PROVENçAL GREENS SOUP



Provençal Greens Soup image

In France this simple, nutritious soup is made with wild greens that you might forage on an afternoon's walk, such as nettles, watercress and dandelion greens. If you must use one green, make it Swiss chard. The soup can be prepared through step 1 several hours before serving.

2 tablespoons extra-virgin olive oil
2 leeks, cut in half lengthwise, sliced, rinsed of dirt and drained on paper towels
4 garlic cloves, sliced
Kosher salt
6 cups chopped greens (leaves only), such as Swiss chard, dandelion greens, watercress and beet greens
Black pepper, to taste
2 large eggs
4 thick slices country bread, toasted and rubbed with a cut clove of garlic
Grated Parmesan, for serving (optional)

Steps:

  • Heat 1 tablespoon olive oil in a large, heavy soup pot over medium heat, and add the leeks. Cook, stirring, until tender, 3 to 5 minutes. Add the garlic and 1/2 teaspoon salt, and cook, stirring, until the garlic is fragrant, about 1 minute. Add the greens, and stir until they begin to wilt. Add 1 1/2 quarts water (6 cups) and salt to taste, and bring to a simmer. Reduce the heat and simmer, partially covered, for 15 to 20 minutes, until the greens are very tender and the broth sweet. Add pepper, and taste and adjust seasoning.
  • Beat the eggs in a bowl. Making sure that the soup is not boiling, whisk a ladle of it into the beaten eggs. Take the soup off the heat, and stir in the tempered eggs. Brush the garlic croutons with olive oil, and place one or two in each bowl. Ladle in the soup, sprinkle on some Parmesan if desired and serve.

This soup is a Portuguese favorite of mine. It is a creamy soup with the wonderful use of kale, giving it the green soup look. Enjoy it with a thick slice from your favorite loaf of bread!

4 tablespoons olive oil, divided
1 onion, minced
1 clove garlic, minced
6 potatoes, peeled and thinly sliced
2 quarts cold water
6 ounces linguica sausage, thinly sliced
2 ½ teaspoons salt
ground black pepper to taste
1 pound kale, rinsed and julienned

Steps:

  • In a large saucepan over medium heat, cook onion and garlic in 3 tablespoons olive oil for 3 minutes. Stir in potatoes and cook, stirring constantly, 3 minutes more. Pour in water, bring to a boil, and let boil gently for 20 minutes, until potatoes are mushy.
  • Meanwhile, in a large skillet over medium-low heat, cook sausage until it has released most of its fat, 10 minutes. Drain.
  • Mash potatoes or puree the potato mixture with a blender or food processor. Stir the sausage, salt and pepper into the soup and return to medium heat. Cover and simmer 5 minutes.
  • Just before serving, stir kale into soup and simmer, 5 minutes, until kale is tender and jade green. Stir in the remaining tablespoon of olive oil and serve at once.

1bunch spring onions, chopped
1large potato, peeled and chopped
1 garlic clove, crushed
1l vegetable stock
250g frozen peas
100g fresh spinach
300ml natural yogurt
few mint leaves, basil leaves, cress or a mixture, to serve

Steps:

  • Put the spring onions, potato and garlic into a large pan. Pour over the vegetable stock and bring to the boil.
  • Reduce the heat and simmer for 15 mins with a lid on or until the potato is soft enough to mash with the back of a spoon.
  • Add the peas and bring back up to a simmer. Scoop out around 4 tbsp of the peas and set aside for the garnish.
  • Stir the spinach and yogurt into the pan, then carefully pour the whole mixture into a blender or use a stick blender to blitz it until it's very smooth. Season to taste with black pepper.
  • Ladle into bowls, then add some of the reserved cooked peas and scatter over your favourite soft herbs or cress. Serve with crusty bread, if you like.

500ml stock , made by mixing 1 tbsp bouillon powder and boiling water in a jug
1 tbsp sunflower oil
2 garlic cloves , sliced
thumb-sized piece ginger , sliced
½ tsp ground coriander
3cm/1in piece fresh turmeric root, peeled and grated, or 1/2 tsp ground turmeric
pinch of pink Himalayan salt
200g courgettes , roughly sliced
85g broccoli
100g kale , chopped
1 lime , zested and juiced
small pack parsley , roughly chopped, reserving a few whole leaves to serve

Steps:

  • Put the oil in a deep pan, add the garlic, ginger, coriander, turmeric and salt, fry on a medium heat for 2 mins, then add 3 tbsp water to give a bit more moisture to the spices.
  • Add the courgettes, making sure you mix well to coat the slices in all the spices, and continue cooking for 3 mins. Add 400ml stock and leave to simmer for 3 mins.
  • Add the broccoli, kale and lime juice with the rest of the stock. Leave to cook again for another 3-4 mins until all the vegetables are soft.
  • Take off the heat and add the chopped parsley. Pour everything into a blender and blend on high speed until smooth. It will be a beautiful green with bits of dark speckled through (which is the kale). Garnish with lime zest and parsley.

1 teaspoon olive oil
1 large onion, sliced (about 1 1/2 cups)
2 1/2 cups low-sodium chicken broth
3/4 teaspoon dried tarragon
1/2 teaspoon salt
Freshly ground black pepper
1 (10-oz) bag frozen peas
4 teaspoons plain nonfat yogurt, optional

Steps:

  • In a large pot, heat the olive oil over moderately-low heat. Add the onion, cover and cook, stirring occasionally, until softened, about 5 minutes. Add the broth, tarragon, salt and a few turns of freshly ground black pepper and bring to a boil. Add the peas and cook just until defrosted.
  • In a blender, puree the soup in 2 batches until very smooth. If serving hot, return the soup to the pot and bring just to a simmer. If serving cold, transfer to the refrigerator to chill. Ladle into bowls. Stir the yogurt so that it is smooth and top each serving with a swirl of yogurt.

Steps:

  • Heat oven to 375°F. Line rimmed baking pan with foil.
  • In 5-quart Dutch oven, heat 2 teaspoons of the oil over medium heat. Cook onions, carrot and celery in oil 9 to 12 minutes, stirring occasionally, until carrots are just tender. Stir in garlic, salt, dried herbs and pepper; cook about 1 minute or until garlic is fragrant. Add beans and broth. Increase heat to high; heat to simmering. Steps:

  • Heat olive oil in a large pot over medium heat. Saute onion until golden brown.

  • Add in tomato paste, turmeric, paprika and cumin.

1 tablespoon olive oil
1 small white onion, peeled and diced
4 cloves garlic, peeled and minced
8 cups Kitchen Basics Vegetable Stock
1 small head broccoli, chopped into bite-sized florets
1 small head cauliflower, chopped into bite-sized florets
1 (15-ounce) jar white beans, rinsed and drained
2 teaspoons ground cumin
1-2 teaspoons sea salt
pinch of crushed red pepper flakes and freshly-cracked black pepper
6 cups (about 5 ounces) baby spinach
zest and juice of 1 lemon (about 2 tablespoons juice)
toppings: sliced avocado, chopped fresh cilantro, and/or toasted seeds (pepitas, sunflower seeds, etc.)

Steps:

  • Heat oil in a large stockpot over medium-high heat. Add onion and sauté for 5 minutes, stirring occasionally, until softened and translucent. Stir in the garlic and sauté for an additional 1-2 minutes, stirring occasionally, until fragrant.
  • Add in the vegetable stock, broccoli, cauliflower, white beans, cumin, 1 teaspoon sea salt, crushed red pepper flakes and black pepper, and stir until combined. Continue cooking until the soup reaches a simmer. Then reduce heat to medium-low, cover and simmer for 5-8 minutes, or until the broccoli and cauliflower are tender. Stir in the spinach and cook for 1 minutes, or until it is slightly wilted.
  • Use an immersion blender (or transfer the soup in batches to a traditional blender) to puree the soup until smooth.
  • Stir in the lemon zest and juice until combined. Then taste, and season the soup with additional salt and pepper if needed.

This is a winter favorite, vegetarian soup that is adapted from Laurel's Kitchen. Mix in some milk to make a creamy version and feel free to experiment with vegetables or leave some un-pureed for more texture. Also, sometimes I blend it all after the addition of the spinach.

1 lb spinach, washed and chopped

Steps:

  • Saute the onion, garlic and celery in oil until soft. Add 4 1/2 cups of stock, split peas, and bay leaves. Bring to a boil; then cover loosely and simmer over low heat for about 40 minutes.
  • Add zucchini, remaining stock, and seasonings. Cook for another 10 minutes, until zucchini is tender.
  • Remove bay leaves and discard. Puree soup, return to the soup pot and stir in the spinach and parsley. Cook over medium heat for several minutes. Adjust seasonings and serve.

3 cups broccoli crowns
2 tablespoon olive oil (plus more to garnish (optional))
1 10 oz package frozen spinach
1 10 oz bag frozen peas
1 shallot (diced)
2 garlic cloves (minced)
1½ cups chicken or vegetable broth
1½ cups filtered water
Salt & pepper to taste
Chili flakes to garnish (optional)

Steps:

  • Preheat the oven to 425 degrees F. Spray a baking pan with non-stick cooking spray and set aside.
  • Toss broccoli with 1 tablespoon olive oil, sprinkle with salt and pepper, and add to the baking sheet. Roast for 15 - 20 minutes, until broccoli has softened and browned. Rotate half way through.
  • While the broccoli is roasting, heat the remaining 1 tablespoon of oil in a large sauce pan over medium heat. Add garlic and shallot and saute until fragrant, 2 - 3 minutes. Add the spinach, peas and liquid and bring to a boil, stirring constantly until spinach has thawed. Season with salt and pepper. Turn down to a simmer and cover.
  • When broccoli is done, add to the pot and keep covered for another 5 minutes.
  • Remove the soup from the heat and, in batches, blend on high until smooth. Return to the pot, season with additional salt and pepper to taste.
  • Serve immediately. Garnish with a drizzle of oil or chili flakes.

1 tablespoon olive oil
1 white or yellow onion (chopped)
2-3 cloves garlic (minced)
2-3 teaspoons minced ginger (to taste)
2 medium yellow or yukon gold potatoes (peeled and roughly chopped (about 3/4-1 pound))
1 teaspoon salt
4 cups low sodium vegetable broth
2 heaping cups broccoli stems or florets (or chopped asparagus, chopped baby bok choy, or roughly chopped zucchini)
4 cups tightly packed (roughly chopped kale, Swiss chard, beet greens, or spinach)
1 cup unsweetened soy or almond milk
Black pepper to taste
For serving: white beans (cooked rice, cooked quinoa, coconut bacon, toasted chickpeas, toasted pepitas, fresh herbs, etc.)

Steps:

  • Heat the olive oil in a large stock or soup pot over medium heat. Add the onion. Saute onion for 5 minutes, or until it's clear and soft. Add the garlic and ginger and cook for another minute, or until the garlic is very fragrant.
  • Add the potatoes, salt, and broth to the pot. Bring to a boil. Reduce to a simmer. Simmer, covered, for 10 minutes, or until the potatoes are fork tender. Add the broccoli (or other vegetable). Simmer for 5-10 minutes, or until the vegetables are tender. Stir in the kale or other leafy greens, cover, and simmer for 5 minutes, or until the kale is bright green and wilted.
  • Transfer the soup to a blender in batches to puree thoroughly, adding water as needed if the soup is too thick (remember that you'll also add some soy or almond milk after blending). Return the soup to the pot and stir in the plant milk and black pepper to taste, as well as a pinch of salt if desired. Serve with toppings of choice.
  • Soup will keep in an airtight container for up to three days and can be frozen for 2-3 weeks.

1 tablespoon olive oil
2 large onions, chopped
8 cups vegetable broth
½ cup uncooked long-grain wild rice
4 cloves garlic, minced
1 pound fresh kale, chopped
12 ounces fresh spinach, chopped
2 ounces goat cheese, crumbled
1 tablespoon lemon juice
salt and ground black pepper to taste

Steps:

  • Heat olive oil in a small frying pan over medium-high heat. Cook and stir onions in the hot oil until until translucent, about 5 minutes. Reduce heat to low and continue cooking and stirring until onion is very tender and dark brown, about 30 minutes more.
  • Pour vegetable broth into a pot and place over medium heat. Add rice and minced garlic; stir in kale and spinach, adding more broth if necessary. Add onions to the pot. Allow the greens to reduce and rice to fully cook, about 45 minutes.
  • Use an immersion blender to blend to desired consistency. Add goat cheese and use the blender again to create a creamy texture. Stir in lemon juice, salt, and pepper.

5 cups of filtered water
4 medium-size potatoes, chopped
1 large carrot, coarsely diced
¼ bunch celery, coarsely diced
½ large onion, coarsely diced
4 cloves of garlic, chopped
1 cup of collard leaves and/or stalks, chopped
¼ bunch kale, chopped
¼ bunch of cilantro
1 inch fresh ginger, minced
1 ½ tsp cumin

Steps:

  • In a pot over medium heat, cook onion and garlic in 4 Tbsp of filtered water for 2-3 minutes.
  • Add carrots, celery, and potatoes, and the rest of the filtered water.
  • Bring to a gentle boil, keeping the stove on medium and stirring frequently.
  • Cook for about 10 minutes or until the vegetables have softened.
  • Add the collard greens, kale, cilantro, and cumin, and cook on low heat for another 15 minutes.
  • Blend with an immersion blender until smooth.

A super fresh and healthy soup filled with greens and seasoned with lemon juice and cayenne pepper. This recipe is vegan and gluten free. The soup requires some multitasking; you'll be caramelizing the onions in a skillet while you cook the rice and greens in a pot. If you're cooking additional rice as a garnish, you'll need one more pot on the stove (see notes for rice cooking instructions). Recipe yields 6 servings of about 1 2/3 cup soup each.

2 large yellow onions, chopped
1 teaspoon salt, divided
2 tablespoons plus 3 cups water, divided
1/4 cup arborio rice, rinsed (I used brown arborio rice)
1 large bunch kale or green chard, preferably organic (about 1 pound)
14 cups gently packed spinach or baby cooking greens, like chard, preferably organic (about 12 ounces)*
4 cups vegetable broth
Big pinch of cayenne pepper, to taste (I used over 1/4 teaspoon)
1 tablespoon lemon juice, or more to taste
Serve with (optional): cooked brown basmati rice and cooked chickpeas

Steps:

  • First prepare the greens: Remove the ribs from the chard/kale and discard or save them for another recipe. Coarsely chop or tear the kale leaves. Trim any tough stems from the spinach/baby greens and roughly chop the leaves.
  • Caramelize the onions: Heat 2 tablespoons oil in a large skillet over medium-high heat. Add onions and 1/4 teaspoon salt. Cook, stirring frequently, until the onions begin to brown, about 5 minutes.
  • Reduce the heat to low, add 2 tablespoons water and cover the skillet (I used a baking sheet to cover mine). Cook until the onions are greatly reduced and have a deep caramel color, 25 to 30 minutes. Stir frequently while the pan is still hot and occasionally once the pan has cooled down (always recover the pan after stirring).
  • Cook the arborio rice: While the onions are cooking, combine the remaining 3 cups water and 3/4 teaspoon salt in a soup pot or Dutch oven. Add rice and bring the water to a boil. Reduce heat to maintain a simmer, cover and cook for 15 minutes.
  • When the rice has cooked for 15 minutes, stir in the chard greens or kale. Return to a simmer; cover and cook for 10 minutes.
  • When the onions are caramelized, stir a little of the simmering liquid into them. Then add the onion mixture to the rice along with the spinach, vegetable broth and cayenne. Return to a simmer, cover and cook, stirring once, until the spinach is tender but still bright green, about 5 minutes more.
  • Puree the soup in the pot with an immersion blender until perfectly smooth, or in a regular blender in batches (never fill your blender past the maximum fill line, and be careful with hot soup). Stir in 1 tablespoon lemon juice. Taste and add more lemon juice, sea salt or cayenne pepper, if desired. Garnish each bowl of soup with a drizzle of olive oil.
  • Divide the soup into bowls if you're serving it as a bisque, or serve in bowls over cooked rice and chickpeas for a more complete meal. Garnish soup with a swirl of olive oil if you'd like. Serve with lemon wedges and freshly ground black pepper on the side.

1 green chilli (mildly spicy)
2 tablespoon cilantro stalks, chopped
1/4 Cup fresh basil leaves
1 tablespoon coconut milk

4 tablespoon sesame oil or cooking oil
1 tablespoon garlic, finely chopped
1 tablespoon ginger, finely chopped
1/2 Cup onion, finely chopped
1 Cup white mushroom, sliced
4 Cup (500 ml approx) vegetable stock
1 teaspoon vegan fish sauce
1 teaspoon rice vinegar
1 teaspoon dark brown sugar
Salt to taste
200 gram rice noodles or sticks
1/4 Cup thick coconut milk
5 - 6 bok choy leaves, roughly chopped
cilantro, chopped
fresh basil leaves
red chili, chopped
lime juice

Steps:

  • Combine Thai green curry paste, chili, cilantro stalks, basil leaves, coconut milk, and water, Blend to a paste. Do not blend for too long as the heat from the blender often turns green pastes into a black and bitter mess. Transfer the green paste to a bowl and set it aside.
  • Set the SAUTE mode of the instant pot for 15 minutes. Add sesame oil to the inner pot. Once the oil is hot, add ginger, garlic, and onion. Saute for 1 minute. No need to brown the aromatics.
  • Add sliced mushroom. Saute for 2 - 3 minutes or till mushroom become light golden in color.
  • Next, add the green curry paste. Mix nicely.
  • Add vegetable stock, fish sauce, brown sugar, rice vinegar, salt, and stir to mix. Allow the soup to simmer for 5 minutes.
  • Add the rice noodles. Simmer the soup till noodles are cooked. This takes less than 5 minutes.
  • Once noodles are cooked, add coconut milk, bok choy, cilantro, basil, and red chili. Mix and simmer the soup for 1 - 2 minutes. Taste and adjust the seasoning accordingly.
  • At this stage, if the soup seems too thick add more vegetable stock to get the desired consistency, simmer, and turn off the heat.
  • Just before serving garnish soup with fresh herbs, crushed peanuts, and juice of lime.
  • Serve Thai Green Curry Soup warm.

4 cups chicken stock
4 cups vegetable stock

Steps:

  • Heat the EVOO in large Dutch oven over medium heat. Add the anchovies into the oil and stir until they melt away into the oil. Add the garlic and chiles, and stir for 2 minutes. Then add the vermouth. Add the potatoes, celery, carrots and onions, and cook partially covered 7 to 8 minutes. Stir in the tomatoes and season with pepper. Wilt in the greens and season with a little nutmeg. Once the greens have wilted, add the chicken and vegetable stocks and bring to boil. Reduce the heat and simmer for a few minutes. Then season with salt, if necessary.
  • Cool completely and store in the refrigerator for a make-ahead meal.
  • To serve, reheat over medium heat and stir in the parsley. Serve with cheese and bread.
