PAPA DAR'S GREEN CHILE AND CHICKEN CORN CHOWDER



Papa Dar's Green Chile and Chicken Corn Chowder image

This is a totally original chowder that I came up with on my own using things that I love to cook with. Family and friends beg for this when the weather turns cold. The russet potatoes allows the liquid to thicken and no flour or corn starch is needed. New Mexico green chile is recommended. Note: if using fresh green chile, add 1/2 cup of chicken stock for added liquid. Serve with your favorite corn bread.

½ pound smoked bacon, chopped
1 onion, chopped
4 cloves garlic, chopped
6 (4 ounce) cans chopped mild green chile peppers
2 ½ pounds skinless, boneless chicken breast halves, cubed
1 ½ pounds russet potatoes, cubed
¼ cup butter
2 (16 ounce) cans cream-style corn
1 pint heavy whipping cream
salt and ground black pepper to taste

Steps:

  • Place bacon in a large stockpot; cook and stir over medium-high heat until lightly browned, about 10 minutes. Add onion and saute until onion is tender, about 10 minutes. Add garlic and cook until fragrant, about 2 minutes.
  • Stir green chiles into bacon-onion mixture and bring to a simmer; add chicken. Simmer mixture until chicken is almost fully cooked, about 10 minutes. Add potatoes and butter to green chilies-chicken mixture and reduce heat to medium; cook until potatoes are almost tender, 10 to 15 minutes.
  • Stir corn and cream into mixture and reduce heat to medium-low; cook, stirring frequently and scraping bottom of pot with a wooden spoon, until potatoes are tender, about 10 more minutes. Season with salt and pepper.

4 tablespoons (1/2 stick) butter
3 slices bacon, chopped
1 onion, sliced
1 tablespoon chopped fresh oregano
Two 7-ounce cans chopped green chiles
5 ears corn, kernels sliced off (2 1/2 to 3 cups)
2 cloves garlic, minced
3 1/3 cups chicken stock or broth
2 tablespoons cornstarch
1 1/2 cups heavy cream
1 heaping cup grated Monterey Jack
1 heaping cup grated pepper jack
Kosher salt and freshly ground black pepper
1/3 cup sliced green onions

Steps:

  • Set a 6-quart multi-cooker to the saute setting and add the butter. Add the bacon, onions and oregano and cook, stirring frequently, until the onions start to become translucent, 3 to 4 minutes. Add the green chiles, corn and garlic and cook for an additional minute. Add 3 cups of the chicken stock.
  • In a separate bowl, whisk the cornstarch into the remaining 1/3 cup chicken stock. Add to the multi-cooker and stir well. Cover and position the vent to the sealing setting. Set the multi-cooker to pressure-cook on high for 5 minutes. When the time is up, carefully quick release the steam (it takes about 3 minutes), then remove the lid.
  • Mix in the heavy cream. Stir in the cheeses until they have melted completely. Check the seasoning; add salt and pepper as needed. Ladle into bowls and serve immediately garnished with the green onions.

Steps:

  • Directly in your slow cooker insert, whisk together milk and cornstarch.
  • Add corn, potatoes, onions, cream-style corn, salsa, black beans, green chiles, chili powder, garlic powder, salt, cumin, black pepper, and oregano. Stir to combine thoroughly.
  • Add chicken breasts to mixture, pushing them to the bottom of the slow cooker.
  • Cook on low (6-8 hours), or on high (5 hours).
  • Just before serving, use two forks to shred the chicken. Or, remove the chicken from the slow cooker onto a plate or cutting board and cut it into small cubes, and then return the chicken to chowder in the slow cooker.
  • Serve chowder sprinkled with cilantro and cheese, if desired.

I bought a ton of Hatch green chiles in August and thought a soup/chowder would be a good way to use them in the winter. They were spicier than I expected so I had to use rice and corn in the soup to cut the spice level. My parents loved it so I passed it on to them, then the girls at work loved it so I passed the recipe on to them also. Hopefully, y'all will love it too. It's a nice comfort food. Serve topped with cheese.

3 Hatch chile peppers, halved and seeded
4 cups water, or more as needed
1 (15 ounce) can cream-style corn
3 skinless, boneless chicken breasts
½ teaspoon ground cumin, or more to taste

3 cloves garlic, crushed

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil; place chile peppers cut-side down on top.
  • Cook chile peppers under the preheated broiler until the skins are blackened and blistered, 5 to 8 minutes. Place in a bowl and tightly seal with plastic wrap. Allow peppers to steam as they cool, about 20 minutes. Remove and discard skins.
  • Transfer chile peppers to a large stockpot. Add 4 cups water, corn, chicken breasts, carrots, chicken stock concentrate, garlic, cumin, and poultry seasoning. Bring to a boil; reduce heat and simmer chowder until chicken is falling apart, about 1 hour.

1 tablespoon extra-virgin olive oil
1 small onion, chopped
2 cloves garlic, minced
1 large jalapeno pepper (1/2 chopped and 1/2 sliced; remove seeds for less heat)
1 4-ounce can chopped green chiles, drained
1 teaspoon ground cumin
2 cups low-sodium chicken broth
2 cups shredded rotisserie chicken
2 15-ounce cans large white beans or pinto beans (1 undrained; 1 drained and rinsed)
1 cup frozen corn, thawed
1/2 cup chopped fresh cilantro
1 cup shredded monterey jack or white cheddar cheese
Sour cream and cornbread, for serving (optional)

Steps:

  • Heat the olive oil in a large pot over medium heat. Add the onion and cook, stirring, until slightly soft, about 3 minutes. Add the garlic, chopped jalapeno, green chiles and cumin and cook, stirring, until the cumin is toasted, about 2 minutes. Stir in the chicken broth, chicken and beans along with the liquid from one of the cans of beans. Bring to a boil, then reduce the heat to medium low and simmer, stirring occasionally, until thickened, about 15 minutes.
  • Using a potato masher, mash the chili until about half of the beans are broken up. Stir in the corn, cilantro and 1/2 cup cheese. Divide the chili among bowls and top with the remaining 1/2 cup cheese and the sliced jalapeno. Serve with sour cream and cornbread, if desired.

Steps:

  • Cook bacon in a large saucepan over medium heat until crispy. Remove the bacon from the pan and let drain on a piece of paper towel. Set aside.
  • To the bacon drippings, add chicken, onion, red bell pepper, and garlic. Cook, stirring occasionally, for 5 minutes. Add diced green chiles and cook for an additional minute. Add chicken broth and potatoes. Bring to a boil, reduce heat, cover, and simmer for 20 minutes, or until the potatoes are tender. Add frozen whole-kernel corn and creamed corn, and stir well.
  • Pour flour into a medium bowl. Gradually whisk in skim milk. Add the milk mixture to the soup and cook over medium heat, stirring frequently, until the mixture thickens, about 15 minutes. 3 cups whole milk
1 pound baking potatoes, peeled and diced
1 teaspoon salt
1/2 cup whipping cream
1 cup roasted, peeled and chopped mild green New Mexican, Anaheim, or Poblano chiles Fresh ground black pepper
2 tablespoons fresh chives, minced

Steps:

  • Fry the bacon in a large saucepan over medium heat until brown and crisp. Remove the bacon with a slotted spoon and reserve. Stir the onion into the bacon drippings and cook until the onion is soft and translucent, about 5 minutes. Puree 1 cup of corn with 1 cup of milk in a blender. Pour the mixture into the pan and add the remaining milk and corn along with the potatoes and 1 teaspoon of salt. Reduce the heat to medium-low and cook 10 to 15 minutes, or until the potatoes are fork-tender. Stir in the cream and the green chile. Add salt and pepper, to taste.   • In a large pot sauté onion in butter & oil over medium to med-high heat until becoming translucent - about 3 minutes.
  • Add chopped red bell pepper, garlic, oregano, salt & pepperStir until aromatics bloom. About 2 minutes.
  • Add flour and whisk until all veggies are coated and a film starts to form on the bottom of the pan.Add chicken broth. Whisk vigorously, adjusting the heat, until mixture comes to a simmer and starts to thicken. Scrape the bottom of the pot to release all the fond (the browned bits from the veggies & flour).
  • Add chicken, chiles, and corn.Stir and allow to come back to a simmer.

This is to die for. It's just a regular corn chowder made with fresh corn shaved off the cob, which is yummy enough as it is.

2 slices Bacon, Cut Into 1/2-inch Pieces (or Smaller)
2 tbsp. Butter
1 1/2 whole Yellow Onion, Diced
5 ears Corn, Shucked (about 4 Cups)
2 whole Chipotle Peppers In Adobo Sauce, Finely Diced
1 whole (4 Oz. Size) Diced Green Chilies
32 oz. fluid Low Sodium Chicken Broth
1 1/2 c. Heavy Whipping Cream
1/2 tsp. Kosher Salt (more To Taste)
3 tbsp. Corn Meal OR Masa
1/4 c. Water

Steps:

  • (Carefully) slice the corn kernels off the cob. Set aside.Add bacon pieces to a pot or dutch oven over medium heat. Cook for a couple of minutes. Throw in diced onion and stir, cooking the onion for 3 to 4 minutes. Add butter and melt. Add corn. Stir and cook for one minute. Add both kinds of chilies and stir. Pour in chicken broth and cream. Add salt. Stir and bring to a boil. Reduce heat to low. Combine cornmeal (or masa) with water. Stir to combine, then pour into the chowder. Cover and cook for 15 minutes over low heat. If chowder needs more thickening, add another tablespoon of cornmeal mixed with water. Cook for another ten minutes.Serve with crusty sourdough bread or in a bread bowl. Absolutely yummy!

ROASTED GREEN CHILE AND CORN CHOWDER

I absolutely love the green chile corn chowder soup they have at Sweet Tomatoes, so I found this recipe to suffice my cravings. I like roasting the corn and chiles before adding them to the soup. I do this by throwing them into the oven at 450 degrees for 20 - 30 minutes, or until the skins of the peppers start charring and wilting, and the corn browns. I enjoy poblano and anaheim peppers in this recipe. This is a filling soup, but pairs nicely with grilled salmon.

This is my best friend's and my attempt to replicate the Green Chicken Chile Soup served at Los Arcos Steakhouse in Truth or Consequence, New Mexico. We love it and have it every time we are at the lake. I called several years ago and they will not give out the recipe. My best friend and I decided we needed to try to replicate it and used our husbands as guinea pigs -- we are close! This is fabulous any time but especially good on a COLD New Mexico night!

3 -4 chicken breasts, boneless, skinless, cooked & cubed
1/2 cup green chile, peeled & chopped

1 cube chicken bouillon
4 cups milk
2 medium potatoes, partially cooked & diced

1 garlic clove, minced (I'll use more!)
2 -3 cups fat free chicken broth
2 cups frozen corn, thawed
2 cups cooked chicken breasts, diced
1 (4 ounce) can green chilies
1/2 teaspoon black pepper
1 tablespoon cornstarch
1 1/2 cups fat-free half-and-half

Steps:

  • Spray a large saucepan with cooking spray, then add onions through garlic and saute over mediun-high heat. Add a little chicken broth to prevent burning and cook 8-10 minutes.
  • Add corn, chicken, chiles, pepper, and remaining broth. Bring to a boil 2-3 minutes.
  • Dissolve cornstarch in the half and half, then stir into soup.
  • Bring to a boil, then serve.

2 cans (4.5 oz. each) chopped green chiles, undrained
2 tsp. minced garlic
1 tsp. ground cumin
1 tub (5 oz.) KRAFT Shredded Parmesan Cheese, divided
3 cups fat-free reduced-sodium chicken broth
1 lb. boneless skinless chicken thighs
1/2 cup heavy whipping cream
1/2 cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream

Steps:

  • Combine corn, chiles, garlic, cumin and 1 cup cheese in slow cooker sprayed with cooking spray; stir in chicken broth. Add chicken. Cover with lid.
  • Cook on LOW 6 to 7 hrs. (or HIGH 3 to 4 hrs.).
  • Transfer chicken thighs to shallow dish; pull into shreds with 2 forks. Set aside. Ladle about 2 cups chowder into blender; blend until smooth. Return to slow cooker along with the chicken and whipping cream; stir.
  • Serve topped with sour cream and remaining cheese.

3 cups chicken broth
1 tablespoon canola oil
1 tablespoon butter
3-4 medium red potatoes, cut into 1-inch pieces
1 onion, finely chopped
3 stalks celery with leafy tops, finely chopped
1/3 cup roasted and chopped green chiles, or 1 can chopped green chiles
2-3 cloves garlic, chopped
1 teaspoon cumin
1 large bay leaf
3 oz. cream cheese, cut into 1-inch pieces, softened

Steps:

  • Heat skillet over medium heat. Spray with cooking spray and then cook the corn for a few minutes until fragrant. Place half of the corn and 1 cup of broth in the blender and blend until smooth. In soup pot, heat the oil over medium-high, then add the butter. When the butter foams, add the potatoes, onion, celery, garlic, cumin and bay leaf. Reduce heat to medium, partially cover and cook until the vegetables soften, about 10 minutes. Add the kernels, corn puree, remaining 2 cups broth and green chiles to the pot. Bring to a boil, then reduce heat to medium and simmer about 15 minutes, or until the potatoes are tender. Stir in the cream cheese until melted. Season with salt and pepper.

2 tablespoons butter
1 onion (diced)
4 potatoes (cut into a medium dice)
1 teaspoon kosher salt (plus more if needed)
16 oz. frozen corn ((about 5 cups, or from about 5-6 ears fresh corn))
5 cups chicken stock/broth (or vegetable broth)
1/3 cup masa ((corn flour))
10 oz. green chiles (jarred or canned, preferably fire roasted, mild or spicy depending on taste)
1 cup heavy cream
crumbled queso fresco and chopped fresh cilantro (for serving (optional))

Steps:

  • In a heavy large pot, melt butter (2 tablespoons) over medium heat.
  • Add onions, sauté until softened (about 3 minutes).
  • Add potatoes, kosher salt (1 teaspoon), frozen corn, and chicken broth (5 cups). Bring to a boil, cover, and simmer on low for a bout 20 minutes (or until potatoes are tender).
  • Ladle out about 1.5 cups of hot broth from the pot into a small bowl or pyrex measuring cup and whisk the masa (1/3 cup) into it, forming a thick paste. It's OK if there are little pieces of corn or onion in it.
  • Add masa paste back to the soup and stir to incorporate.
  • Add the green chiles and heavy cream (1 cup) to the soup and stir.
  • Serve with crumbled queso fresco and chopped fresh cilantro, if desired.

1 large onion, finely diced
3 garlic cloves, minced
1 Tbsp chipotle powder
salt and pepper, to taste
¼ cup butter
1 cup roasted, peeled green chilies, chopped
2 lb boneless chicken breast, cubed
4 cups fresh corn, sliced from the cob - or frozen
1 lb potatoes, peeled and chopped
5 cups chicken broth
¼ cup flour
2 cups whole milk

Steps:

  • In a large, heavy-bottomed soup pot, cook the bacon over medium high heat until lightly browned. Add the onion and cook until tender - about 10 minutes. Stir in the garlic, chipotle powder, salt, and pepper and cook for a few more minutes. Add the butter, green chiles, and chicken and cook until the chicken is mostly cooked - about 10 minutes. Add the corn, potatoes, and chicken broth and bring to a boil. Reduce heat and simmer and cook until the potatoes are cooked through and tender - about 20 minutes. Put the flour into a small mixing bowl and whisk in the milk. Add this to the soup and allow it to simmer and thicken - about 15 minutes.
