Masala is a mixture of spices and herbs used to give Indian food its distinctive flavour. You can purchase many ingredients for the masala such as dried herbs and spices but where you can, buy fresh ingredients and grind them yourself - the difference is very noticeable and the deep flavour and complex aroma is well worth it. Prepare your masala and separate into tablespoon portions and freeze individually for later use for quick and tasty Indian food. Delicious!

1 tablespoon ground turmeric
1/2 tablespoon cumin seed
1/2 tablespoon mustard seeds
1 tablespoon coriander seed
1 tablespoon star anise
1/2 tablespoon clove
6 garlic cloves
2 tablespoons brown sugar
1 bunch fresh coriander leaves
2 cups onions, chopped
1 teaspoon salt
1/3 cup white wine vinegar
1 cup fresh green chili, chopped
1 tablespoon cinnamon
1/2 cup chopped fresh ginger

Steps:

  • Put all the ingredients into a food processor and blend until you have a smooth paste.
  • Divide the mixture in approx tablespoon size portions and freeze for later use.
  • It's as simple as that and use in any recipe that calls for masala. You will never go back to buying curry powder!

1/2 teaspoon wild onion seeds
1/2 teaspoon fenugreek seeds
1 teaspoon dried fenugreek leaves
10 dry curry leaves
1 teaspoon green cardamom seeds
1/2 teaspoon lovage seeds

Steps:

  • Roast, cool and grind the whole spices.
  • Mix with the ground ones, and store tightly covered.

2 tablespoons roasted ground cumin
2 tablespoons roasted ground coriander powder
1 tablespoon red chili powder
2 teaspoons amchur
1 teaspoon salt
1 teaspoon cream of tartar
1 teaspoon ground black salt
1 teaspoon black pepper
1 teaspoon ginger powder
1/2 teaspoon ammonium chloride (sal ammoniac)
1/2 teaspoon ground carom seeds
1/2 teaspoon clove powder
1/2 teaspoon ground paprika, flakes
1/4 teaspoon hing

Steps:

  • Like all Indian/Pakistani spice mixes, dry roast the cumin and coriander seeds lightly in a frying pan. Cool for 10-15 mins before grinding.
  • This recipe sees 2 inda chillies - Spicy red chilly powder and sweet paprika flakes. Paprika may be substitued with Kashmir chilli powder or coarsely ground deghi mirch (small round chillies) with seeds,
  • Cream of tartar further heightens the tart note and is sold in a powder form.
  • Ginger powder si also known as sonth. Whole sonth stores well but is tough to run in the dry grinder. Buy ground sonth when possible.
  • Sal ammonia or Baker's ammonia further increases the tartness of the recipe. Known as Nohoder in Pakistan/India. Also known as Lime Salt. This is Ammonium Chloride or Mineral Salt.
  • Watch the clove powder - it is stinging pungent - fdont get liberal with it.
  • Hing = asafoetida. Contributes to the aroma (sour & sulphuric) and whets the appetite. This is a very bold spice mix, impertinent because of the foods it is going to enhance (bland yoghurt, boiled potatoes,etc). This strong flavors and aroma is its hallmark.

This is one of mom's "THE BEST" recipes I've come across ever since I stepped into cooking shoes:) This dish can be made using chicken as well instead of mutton, equally delicious and I bet you it'll be enjoyed by one and all. It makes a fantastic meal with hot rotis on a cold ROMANTIC WINTER night.

1/2 kg mutton (You can use mutton chops as well)
3 medium onions, crushed
1 teaspoon garlic, crushed
1 teaspoon ginger, crushed
6 -7 green chilies, crushed
1 bunch coriander leaves, crushed
1 tablespoon mint leaf, crushed
1 tablespoon methi leaves, crushed or 1 teaspoon dry methi leaves
2 -3 tablespoons ground spinach
1 cup low-fat yogurt
1/2 cup oil or 1/2 cup ghee
1 teaspoon garam masala
1 1/2 teaspoons salt
1/2 teaspoon red chili powder
1 teaspoon cumin seed, powdered
1/4 teaspoon turmeric powder

Steps:

  • Heat oil/ghee in a cooker.
  • Fry garlic and ginger in the oil/ghee to a golden brown colour.
  • Add onions and fry to a golden brown colour.
  • Add turmeric powder, red chilli powder, garam masala powder, salt and cumin seeds (powdered).
  • Mix well.
  • Add the mutton pieces/mutton chops.
  • Fry well.
  • Add 3/4 cup of water.
  • Cook under pressure for 10 minutes.
  • In the meantime, to the yogurt, add the corriander leaves, mint leaves, methi leaves, spinach and green chillies (green masala mixture).
  • Remove pressure from the cooker.
  • Add the low-fat yogurt and green masala mixture to the mutton.
  • Cook over low heat till the gravy thickens.
  • There is no need to keep on stirring while the dish is cooking.
  • Serve hot with rotis (Indian flatbreads) on a cold ROMANTIC night!

1 teaspoon turmeric

Steps:

  • dry roast only coriander and cumin seeds before grinding.
  • COARSELY grind all the spices.
  • mix together all the spices in their powdered form.
  • bottle into air tight jars.
  • use 2 tblsp per kilo of meat.
