PORK TENDERLOIN WITH BACON-ONION JAM



Pork Tenderloin with Bacon-Onion Jam image

2 tablespoons olive oil
1 large red onion, diced
8 ounces thick-cut bacon, cut into large chunks or thick lardons
2 sprigs fresh thyme
1/3 cup brown sugar
1/4 cup strong brewed coffee
1 tablespoon apple cider vinegar
1 pork tenderloin
1/2 teaspoon garlic powder
Kosher salt and freshly ground black pepper

Steps:

  • For the bacon-onion jam: Heat the oil in a cast-iron pan on medium heat; add the onion and cook until beginning to brown, 5 to 7 minutes. Add the bacon and thyme and reduce the heat to low. Cook for 10 to 12 minutes, then transfer the bacon and onion from the pan with a slotted spoon into a small saucepot. Reserve the bacon fat in the pan for cooking the tenderloin.
  • Put the saucepot with the bacon-onion mixture over medium-low heat and add the brown sugar and coffee. Cook the mixture down to a thick consistency, 25 to 30 minutes. Stir in the apple cider vinegar.
  • For the pork tenderloin: Preheat the oven to 425 degrees F. Pat the tenderloin dry with paper towels, sprinkle with the garlic powder and season well with salt and pepper.
  • Heat the reserved bacon grease in a cast-iron pan over medium-high heat and place the tenderloin in the hot fat. (This comes out even better if you use the same pan you made the jam in; you get all the flavor from the jam.) Sear on all sides, then transfer the pan to the oven to finish cooking to an internal temperature of 135 degrees F, 12 to 15 minutes. Let rest for 5 to 10 minutes before slicing. Serve with the bacon-onion jam.

Poached Eggs, Wilted Spinach and Pullman Loaf Toast with Bacon, Onion and Tomato Jam image

4 slices bacon, cut into 1/4-inch lardons
Extra-virgin olive oil
Pinch crushed red pepper
1/2 onion, cut into 1/4-inch dice
2 beefsteak tomatoes, seeded and cut into 1/2-inch dice
Kosher salt
1 sprig fresh oregano, leaves finely chopped
2 tablespoons unsalted butter
Four 1-inch slices Pullman loaf, cut into 3-inch rounds
2 cloves garlic
1/2 (10 ounce) bag fresh baby spinach
Freshly chopped oregano leaves, for garnish
3 tablespoons white vinegar
4 large eggs
8 grapefruits (or enough to yield 4 cups juice), freshly squeezed, for serving

Steps:

  • For the bacon, onion and tomato jam: Toss the bacon into a large saute pan with a few drops of olive oil and the crushed red pepper flakes. Bring the pan to medium heat and cook the bacon until brown and crispy, 6 to 7 minutes. Spoon out 2 tablespoons of the rendered bacon fat from the pan and reserve. Add the onions and tomatoes and season with salt. Continue to cook, stirring occasionally, until the tomatoes and onions are soft and very aromatic, 12 to 15 minutes. Taste and reseason if needed. Stir in the oregano. Keep warm until ready to serve.
  • For the toast and wilted spinach: Preheat a cast-iron griddle pan over medium-high heat. Once heated, add the butter and melt. Once melted, add the Pullman rounds and toast on both sides until golden brown, about 1 minute per side. Once toasted, remove from the pan and carefully rub each piece with the garlic cloves. Set aside on plates.
  • Add the reserved bacon fat to a large saute pan and preheat over medium-high heat. Once heated, add the spinach and salt and stir until wilted. Drain and discard any excess water. Taste and adjust the seasoning as needed. Top the bread with the spinach just before serving.
  • For the poached eggs: Fill a medium saucepan two-thirds of the way with water. Add the vinegar and bring to boil (BTB). Reduce the heat until no bubbles break the surface of the water¿the idea is to create an egg Jacuzzi, a very gentle cooking method.
  • Crack the eggs into the poaching liquid and cook for 4 minutes. When done, the whites will be cooked through and the yolks will be warm and runny.
  • Remove the eggs from the poaching liquid and blot on a paper towel before putting on the wilted spinach and toast. Top with the bacon jam and garnish with fresh oregano.
  • Serve with a pitcher of freshly squeezed grapefruit juice.

Extra virgin olive oil
1 onion, cut into 1/4-inch dice
Kosher salt
Pinch of crushed red pepper
1 large beefsteak tomato, seeded and cut into 1/2-inch dice
2 sprigs of fresh oregano, leaves finely chopped
4 large eggs
1 cup whole milk
Pinch of cayenne (optional)
Kosher salt
8 slices tight-crumbed white bread
11/2 cups grated Gruyere cheese
Extra virgin olive oil
4 large eggs
1 bunch of fresh chives, finely chopped (optional)

Steps:

  • For the filling: Toss the bacon into a large saute pan with a few drops of olive oil. Bring the pan to medium heat and cook the bacon until brown and crispy, 6 to 7 minutes. Add the onion and season with salt and the crushed red pepper. Continue to cook, stirring occasionally, until the onion is soft and very aromatic, 8 to 10 minutes.
  • Add the tomato, season with more salt, and cook for another 8 to 10 minutes or until the tomatoes are soft and mushy and most of the liquid has evaporated. Taste and reseason if needed. Stir in the oregano and let cool.
  • For the French toast: Preheat the oven to 200 degrees F.
  • In a wide, flat dish, combine the eggs, milk, cayenne (if using), and a pinch of salt. Beat until smooth and homogeneous.
  • Lay 4 slices of bread on a work surface. Using half the Gruyere, sprinkle each piece of bread lightly with cheese. Spoon a quarter of the bacon filling onto each piece of bread and then sprinkle with the remaining cheese. Top each slice with another piece of bread and press to secure.
  • Working in batches, soak each "toast" in the egg mixture for about 1 minute; flip and soak the other side.
  • While the toasts are soaking, coat a large saute pan with olive oil and bring the pan to medium heat.
  • Working in batches so you don't crowd the pan, cook the toasts for 2 to 3 minutes per side. The toasts should be golden brown, lovely, and crisp-YUM! Transfer the toasts to a baking sheet and place in the oven to keep warm.
  • For the fried eggs and assembly:
  • Coat a large nonstick saute pan lightly with olive oil and bring to medium heat. Add the eggs to the pan, working in batches if necessary. Cook them until the whites are cooked through and the yolks are warm and runny, 3 to 4 minutes.
  • Remove the toasts from the oven and top each with a perfectly fried egg. Sprinkle with chives if you like and serve immediately.

1 loaf braided challah, cut into 6 slices (1 1/2-inch thick)
8 ounces cream cheese, softened
1/4 cup strawberry jam, recipe follows
1/2 teaspoon lemon zest
1/2 cup fresh blueberries, plus more for garnish
1 cup whole milk
1 tablespoon unsalted butter, melted, plus 2 tablespoons not melted
1 tablespoon brown sugar
2 teaspoons vanilla extract
1 1/2 teaspoons ground cinnamon
3 large eggs
powdered sugar, for dusting
maple syrup, for serving
3 cups fresh strawberries, hulled and sliced (about 1 pound)
1 cup sugar
1 medium lemon, juiced (about 2 to 3 tablespoons)

Steps:

  • Using a paring knife, cut through the bottom crust of each slice of bread horizontally, to create a pocket that your fruit filling can be stuffed into.
  • In a small mixing bowl, combine the softened cream cheese, Strawberry Jam and lemon zest. Fold in the blueberries. Place the mixture into a re-sealable bag. When you are ready to stuff the bread you will snip off a corner of the bag and pipe the filling inches.
  • In a baking dish, whisk together the milk, 1 tablespoon melted butter, brown sugar, vanilla, cinnamon and eggs.
  • In a large, heavy-bottomed skillet melt the 2 tablespoons butter over medium heat.
  • Using the re-sealable bag as a pastry bag, stuff each slice of bread with about 2 tablespoons of the cream cheese mixture. Once the slices are stuffed, place each slice into the milk and egg mixture for about 10 seconds per side. Once the slices are coated with the custard base, place them into the skillet to brown. Work in batches. Cook each slice of stuffed French toast until golden brown, 4 to 5 minutes per side. If cooking a large batch, transfer the cooked French toast to a baking sheet and keep warm in a 200 degree F oven while you cook the rest of the slices. Repeat the process with the remaining French toast. Serve warm, topped with extra berries, powdered sugar and maple syrup.
  • Strawberry Jam:.
  • In a saucepan over medium-high heat, bring the strawberries, sugar and lemon juice to a boil. Reduce the heat to a simmer and stir often until the fruit thickens and becomes syrupy, 5 to 10 minutes.
  • Fill a large bowl with ice and a little water. Have a smaller mixing bowl that can sit within the larger bowl of ice. Once the fruit has cooked, add it to the smaller bowl and set it in the ice bath to cool. As the fruit cools it should become gel-like. Once the jam has cooled it can be stored.

1/2 lb smoked bacon
2 lbs firm ripe tomatoes, cored and chopped
1 medium yellow onion, diced
1 cup sugar
2 1/2 tablespoons cider vinegar
1 1/2 teaspoons salt
1/4 teaspoon ground black pepper

Steps:

  • In a large skillet over medium-high, cook the bacon until crispy, about 5 minutes.
  • Transfer the bacon to paper towels to drain excess fat, blotting it dry with additional towels as needed.
  • In a large saucepan, combine the tomatoes, onion, sugar, cider vinegar, salt and pepper.
  • Bring to a boil, stirring often, then reduce heat to medium.
  • Crumble the bacon into the tomato mixture.
  • Simmer until very thick, about 1 hour.
  • Season with additional salt and pepper as needed.
  • Let the jam cool, then ladle into jars.
  • Can be refrigerated for 3 to 4 days, or frozen up to 2 months.
  • If freezing, divide the jam among several small jars.
  • When ready to use, let the jar thaw overnight in the refrigerator.
