

- Basic Syrup:.
- In medium saucepan combine sugar and agar agar. Add water and bring to a boil over medium high heat, stirring until sugar and agar agar dissolves.
- Can be made in advance and refrigerated up to 2 days in and airtight containter.
- Makes 2 cups.
- Lemon Sorbet:.
- Combine, refrigerate 4 hours and freeze in ice cream machine.
- Stawberry Sorbet:.
- Blend or process until smooth. Strain (or not). Cover and refrigerate 4 hours. Freeze in ice cream machine.
- Mango Sorbet:.
- Combine, refrigerate 4 hours and freeze in ice cream machine.
- Passion Fruit Sorbet:.
- Combine, refrigerate 4 hours and freeze in ice cream machine.
- Raspberry Sorbet:.
- Blend or process until smooth. Strain (or not). Cover and refrigerate 4 hours. Freeze in ice cream machine.
