Vegetarian Stuffed Mushrooms image

Vegetarian Stuffed Mushrooms made healthy by just stuffing them with onions, mushroom stems, roasted peppers and a bit of freshly grated Parmesan cheese, best of all ready in only 30 minutes!

40 large white mushrooms
1 red bell pepper
1/4 cup roasted red bell pepper (chopped)
1/2 medium onion
3 green onions
1 teaspoon oregano
6 tablespoon breadcrumbs
4 tablespoon Parmesan cheese (grated)
1/4 cup parsley (fresh)
2 tablespoon olive oil
1/2 teaspoon salt (or to taste)
1/4 teaspoon pepper (or to taste)

Steps:

  • Preheat oven to 400 F degrees.
  • Clean the mushrooms and gently remove the stems from them.
  • Place the mushrooms stem side down on a baking sheet and bake until the liquid leaks out of them then place the mushrooms stem side down on some paper towels to soak up any additional liquid.
  • Chop up about half the mushroom stems in very small pieces. Chop the onion, green onions, red bell pepper, roasted pepper and parsley.
  • Heat 2 tbsp of olive oil in a skillet. Add the mushrooms stems, red pepper, roasted pepper, green onion and onion to the skillet and saute. Add the oregano and salt and pepper. Saute for about 5 minutes until pepper and onion are tender.
  • Transfer the stuffing to a bowl and let it cool a bit. Add the parsley, breadcrumbs and Parmesan cheese and mix well.
  • Place the mushrooms stem side up on the baking sheet and fill them with the stuffing, generously.
  • Bake for 15 minutes.
  • Serve warm.

20 baby bell or cremini mushrooms
2 tablespoons butter
2 garlic cloves (minced)
½ medium onion (finely diced)
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
4 ounces cream cheese (softened)
⅓ cup freshly grated parmesan cheese (grated)
⅓ cup whole pecans (roughly chopped)
¼ cup finely chopped fresh parsley (plus more for garnish)

Steps:

  • Preheat oven to 400°F. Grease a baking sheet with a little olive oil. Remove the stems from the mushrooms, finely chop them, and set aside.
  • Melt the butter in a medium skillet over medium heat. Add the chopped mushroom stems and cook for 5 minutes, or until most of the moisture is gone. Add the onion, garlic, salt, and pepper, and cook for another 1 to 2 minutes, until the onion has softened. Transfer the mushroom mixture to a mixing bowl, and let it cool slightly.
  • To the mixing bowl, add the cream cheese, parmesan (reserve 1 tablespoon), parsley, and pecans (reserve 1 tablespoon). Stir until well combined.
  • Fill mushroom caps with the cheese filling, and evenly sprinkle the tops with the reserved parmesan and chopped pecans.
  • Bake for 20 to 25 minutes, or until the top is golden and the mushrooms are slightly soft. Garnish with extra parsley to serve.

32 ounces whole baby bella mushrooms ((look for ones on the larger side, which are easier to stuff))
1 tablespoon extra virgin olive oil
1 pound Italian turkey or chicken sausage (sweet or hot)
1/2 tablespoon sherry vinegar or red wine vinegar
1/4 teaspoon kosher salt
1/4 teaspoon ground black pepper
4 green onions (finely chopped)
2 cloves garlic (minced)
1/4 cup Italian seasoned breadcrumbs
4 ounces reduced-fat cream cheese (softened to room temperature)
1 large egg yolk
2/3 cup finely grated Parmesan cheese
Chopped fresh parsley

Steps:

  • Place a rack in the center of the oven. Preheat the oven to 350 degrees F. With a paper towel, wipe off the outsides of mushrooms. Remove and finely chop the stems. Set the caps aside.
  • Heat the oil in a large nonstick skillet over medium. Brown the sausage until cooked through, using a sturdy spoon to break apart the meat into small pieces (sausage is kind of a pain to break into small pieces-once I have the pieces fairly small, sometimes I use a potato masher to split them further). This will take about 8 minutes.
  • To the skillet, add the mushroom stems, vinegar, salt, and pepper. Cook until the stems are softened, about 4 minutes.
  • Stir in the green onion, garlic, and Italian breadcrumbs. Set aside to cool.
  • In a large bowl, stir together the cream cheese, egg yolk, and Parmesan with a fork until smoothly combined.
  • Fold in the sausage mixture.
  • With a spoon, generously fill each mushroom cap so that you create a mound on top. Arrange in a baking dish large enough to hold them snugly in a single layer (they will touch at the edges).
  • Bake the stuffed mushrooms until browned and the filling is cooked through, about 20 minutes. Some liquid may seep out; simply leave it behind in the pan.
  • Transfer to a serving plate and let cool at least 5 minutes. Sprinkle with fresh parsley. Enjoy warm or at room temperature.

6 large mushrooms
2 tablespoons oil
2 -3 garlic cloves, crushed
3 tablespoons butter
1/2 cup chicken stock
3 cups kellogg's seasoned stuffing mix
2 tablespoons fresh parsley, chopped

Steps:

  • Rinse and clean mushrooms, removing the stems. Chop stems and set aside.
  • Saute mushroom caps in 2 T of oil for 1-2 minutes until slightly softened. Blot mushrooms on paper towels and remove excess oil from pan.
  • Saute mushroom stems in garlic and butter for 1-2 minutes until slightly softened.
  • Add chicken stock and bring to a boil.
  • Place stuffing mix in a mixing bowl and add chicken stock mixture.
  • Add parsley and toss gently.
  • Arrange mushroom caps stem side up in a shallow pan. Fill mushrooms with stuffing mix.
  • Place in a preheated 350 degree oven for 10-15 minutes or until golden brown.

1 cup cooked crabmeat, finely chopped
½ cup dry bread crumbs
¼ cup shredded Monterey Jack cheese
1 egg, beaten

½ cup butter, melted
1 ½ pounds fresh button mushrooms, stems removed
½ cup shredded Monterey Jack cheese
¼ cup dry white wine

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Melt 2 tablespoons butter in a skillet; cook and stir green onion until softened, about 2 minutes. Transfer green onion to a bowl. Stir in crabmeat, bread crumbs, 1/4 cup Monterey Jack cheese, egg, lemon juice, and dill weed until well mixed.

  • Preheat the oven to 425 degrees F. Remove the stems from 24 large cremini mushrooms.
  • Wipe the caps clean with a damp paper towel, then toss with 2 tablespoons olive oil and season with salt. Arrange on a baking sheet.
  • Melt 3 tablespoons butter in a large skillet over medium heat. Add 2 thinly sliced onions and 2 teaspoons chopped thyme; season with salt and pepper and cook, stirring, until the onions are caramelized, about 20 minutes. Add 1/4 cup red wine; cook until evaporated, 1 minute. Add 1/2 cup beef broth; simmer until the onions are glazed, 3 minutes.   • Finely chop mushrooms in processor. Melt 2 tablespoons butter in medium skillet over medium-high heat.

12 whole fresh mushrooms, tough ends trimmed
1 tablespoon vegetable oil
1 tablespoon minced garlic

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Prepare a baking sheet with cooking spray.
