Evelyn/Athens - I suggest adding mango because I love the tart/sweet element it would add - and that's me basically...ask my students. TheGrumpyChef - I suggest onion, 'cause sometimes I cry for no good reason at all! Galley Wench - I'll add cumin, for "Spicy" Bellinda - You either hate us or love us ('us' being me and garlic) Sue L - cilantro - because when I shower, I always come out fresh and even have a hint of soapiness Slatts - I would like to add a red bell pepper to our salsa because the color reminds me of love and caring. Virginia Cherry Blossom - I am most like lime juice because I have a sweet smell (nice) but I have a tarty taste (honest) - I bring out the best in people and salsa Breezermom - tomato, because I make everything more colorful and bright! Queen Dana - I'm like olive oil because I'm silky and full of good fat.

1 mango, peeled, seeded and diced
1 avocado, peeled, pitted, and diced
2 tomatoes, diced
1 red bell pepper, diced
1 jalapeno pepper, seeded and minced
1/2 cup chopped fresh cilantro
2 garlic cloves, minced
3/4 teaspoon salt
1/2 teaspoon cumin
1/2 teaspoon oregano
1/8 teaspoon ground cayenne pepper
2 tablespoons fresh lime juice
1/4 cup finely-chopped red onion
2 tablespoons olive oil

Steps:

  • In a medium bowl, combine all the ingredients and toss with your very clean fingers to distribute everything. Looks and smells delicious, right? You can't wait to have some RIGHT NOW? Hold on a little bit longer: to blend the flavors, refrigerate for about 30 minutes before serving.
  • Serve with your favourite grilled meat/fish/seafood or with tortilla 'dippers' for a healthier, flavour-to-the-max alternative to what you're used to.

Whenever I bring this recipe to a get together, a crowd quickly gathers around the platter and the salsa disappears just as fast. A friend of mine gave me this recipe, which she got from a friend of hers and was told that it was the recipe for the Lone Star Salsa(Tex Mex restuarnt).

4 fresh tomatoes (peeled and diced)
1 (28 ounce) can diced tomatoes
1 (5 1/2 ounce) can tomato paste
2 small jalapeno peppers (seeded and chopped)
2 minced fresh garlic cloves
2 tablespoons fresh cilantro (chopped)
2 teaspoons salt
1 teaspoon garlic powder (optional)
3 tablespoons olive oil
1/2-3/4 red onion, chopped (the amount you use is up to you)

Steps:

  • To easily peel tomatoes, cut an X into the top or bottom of the tomato and place in boiling water for a few minutes remove, let cool slightly and remove skin.
  • Dice tomatoes, place in food processor add tomato paste, chopped peppers, minced garlic, cilantro, salt, onions, garlic powder and oil. Process until mixed.
  • This mixture usually fills my food processor, so I empty this into a bowl; add the can of diced tomatoes and process to chop the tomatoes a little finer. I then put this into first mixture and mix.
  • At this point the salsa is ready to serve, but if left to sit in refrigerator for a few hours the salsa will thicken and the flavours will intensify.
  • This method produces a fine textured salsa. I you like a chunkier salsa, I sometimes place onions, seeded peppers, cilantro, garlic in the processor whole and process until chopped. I then take the tomatoes and pulse them until I have the texture I like.

  • In a food processor, place tomatillos, shallots, garlic, green chile peppers, cilantro, jalapeno pepper and salt. Using the pulse setting, coarsely chop. Cover and chill in the refrigerator until serving.

This is not like the tex mex green salsa you encounter at big chains that contain avacados or tomatillos. This is a more of a taqueria style sauce that you find in local mexican meat markets. I liked the sauce so much that I asked the waitress at a taqueria if she knew how to make it and she asked a person in the back and was fortunate enough to get an answer. It is VERY spicy.

1 lb jalapenos or 10 jalapenos
5 -6 fresh garlic cloves, peeled
1 knorr chicken bouillon cube
1 cup water
1/4 cup oil
salt

Steps:

  • Cut the stems off the jalapenos and throw them in a small pot.
  • Remove seeds if you don't want it as spicy.
  • Add peeled garlic.
  • Add a small amount a water, about 1/4 cup or a little more to get a steam effect.
  • Place on stove at a low medium heat to get it steaming for about 15 minute.
  • Add contents to a blender and add oil and blend until smooth.
  • Add salt to taste.
  • You may need to adjust salt, water, and chicken cubes to suit the taste because jalapenos are not all uniform in taste depending on the season.
  • I used olive oil but I doubt a mexican restaurant uses olive oil.

2 pounds tomatillos, husked and cut in half
3 green tomatoes, chopped
½ cup olive oil
2 mild chile peppers, chopped
1 shallot, chopped
5 sprigs cilantro, chopped
⅓ cup distilled white vinegar
¼ cup garlic powder to taste
1 teaspoon salt

Steps:

  • Place the tomatillos, tomatoes, oil, chili pepper, shallots, cilantro, vinegar, garlic powder, and salt in a large saucepan over medium-high heat. Bring to a boil, then reduce heat to medium-low and simmer for 15 to 20 minutes until the tomatillos have softened. Pour into a blender, and puree until smooth. Chill and serve.
