¼ cup lime juice (plus zest of one lime)
3 tablespoons extra-virgin olive oil
2 cloves garlic cloves (pressed)
1 teaspoon chili powder
½ teaspoon cumin
½ teaspoon Kosher salt
¼ cup freshly chopped cilantro (for serving)
1 lime (cut into wedges, for serving)

Steps:

  • In a large bowl, whisk together the lime juice, olive oil, garlic, chili powder, cumin, and salt. Add the uncooked shrimp to the marinade, cover with plastic wrap, and refrigerate 30 minutes.
  • Add shrimp to a large heated pan over medium heat, and cook until pink and opaque. Remove from heat and stir in cilantro. Serve immediately with lime wedges.

1 tablespoon extra-virgin olive oil
1 1/4 pounds medium shrimp, peeled and deveined
1 large garlic clove, minced
2 cups frozen shelled edamame, thawed (from a 10-ounce package)
5 scallions, halved lengthwise and cut into 1-inch pieces, white and green parts separated
1 tablespoon fresh lime juice, plus wedges for serving (optional)

Steps:

  • Cook rice, according to package instructions. Meanwhile, in a large nonstick skillet, heat oil over medium-high. Add shrimp and garlic and cook, stirring occasionally, 4 minutes. 2 cups diced eggplant (1/2-inch dice)
1/2 cup chopped white onions
1 cup thinly sliced green bell peppers
2 teaspoons minced garlic
2 to 4 tablespoons Thai green curry paste, depending on desired degree of heat
6 Kaffir lime leaves, or 1 tablespoon finely grated lime zest
2 tablespoons nam pla (Thai fish sauce)
1 (14-ounce) can unsweetened coconut milk
1 cup shrimp stock, fish stock or bottled clam juice
1 1/2 pounds medium shrimp, peeled and deveined
1/2 cup chopped Thai basil (if unavailable use 1/2 Italian basil, 1/2 mint)
1/4 teaspoon salt
Steamed white rice, accompaniment

Steps:

  • In a wok or large saute pan, heat the oil over medium-high heat. Add the eggplant, onions and bell pepper and cook until softened, 3 to 5 minutes. Add the garlic and cook, stirring, until fragrant, about 30 seconds. Add the curry paste, lime leaves, and fish sauce, and cook, stirring, for 15 seconds. Add the coconut milk and shrimp stock and bring to a boil. Lower the heat and simmer until thickened, 3 minutes. Add the shrimp and cook until pink, about 2 minutes. Stir in 1/4 cup of Thai basil and remove from heat.
  • Season to taste with salt. Garnish with remaining 1/4 cup Thai basil. Serve with rice and lime wedges.

8 tablespoons unsalted butter, cubed and divided
4 cloves garlic, minced
1 medium shallot, minced
1 1/2 teaspoons chili powder
1/2 teaspoon smoked paprika
1 pound medium shrimp, peeled and deveined
Kosher salt and freshly ground black pepper, to taste
1/3 cup vegetable or chicken stock
2 tablespoons honey
1 tablespoon freshly squeezed lime juice
2 teaspoons lime zest
2 tablespoons chopped fresh cilantro leaves

Steps:

  • Melt 6 tablespoons butter in a large skillet over medium heat. Add garlic and shallot, and cook, stirring frequently, until fragrant, about 1 minute. Stir in chili powder and paprika. Add shrimp; season with salt and pepper, to taste. Cook, stirring occasionally, until pink and cooked through, about 3-4 minutes. Stir in vegetable or chicken stock, honey, lime juice and lime zest, scraping any browned bits from the bottom of the skillet. Remove from heat; stir in cilantro and remaining 2 tablespoons butter until melted. Serve immediately.

1/4 cup peanut oil

Steps:

  • Place shallots, ginger, garlic, soy, lime juice, and sugar in a blender and blend until smooth. Add the green onion and oil and blend until combined. Season with black pepper, to taste. Place shrimp in a large bowl, pour the marinade over, and let marinate at room temperature for 20 minutes.
  • Preheat a grill to high. Remove shrimp from the marinade and grill for 1 1/2 to 2 minutes per side. Serve on brown paper bags, if desired.

1 to 2 tablespoons peeled and grated fresh ginger
3 cloves garlic, smashed and pasted with salt
1/2 large shallot, thinly sliced into half moons
8 ounces head-on, peeled and deveined shrimp, left whole
Kosher salt and freshly ground black pepper
10 shiitake mushrooms, stems removed and thinly sliced
1/2 to 1 cup thinly sliced Napa cabbage
10 to 15 snow peas, cleaned and thinly sliced
1/4 cup chicken stock
2 to 3 tablespoons rice vinegar
2 to 3 tablespoons soy sauce
2 to 3 teaspoons sambal
Pinch sugar
8 ounces lo mein noodles, par-cooked
1/4 cup thinly sliced scallion greens
1 to 2 tablespoons chopped fresh cilantro, plus sprigs for garnish
Juice of 1 lime

Steps:

  • Add 2 to 3 tablespoons canola oil to a large saute pan. Add the ginger, garlic and shallots, and turn the heat to medium to flavor the oil by bringing the oil up to temperature. Cook on medium heat for 3 to 5 minutes until fragrant and soft. Strain the oil and set aside. Reserve all.
  • Add to the same pan some of the now-flavored oil and place over high heat. Sprinkle your shrimp with salt and pepper. Once heated, add the shrimp and saute until pink and opaque, 1 to 2 minutes per side. Pull the shrimp out and set aside.
  • Add the mushrooms to the pan and saute until softened, 2 to 3 minutes. Add in the Napa cabbage and toss to combine. Add the snow peas, chicken stock, rice vinegar, soy sauce and sambal. Toss to combine. Add a pinch of sugar to help balance the flavor. Add the lo mein noodles along with the reserved ginger, shallots, garlic mixture, and toss to combine. Allow to heat through, 1 to 2 minutes.
  • Adjust seasoning as needed. Add the scallion greens, cilantro and cooked shrimp and toss to combine and warm through. Finish with a squeeze of lime and garnish with cilantro sprigs.

CORIANDER LIME SHRIMP

1 tablespoon soy sauce
1/2 teaspoon dried hot red pepper flakes
1 pound large (21 to 24 per pound) shrimp, shelled, leaving tail and first shell section intact, and if desired deveined
Garnish:
Garnish: fresh coriander sprigs

Steps:

  • In a measuring cup whisk together lime juice, marmalade, garlic paste, coriander, 3 tablespoons oil, soy sauce, red pepper flakes, and salt and pepper to taste and reserve 1/3 cup mixture in a small bowl or ramekin for dipping. In a large sealable plastic bag combine shrimp with remaining mixture and marinate, chilled, tossing occasionally to coat shrimp, 45 minutes.
  • Drain shrimp and lightly pat dry between paper towels. In a large non-stick skillet pat 1 1/2 teaspoons oil over moderately high heat until hot but not smoking and sauté half of shrimp until golden brown and cooked through, about 1 1/2 minutes on each side. Sauté remaining shrimp in remaining 1 1/2 teaspoons oil in same manner.
  • Garnish shrimp with coriander sprigs and serve with reserved dipping sauce.

  • Mix together the Cajun seasoning, lime juice, and vegetable oil in a resealable plastic bag. Add the shrimp, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 20 minutes.
  • Preheat an outdoor grill for medium heat, and lightly oil the grate. Remove the shrimp from the marinade, and shake off excess. Discard the remaining marinade.

1 1/2 pounds shrimp, peeled and deveined (16 to 20 shrimp)
1 teaspoon ground cumin
Kosher salt

Steps:
