  • In a large skillet, saute onion and garlic in butter until tender. Add peas and water. Bring to a boil. Reduce heat; cover and simmer for 4-5 minutes or until peas are tender. Season with salt and pepper.

1 tablespoon butter
1 small onion, chopped
1 cup chicken broth
1 to 1 1/4 pounds trimmed green beans (see Cook's Note)

  • To a medium pan over medium heat add extra-virgin olive oil and butter and onion. Saute onion 3 minutes, add broth and bring to a boil. Add beans, season with salt and cover pan and simmer 8 minutes, until tender.

I hesitated to submit this recipe because it is so quick and easy. I changed one that a friend gave me. It is a refreshing change from the regular peas and onions we all have eaten over the years. Try it...you will like it!

1 1/2 cups white pearl onions, frozen
2 cups green peas, frozen
2 teaspoons butter
1 tablespoon fresh rosemary, chopped
1/4 teaspoon pepper
1/2 teaspoon salt
1 cup water

Steps:

  • In a large saucepan bring the 1 cup of water to a boil over high heat. Add the salt and frozen onions, reduce heat to medium. Cover and cook for 6 minutes.
  • Add the peas, return to a boil, cover and cook for about 6-7 minutes until peas are tender.
  • Meanwhile, melt the butter over low heat in a small skillet. Add the fresh rosemary. cook and stir for about 2 minutes.
  • Drain the peas and onions when they are tender. Return to the large saucepan. Add pepper and the butter/rosemary mixture. Lightly stir to completely cover the peas and onions.
  • Pour in serving dish and enjoy!

4 garlic cloves, mashed
250ml (1 cup) soy vegetable cooking cream (I used Alpro Cuisine Soya)
4 Tbsps olive oil
fresh dill, chopped (add as much as you like, I tend to add a lot of fresh herbs to my meals, but this is just a personal preference)
some fresh thyme, to taste
1 tsp garlic powder
1 tsp onion powder
100g (½ cup) crispy fried onions
salt and pepper, to taste

Steps:

  • Heat the oil in a large pan. Add the mashed garlic and green peas. Mix well. Add 1/4 glass of water and let it cook with the lid on for 10 minutes. Add the herbs, seasonings, and soy vegetable cooking cream. Mix well. Cook for 5 more minutes or until soft (it may take a bit longer if you don't let the frozen peas thaw beforehand; Also the brand of frozen peas I use is pre-blanched, very young, and fine peas, which means shorter cooking time, so adapt accordingly.) Once cooked, turn off the heat. Add the crispy fried onions and mix.

2 green onions
12 large mint leaves
2 teaspoons unsalted butter
1/4 cup chopped chives

Steps:

  • Bring a large pot of water to a boil. Meanwhile, shell peas (you should have about 4 cups).
  • Cook peas in boiling water until tender, about 2 minutes. Drain well and transfer to a medium bowl.
  • While peas are cooking, trim and discard the root ends and dark green leaves of green onions.
  • Halve white and light green parts lengthwise and thinly slice crosswise. Set aside. Chop mint and set aside.
  • Add butter to hot peas and toss until butter is melted and peas are coated. Add green onions, chives, and mint and toss to combine.

2 pounds shelled fresh peas, blanched 5 minutes, or frozen peas, thawed

Steps:

  • Blanch onions in large saucepan of boiling salted water 5 minutes. Drain, cool, and peel onions.
  • Sauté onions and guanciale in large skillet over medium heat until fat is rendered, guanciale is golden, and onions are brown in spots, about 10 minutes. Add peas; heat through. Season with salt and pepper. Transfer to bowl.

2 tablespoons flour
2 tablespoons sweet butter, slightly softened
1 tablespoon fresh finely snipped parsley (or fresh mint)

Steps:

  • Cook peas and onions (according to package directions) until done; drain. Set aside and keep warm.
  • In a medium saucepan, whisk together the cream, sugar, salt & pepper, garlic, tarragon, and flour until smooth.
  • Bring to a boil over medium-high heat; reduce heat to medium and continue to cook, stirring constantly, for three minutes more.
  • Reduce heat to low and add the cooked peas and onions to the cream sauce; stir gently to combine and heat through briefly.
