CREAMY GUACAMOLE SALSA (LIKE MAMA NINFA'S)

Creamy Guacamole Salsa (like Mama Ninfa's) image

A creamy guacamole salsa that's a mashup of guacamole and salsa verde. This is the famous Mama Ninfa's green sauce recipe tweaked to give it more of a flavor punch!

Provided by Marzia

Categories     Appetizers

Time 3h25m

Number Of Ingredients 8

½ lb. green tomatoes, roughly chopped
½ lb. tomatillos, husk removed and roughly chopped
3-4 cloves garlic
1-2 jalapenos (seeds removed for a milder flavor)
2 medium avocados
¼ cup cilantro leaves and stems
½ cup sour cream (or greek yogurt)
2-4 tablespoons lime juice (to taste)

Steps:

  • cook: add the ingredients to a medium saucepan over medium-high heat along with a big pinch of salt and stir to combine. When you hear it start to sizzle, lower the heat to medium-low and let it cook for 12-15 minutes or until everything softens. If around the 10-minute mark you see a lot of liquid leftover in the pan, kick the heat up to medium-high to help evaporate all the liquid, stirring as needed to prevent sticking. Allow the mixture to cool for 20 minutes before proceeding.
  • blend: add the avocados, cooled tomatillo mixture, and cilantro to a food processor and pulse until smooth. Add the sour cream and continue to mix until it reaches a mostly smooth consistency. Drizzle in a couple tablespoons of lime juice and pulse to combine. Taste and adjust with additional lime juice and salt as desired. Pour the guacamole salsa into a bowl, cover and refrigerate for at least 3 hours before serving.

COPYCAT GUACAMOLE GREENS

Copycat Guacamole Greens image

This salad is inspired by a popular menu item at a healthy restaurant chain. We love it -- but we also love saving money. So set aside some time during your week to make this vinaigrette, which makes enough for about five salads. And if you're super ambitious, go ahead and prep enough ingredients for a week's worth of lunches.

Provided by Food Network Kitchen

Categories     main-dish

Time 35m

Yield 1 serving, plus extra vinaigrette

Number Of Ingredients 16

1/3 cup roughly chopped fresh cilantro (lightly packed)
2 tablespoons lime juice (from about 2 limes)
2 teaspoons white wine vinegar
1/4 teaspoon ground cumin
Pinch sugar
1/2 small jalapeno, seeded and finely chopped
Kosher salt and freshly ground black pepper
1/4 cup grapeseed oil
1/4 small red onion, finely chopped
4 cups mixed greens
1/3 cup shredded skinless cooked chicken breast (rotisserie or leftover)
1/4 cup grape tomatoes, halved
Kosher salt and freshly ground black pepper
1/2 small avocado
1/2 lime
6 corn tortilla chips, crushed

Steps:

  • For the cilantro-jalapeno vinaigrette: Whisk together the cilantro, lime juice, vinegar, cumin, sugar, jalapeno, 1/2 teaspoon salt and a few grinds pepper in a small bowl. Slowly drizzle in the oil, whisking, until the vinaigrette comes together and is well blended. (The vinaigrette makes enough for about 5 salads; refrigerate in an airtight container for up to 5 days.)
  • For the salad: Soak the onion in a bowl of cold water for 10 minutes, then drain.
  • Add the drained onion to a large bowl with the mixed greens, chicken, tomatoes and 2 tablespoons of the vinaigrette. Toss together and season with salt and pepper. Cut the avocado into small pieces. Top the salad with the avocado and a squeeze of lime and sprinkle with the tortilla chips.

CREAMY GUACAMOLE

Creamy Guacamole image

This is a recipe handed to me by my Aunt Shawna. It's smooth, rich, creamy, definately not your average guacamole. Even my picky three-year-old daughter loves this. I usually eyeball ingredients when I make this, so the measurements are guesses. You can adjust to suit your taste! This guacamole is great served with tortilla chips, but I love to spread it on my sandwiches, too!

Provided by The Pantry Elf

Categories     Avocado

Time 5m

Yield 6-8 serving(s)

Number Of Ingredients 8

3 ripe avocados (I use Hass)
1 tablespoon sour cream
1 tablespoon mayonnaise
1/4 teaspoon adobo seasoning (I use Goya all purpose seasoning)
1/4 teaspoon cumin powder
1/4 teaspoon garlic powder
1/8 teaspoon chili powder
salt and pepper

Steps:

  • Peel the avocados and remove the pits, reserving one for garnish, if desired, and place the flesh in a bowl.
  • With a fork, gently mash the avocados, leaving some small chunks.
  • Add remaining ingredients, mix well.
  • Serve in a bowl garnished with reserved pit.

TANGY GREEN GUACAMOLE

Tangy Green Guacamole image

Provided by Food Network

Categories     appetizer

Time 10m

Yield Yield: 4 to 6 servings

Number Of Ingredients 4

3 large ripe avocados, preferably the pebbly-skin Hass variety
1 cup Roasted Tomatillo Salsa
1/2 cup chopped fresh cilantro, plus a few leaves, for garnish
1/2 teaspoon salt

Steps:

  • Remove the little nub of stem that is still usually lodged at the top of each avocado. Cut each avocado in half by slicing straight down through that spot where the stem was attached, until you reach the pit, then rotating the knife all the way around the pit. Twist the 2 halves apart, then scoop out the pits. With a spoon, scoop out the soft flesh from the skins, collecting it in a large bowl as you go. Coarsely mash with the spoon (or you can use an old-fashioned potato masher or large fork).
  • Gently stir the salsa into the avocado mixture, along with the cilantro. Taste and season with salt. Cover with plastic wrap directly on the surface and refrigerate until you're ready to serve. (Not only will the guacamole improve if made 1/2 hour or so before serving, but also it will maintain its fresh look longer if served cold.) Scoop into a decorative bowl, garnish with cilantro sprigs and you're ready to set it out for your guests to enjoy.
