2 large onions, chopped
1 medium green pepper, chopped
1 tablespoon canola oil
3 garlic cloves, minced
1/2 cup water
2 medium carrots, cut into chunks
2 medium potatoes, peeled and cubed
1 can (14-1/2 ounces) chicken broth
1 to 2 tablespoons chili powder
2 tablespoons sugar
1 teaspoon ground cumin
3/4 teaspoon dried oregano
1 small zucchini, sliced 1/4 inch thick
1 small yellow squash, sliced 1/4 inch thick
2 cans (28 ounces each) crushed tomatoes
1/3 cup ketchup
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
1 can (15 ounces) black beans, rinsed and drained
1 can (15-1/2 ounces) black-eyed peas, rinsed and drained

Steps:

  • In a Dutch oven, saute onions and green pepper in oil until tender. Add garlic; cook 1 minute longer. Stir in water and carrots; cover and cook over medium-low heat for 5 minutes. , Add the potatoes, broth, chili powder, sugar, cumin and oregano; cover and cook for 10 minutes. , Add the zucchini, squash, tomatoes and ketchup; bring to a boil. Reduce heat; cover and simmer for 15 minutes. Stir in beans and peas; simmer for 10 minutes.

I found this recipe in the local paper a few years ago and have been making it ever since. I prefer this vegetarian version over the traditional recipe which normally includes pork. It is wonderful over burritos, eggs or even plain with tortillas.

1/4 cup butter or 1/4 cup margarine
1 teaspoon minced garlic
1 tablespoon onion flakes
1/3 cup flour
1 (28 ounce) can diced tomatoes
1/2 cup green chili pepper
1/2 teaspoon salt
1/2 teaspoon cilantro
water

Steps:

  • In a large sauce pan, melt butter or margarine.
  • Add garlic and onion and cook until onion is re-hydtrated.
  • Add flour and stir to make a roux.
  • Add tomatoes, green chili, salt and cilantro.
  • Add water (enough to make a nice gravy).
  • Simmer for 30 minutes.
  • This can also be made in a crock pot.

Adapted from Jane Brody's Good Food Book - I added some smoked paprika and chipotle chili powder and removed the cloves and allspice. Sometimes I add cocoa powder. The seasoning mix is the key to this chili's flavor, it's deep and rich without being super spicy. If you want it more spicy, use more chipotle chili powder and less regular chili powder, you can also add a jalapeno pepper when you saute the vegetables.

1 cup chopped onion
2 teaspoons minced garlic
2 teaspoons vegetable oil
1 lb lean ground beef
1 (28 ounce) can tomatoes
8 ounces tomato sauce (optional) or 8 ounces juice (optional)
2 1/2 cups cooked beans, drained and rinse
1 cup diced green pepper
1 cup sliced carrot
1 cup corn kernel
5 teaspoons brown sugar
4 teaspoons mild chili powder
1 teaspoon dried chipotle powder
1 tablespoon ground cumin
1 tablespoon oregano
1 teaspoon salt
1/2 teaspoon coriander
1/2 teaspoon smoked paprika (optional)

Steps:

  • Saute onion and garlic in oil in a large Dutch oven until softened.
  • Add the meat, brown and crumble, drain excess fat.
  • Add the tomatoes with their juice.
  • Add all of the seasonings. Heat until bubbly, reduce heat, cover and simmer for 30 minutes.
  • Add the beans and vegetables, cover and simmer about 20 minutes longer (until carrots are softened).
  • Add the tomato sauce or juice if the chili is too dry.

1/2 cup grated Parmesan cheese
2 teaspoons baking powder
6 tablespoons cold butter, cubed
3/4 cup plus 2 tablespoons heavy whipping cream
3 ounces cream cheese, softened
1/2 cup sour cream
1 can (10-1/2 ounces) condensed cream of chicken soup, undiluted
1 can (10 ounces) green enchilada sauce
2 cans (4 ounces each) chopped green chiles
2-1/2 cups shredded rotisserie chicken (about 10 ounces)
1-1/2 cups shredded Colby-Monterey Jack cheese

Steps:

  • Preheat oven to 450°. For crumb topping, whisk together flour, cheese and baking powder. Cut in butter until mixture resembles coarse crumbs. Add cream; stir just until moistened. On a lightly greased 15x10x1-inch pan, crumble mixture into 1/2- to 1-in. pieces., Bake on an upper oven rack until light golden brown, 8-10 minutes. Reduce oven setting to 350°., In a large bowl, mix cream cheese and sour cream until smooth. Stir in soup, enchilada sauce, green chiles and chicken. Transfer to an 11x7-inch baking dish; sprinkle with cheese. Add crumb topping (dish will be full)., Place dish on a baking sheet. Bake, uncovered, on a lower oven rack until topping is deep golden brown and filling is bubbly, 35-40 minutes.

This recipe is adapted from Jane Brody's "Good Food Book". I have been making my version for years. I've tried others, but my family always asks me to go back to this one. It has TONS of flavor! This makes a large recipe, it can be cooked in a large crock pot after you brown the meat, onions and garlic.

2 cups onions, finely chopped
4 teaspoons garlic, minced
4 teaspoons vegetable oil
2 lbs extra lean ground beef
2 (28 ounce) cans chopped tomatoes
1 (5 1/2 ounce) can tomato juice (optional)
3 (15 1/2 ounce) cans kidney beans, drained and rinsed
2 cups green peppers, diced
2 cups carrots, sliced
2 cups celery, diced
2 cups frozen corn, thawed
3 tablespoons brown sugar
1 tablespoon cocoa powder (unsweetened)
3 tablespoons mild chili powder
2 tablespoons ground cumin
2 tablespoons oregano
1 teaspoon coriander
1 teaspoon salt

Steps:

  • In a large, deep, Dutch oven, saute the onion and garlic in the oil until softened.
  • Add the meat, and brown, stirring to break up pieces. Drain any excess fat.
  • Add the tomatoes and their liquid and all of the seasonings. Heat until bubbly, reduce the heat, cover and simmer about 30 minutes.
  • Add the beans and vegetables, simmer covered about 20 minutes longer.
  • *if it's not soupy enough, add 1 or more small cans of tomato juice.
  • *Can put it in a large crock pot after the meat is browned. Cook as long as you need it to, I've cooked it on low for 8 hours, the carrots were a little soft, but fine. You could probably cook it on High for 2 hours or so and it would be fine as well.
  • *I have used venison in this recipe with good results.

Number Of Ingredients 16

1 turnip, peeled and cut into bite-size wedges
1 potato, peeled and diced (russet or baking)
1 celery root, peeled and diced (about 1 1/2 cups)
1 onion, coarsely chopped
3 carrots, peeled and sliced
1/2 cup chopped parsley
1 cup vegetable broth (or chicken broth if you are so inclined)
1 tablespoon cornstarch
1 teaspoon salt
fresh ground pepper
4 tablespoons butter
1 3/4 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
6 tablespoons butter, chilled and cut into pieces
3/4 cup heavy cream

Steps:

  • Preheat the oven to 325 degrees.
  • Put the turnip, potato, celery root, onion, carrots, and parsley in a 2 inch deep, 3 quart ovenproof baking dish (I use an approximately 13x9x2-inch Pyrex baking dish). You should have about 6 cups of vegetables.
  • In a small mixing bowl, blend the chicken broth with the cornstarch. Pour over the vegetables and mix well. Add the salt and pepper and mix to blend. Dot the top of the vegetables with the butter.
  • Mix the flour, baking powder, and salt in a large mixing bowl and stir with a fork to blend. Put the pieces of chilled butter into the flour mixture and rub quickly with your fingertips until the mixture resembles coarse crumbs. Using a fork, slowly stir in the cream, until roughly mixed. Gather the dough into a shaggy mass and knead 5 or 6 times. Roll out the dough on a lightly floured board until it is the size of the top of the baking dish. The dough should be about 1/4 inch thick.
  • Place the dough on top of the vegetables. Bake for 55 to 65 minutes, until the vegetables are cooked through and the crust is browned. Test vegetables for doneness with a knife tip or skewer. Remove from the oven and serve hot.
