GREEN PEAS COTTAGE CHEESE CUPS

Green Peas Cottage Cheese Cups image

Make and share this Green Peas Cottage Cheese Cups recipe from Food.com.

Provided by Charishma_Ramchanda

Categories     Vegetable

Time 1h40m

Yield 7 peas paneer cups

Number Of Ingredients 15

2 cups refined flour
4 tablespoons warm melted ghee
1/2 teaspoon salt
water, as required to make dough
oil, to deep fry
1 1/2 cups boiled green peas
1/2 cup finely chopped onion
1/2 cup finely chopped capsicum
1 cup coarsely mashed panir
1 tablespoon garam masala powder
1 tablespoon chat masala
1 tablespoon oil
salt
1 medium tomatoes, finely chopped
1 cup fresh coriander leaves, finely chopped

Steps:

  • To prepare the dough, mix refined flour, ghee and salt in a round flat-bottomed bowl using your greased(with some ghee so that the dough will not stick to your fingers)fingers.
  • Add enough water as is required to prepare the dough until it is semi-hard.
  • Keep aside for 10-15 minutes.
  • From the dough, pinch off small balls.
  • Flatten each ball and then roll it out using a rolling pin(just the way you make chappati/roti/Indian flatbreads). Roll out to the size of about 7 cms. in diameter.
  • Now take about 7 small metallic containers.
  • Cover them from outside using the thinly rolled dough.
  • Deep fry in warm oil till the dough is golden brown and crispy.
  • What we are trying to achieve here is the shape of the cups. I think it is an amazing way of blending in creativity into cooking!
  • Drain on clean absorbent kitchen paper napkins.
  • Next, carefully separate the container and cups.
  • Store the cups in an air-tight container.
  • Repeat likewise for remaining cups.
  • Then start making the stuffing.
  • For this, heat oil in a pan.
  • Toss in onions and stir-fry for a minute.
  • Fold in capsicum and stir-fry for another 2-3 minutes.
  • Sprinkle some water while stir-frying to prevent from burning.
  • Add the boiled greenpeas and the mashed paneer, garam masala powder, salt and chat masala powder. Mix thoroughly.
  • Stir-fry for another 5 minutes.
  • Remove from heat.
  • Allow it to cool.
  • To serve, stuff the cups with the prepared stuffing.
  • Then, garnish each cup with finely chopped tomatoes and finely chopped corriander leaves or parsley or cilantro or mint leaves(whichever is your favourite).
  • Note: You may also use your choice of veggies in the stuffing. If you do, please mention it in your review for myself and others to try. Thanks!

18 CLEVER WAYS TO EAT COTTAGE CHEESE — EAT THIS NOT THAT
18-clever-ways-to-eat-cottage-cheese-eat-this-not-that image

From eatthis.com
Estimated Reading Time 6 mins
  • Create smooth, sweet spreads. The lumpy texture or cottage cheese can be off-putting for some, says Lisa Richards, a nutritionist and creator of the Candida Diet.
  • Banana Pancakes. Cottage cheese is commonly used in breakfast dishes, like pancakes, especially as people are cutting out white flour or embracing paleo or gluten-free diets, says Patel.
  • Recovery Bowls. Erin Kaese, managing editor of Athletic-Minded Traveler, swears by her "recovery bowl," which she says she has been eating nearly every day for the past 15 years.
  • Lemon-Blueberry Swirl. As a spin on the classic "peaches and cream," Lauren O'Connor, a registered dietitian and owner of Nutri Savvy Health, says her lemon-blueberry swirl pairs cottage cheese with fresh or frozen blueberries, lemon, and honey.
  • Beet and Berry Dip. Dips, both sweet and savory, are another natural fit for cottage cheese. O'Connor's beet and berry dip combines both flavors, using a "double cream" base of cottage cheese and sour cream with balsamic beets and blackberries.

  • If using fresh peas, cook in a small saucepan of boiling salted water until tender, about 3 minutes (if using frozen peas, do not cook). Drain.
  • Purée eggs, cottage cheese, flour, 2 tablespoons oil, and 1 teaspoon salt in a blender until smooth. Transfer batter to a medium bowl and stir in peas and 4 scallions. (Batter should be thick but pourable; stir in water by tablespoonfuls if too thick).
  • Heat a lightly oiled large nonstick skillet over medium heat. Working in batches, add batter to skillet by 1/4-cupfuls, spreading out to 3-inch-4-inch rounds with a spoon. Cook pancakes until bubbles form on top, about 3 minutes. Flip and cook until pancakes are browned on bottom and the centers are just cooked through, about 2 minutes longer.
