Soft and spongy green tea cake - full of flavor, and not too sweet. This recipe has been widely enjoyed by family and friends, and I reap the side benefit of having the whole kitchen filled with the blissful aroma of green tea every time I make this. This can also be made into 12 cupcakes.

3 eggs
¾ cup white sugar
1 tablespoon honey, or to taste
¾ cup all-purpose flour
1 teaspoon baking powder
1 tablespoon green tea powder (matcha)
¼ cup cold water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat eggs together in a bowl using an electric mixer on medium speed until volume doubles or triples, about 7 minutes. In the following order, add sugar, honey, flour, baking powder, green tea powder, and water to eggs, beating 15 to 30 seconds before each addition. Pour batter into a 9-inch cake pan.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 25 to 30 minutes.

250 g cake flour
1 1/2 tablespoons green tea powder
1 teaspoon baking powder
100 g butter
130 g sugar
1/4 teaspoon salt
2 eggs
120 g milk

Steps:

  • cool the butter under room temperature for a while, then mix the butter with sugar.
  • Mix in eggs, one at a time.
  • Sift in BP, Cake Flour, and Salt, mix well.
  • Dissolve the Green Tea Powder in the milk, then add in the batter.
  • Bake the cake with 180C (about 370F) temperature, for about 30-35 minutes.

Steps:

  • Preheat oven to 350°F Grease and flour 2 9" round pans. Sift together the all-purpose flour, cake flour, baking soda, salt, and green tea powder; set aside.
  • In a large bowl, beat together sugar, oil, and eggs until smooth. Stir in 1 1/2 teaspoons vanilla. Beat in the flour mixture alternately with the yogurt, starting and ending with flour, mixing just until incorporated. Fold in optional adzuki beans, if using. Pour batter into prepared pans.
  • Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool on wire rack for 30 minutes before turning out of the pans.
  • Sift together confectioners' sugar and green tea powder. In a medium bowl, combine tea mixture with butter, cream cheese, vanilla and milk. Beat with an electric mixer until smooth.
  • Assemble cakes as you would any layer cake. Dust with green tea powder for garnish if desired.

3 teaspoons baking powder
1 teaspoon salt
1 cup milk
1/2 cup vegetable oil

2 teaspoons almond extract
2 eggs
1 1/2 sticks (6 ounces) unsalted butter, softened
2 1/2 cups confectioners' sugar
2 tablespoons milk
1 tablespoon matcha (green tea) powder

Steps:

  • For the cupcakes: Preheat the oven to 350 degrees F. Line a muffin pan with 24 cupcake liners.
  • In a large bowl, mix together the flour, sugar, baking powder and salt until thoroughly blended.
  • Whisk together the milk and oil, and add to the dry ingredients. Beat for 2 minutes on medium speed. Add the matcha powder, almond extract and eggs and beat again for 2 minutes on medium speed. Pour the batter into the pans, filling three-quarters of the way full. Bake until cakes test done, about 15 minutes. Allow cupcakes to cool completely.
  • For the buttercream: Place the butter in the bowl of an electric stand mixer fitted with a whisk attachment. Add one-third of the sugar and blend well. Add in the remaining sugar one-third at a time, blending well between each addition. Add in the milk and matcha powder and beat until light and fluffy.
  • To assemble: Add the buttercream to a large pastry bag with a grass tip and pipe in small dollops to resemble grass.

150g biscuits (I use malt biscuits), crushed
35g butter, melted
Sesame seeds
250g cream cheese
60g sugar
2 tablespoons lemon juice
100g plain yoghurt
1 cup cream, whipped
3 tablespoons gelatine powder, dissolved in 50ml warm water
1 teaspoon matcha powder, plus 1/4 teaspoon extra

Steps:

  • Mix biscuits and butter and press into base of a 24 cm round cake tin. Spread evenly and press with the palm of your hand. Sprinkle with sesame seeds and refrigerate to firm up.
  • Mix together cream cheese, sugar, lemon juice and yoghurt until smooth. Mix in whipped cream. Add dissolved gelatine and mix very gently.
  • Pour half mixture into cake tin over biscuit base. Spread with a rubber spatula and return to fridge.
  • Mix matcha powder with 1 tablespoon water until smooth. Pour into remaining half of cheesecake filling and mix well. Pour gently into the tin, keeping 1 tablespoon of filling mixture to use for decoration. Use rubber spatula to spread and make a flat surface.
  • Add 1/4 teaspoon extra matcha powder to the 1 tablespoon filling to darken it for decoration.
  • Use a teaspoon to draw lines on the cheesecake with the darker matcha mix. Use chopsticks to drag horizontal lines and make patterns, as shown in the picture. Refrigerate for 2 hours before serving.

  • In large bowl, beat tea mixture and all remaining cake ingredients except egg whites with electric mixer on low speed 30 seconds. Beat on high speed 2 minutes, scraping bowl occasionally. Beat in egg whites on high speed 2 minutes, scraping bowl occasionally. Pour into pans.
  • Bake 30 to 35 minutes, or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans to cooling racks. Cool completely, about 1 hour.
  • Meanwhile, in medium bowl, beat 2 1/2 cups butter, 4 teaspoons lemon peel and lemon juice with electric mixer on medium speed 30 seconds. Gradually beat in powdered sugar. Beat 2 to 3 minutes longer or until light and fluffy.
  • Place one cake layer on cake plate, top side down. Spread with 1 1/2 cups frosting. Top with second layer, top side up. Frost side and top of cake. Decorate as desired with remaining frosting. Garnish with lemon peel.

1-1/2 cups powdered sugar

Steps:

  • Heat oven to 350°F.
  • Apply a light coating of non-stick spray with flour to a 10-inch fluted tube pan. In a large bowl, add cake mix, eggs, oil, water and Matcha. Beat with an electric mixer on low speed for 2 minutes. Pour the mixture into the pan.
