VEGETARIAN GREEN CHILI
I found this recipe in the local paper a few years ago and have been making it ever since. I prefer this vegetarian version over the traditional recipe which normally includes pork. It is wonderful over burritos, eggs or even plain with tortillas.

VEGETABLE CHILI CON CARNE
Adapted from Jane Brody's Good Food Book - I added some smoked paprika and chipotle chili powder and removed the cloves and allspice. Sometimes I add cocoa powder. The seasoning mix is the key to this chili's flavor, it's deep and rich without being super spicy. If you want it more spicy, use more chipotle chili powder and less regular chili powder, you can also add a jalapeno pepper when you saute the vegetables.

CHILI CON CARNE WITH VEGETABLES
This recipe is adapted from Jane Brody's "Good Food Book". I have been making my version for years. I've tried others, but my family always asks me to go back to this one. It has TONS of flavor! This makes a large recipe, it can be cooked in a large crock pot after you brown the meat, onions and garlic.

Steps:
- In a large, deep, Dutch oven, saute the onion and garlic in the oil until softened.
- Add the meat, and brown, stirring to break up pieces. Drain any excess fat.
- Add the tomatoes and their liquid and all of the seasonings. Heat until bubbly, reduce the heat, cover and simmer about 30 minutes.
- Add the beans and vegetables, simmer covered about 20 minutes longer.
- *if it's not soupy enough, add 1 or more small cans of tomato juice.
- *Can put it in a large crock pot after the meat is browned. Cook as long as you need it to, I've cooked it on low for 8 hours, the carrots were a little soft, but fine. You could probably cook it on High for 2 hours or so and it would be fine as well.
- *I have used venison in this recipe with good results.

Steps:
- Preheat the oven to 325 degrees.
- Put the turnip, potato, celery root, onion, carrots, and parsley in a 2 inch deep, 3 quart ovenproof baking dish (I use an approximately 13x9x2-inch Pyrex baking dish). You should have about 6 cups of vegetables.
- In a small mixing bowl, blend the chicken broth with the cornstarch. Pour over the vegetables and mix well. Add the salt and pepper and mix to blend. Dot the top of the vegetables with the butter.
- Mix the flour, baking powder, and salt in a large mixing bowl and stir with a fork to blend. Put the pieces of chilled butter into the flour mixture and rub quickly with your fingertips until the mixture resembles coarse crumbs. Using a fork, slowly stir in the cream, until roughly mixed. Gather the dough into a shaggy mass and knead 5 or 6 times. Roll out the dough on a lightly floured board until it is the size of the top of the baking dish. The dough should be about 1/4 inch thick.
- Place the dough on top of the vegetables. Bake for 55 to 65 minutes, until the vegetables are cooked through and the crust is browned. Test vegetables for doneness with a knife tip or skewer. Remove from the oven and serve hot.
