1/2 cup chopped peeled mango
1/2 cup chopped tomato
2 tablespoons minced fresh cilantro
1 tablespoon chopped jalapeno pepper
1 tablespoon chopped red onion
1-1/2 teaspoons chopped celery
1-1/2 teaspoons lime juice
1/4 teaspoon grated lime zest
2 boneless skinless chicken breast halves (6 ounces each)
1/4 teaspoon salt
1/8 teaspoon pepper
1 tablespoon canola oil

Steps:

  • For salsa, in a small bowl, combine the mango, tomato, cilantro, jalapeno, onion, celery, lime juice and zest. Cover and refrigerate for 2-3 hours. , Sprinkle chicken with salt and pepper. In a large skillet, cook chicken in oil over medium-high heat for 5-6 minutes on each side or until juices run clear. Serve with salsa.

6 boneless, skinless chicken thighs
1 cup long-grain white rice
One 16-ounce jar mango salsa
Kosher salt and freshly ground black pepper
Olive oil

Steps:

  • Preheat a large cast-iron skillet over medium-high heat.
  • Sprinkle the chicken thighs with salt and pepper on both sides. Add 2 tablespoons oil to the skillet and sear the chicken thighs until browned well, 2 to 3 minutes per side. Remove the chicken to a plate.
  • Add the rice, 1 1/2 cups water and 1 cup of the mango salsa. Stir and bring to a boil. Add the chicken back to the top of the rice, reduce to a simmer, cover and cook until the chicken and rice are cooked through, 17 to 20 minutes.
  • Serve up a pile of rice, topped with the chicken and garnished with additional mango salsa.

1 fresh, ripe mango
½ red onion, finely diced
1 bunch cilantro, finely chopped
½ green bell pepper, minced
1 fresh red chile pepper, seeded and chopped
4 skinless, boneless chicken breasts
1 egg
¼ cup milk
1 cup dried bread crumbs
¼ cup olive oil
1 sprig fresh cilantro, for garnish

Steps:

  • TO MAKE SALSA: In a small bowl, combine the mango, onion, cilantro, green bell pepper and red chile pepper. Put aside until serving time.
  • Lightly pound the chicken breasts with a mallet to flatten. Beat the egg and milk together. Then coat them in the egg/milk mixture then the breadcrumbs. Chill for 1/2 hour.
  • Saute the chicken in olive oil until cooked through and juices run clear. Drain and serve with the mango salsa. Garnish with cilantro leaves.

8 boneless, skinless, chicken thighs (or 4 skinless, boneless chicken breasts)
3 garlic cloves, minced
2 tablespoons freshly grated ginger
1/4 cup tamari sauce or soy sauce
1/4 cup freshly squeezed lime juice
2 mangos, peeled, pitted, and cut into 1/4-inch cubes
3 tablespoons freshly squeezed lime juice
1 to 2 jalapeno chilies, seeds and membranes removed, minced
3 green onions, finely sliced
2/3 cup lightly packed fresh cilantro leaves, stems discarded, coarsely chopped

Steps:

  • Rinse the chicken thoroughly under cold running water. Pat dry with a paper towel. In an oven-proof baking dish combine the remaining ingredients. Add the chicken and turn several times to mix the ingredients.
  • Cover with aluminum foil and marinate for 2 to 4 hours in refrigerator.
  • Combine all the salsa ingredients in a bowl and mix thoroughly with a fork. Reserve.
  • Preheat oven to 375 degrees F.
  • Transfer covered baking dish to oven and bake for approximately 20 minutes, or until chicken is cooked throughout.
  • To serve, spoon a generous serving of salsa onto plate and top with 2 thighs.

BONELESS BREAST OF CHICKEN WITH MANGO SALSA



Boneless Breast of Chicken with Mango Salsa image

4 pieces boneless chicken
Juice from 4 whole limes
4 garlic cloves, chopped
4 Tbs. Caribbean Love spice
1 Tbs. sea salt
1/2-cup light olive oil
3 whole mangos or an equal amount of sliced mango from a jar
1 jalapeno, seeded and chopped
1 whole red onion, diced
half bunch cilantro, chopped
juice of 2 whole limes
1 Tbs. sea salt
1/4-cup sugar

Steps:

  • CHICKEN: Mix all ingredients except chicken in a bowl. Add chicken and marinate for about two hours. Cook in preheated 375 degrees F oven for 45 minutes. Top with Mango Salsa Sauce.
  • MANGO SALSA: Combine all ingredients in a bowl and stir well. Let sit for half an hour before serving on top of chicken.

4 small boneless skinless chicken breasts (1 lb.)
1/2 cup HEINZ Tomato Ketchup, divided
1/3 cup BREAKSTONE'S or KNUDSEN Sour Cream
1 tsp. smoked paprika
1 cup chopped mangos
1 cup chopped red peppers
2 green onions, chopped
1 Tbsp. finely chopped fresh cilantro
1 clove garlic, minced
2 Tbsp. fresh lime juice
2 tsp. olive oil
1 tsp. hot pepper sauce

Steps:

  • Place 1 chicken breast between 2 sheets of plastic wrap; pound to even thickness. Place in shallow dish. Repeat with remaining chicken breasts. Reserve 2 Tbsp. ketchup. Mix remaining ketchup with sour cream and paprika until blended; pour over chicken. Turn to evenly coat both sides of chicken with ketchup mixture.
  • Refrigerate 30 min. to marinate. Meanwhile, combine remaining ingredients in medium bowl; stir in reserved ketchup.
  • Heat greased grill to medium-high heat. Remove chicken from marinade; discard marinade. Grill chicken 5 to 6 min. on each side or until done.
  • Serve chicken topped with mango mixture.

1 large mango, peeled, seeded, and sliced - divided

¼ cup brown sugar
1 bunch mustard greens, washed and chopped
¼ cup raisins

Steps:

  • Place the cumin, curry powder, white and balsamic vinegar, olive oil, 1/4 cup brown sugar, salt, and black pepper into a resealable plastic bag, and smush the bag several times with your fingers to combine and mix all ingredients. Place the chicken drumsticks into the bag, and knead the bag again with your fingers to coat the chicken in seasonings.
  • Heat butter in a large skillet over medium heat, and place the seasoned chicken pieces into the hot butter. Brown the chicken well on both sides, about 10 to 12 minutes.
  • Place half the mango slices, Dijon mustard, garlic, red pepper flakes, and 1 sliced onion into a blender, and blend until smooth, about 1 minute. Pour the mango mixture into the skillet over the chicken. Stir in 2nd sliced onion, white sugar, 1/4 cup of brown sugar, mustard greens, and raisins; stir mixture to dissolve sugar. Bring the mixture to a boil, reduce heat to a simmer, and cook until the chicken is no longer pink at the bone and the juices run clear, 10 to 15 more minutes. Stir often while cooking.

1 bunch flat-leaf parsley, stalks chopped
3 garlic cloves, roughly chopped
10cm piece ginger, roughly chopped
100ml sunflower oil
1 long green chilli, roughly chopped
1 1/2 Tbsp soy sauce
2 kaffir lime leaves, finely shredded
Finely grated zest and juice of 2 limes
8 chicken pieces
MANGO SALSA
2 mangoes, chopped
1/2 Lebanese cucumber, seeds removed, finely chopped
4 spring onions, chopped
1 long red chilli, seeds removed, chopped
juice of 1 lime
2 Tbsp olive oil

Steps:

  • Whiz coriander stalks, parsley stalks, garlic, ginger, sunflower oil, chilli, soy sauce, kaffir lime leaves, lime zest and juice in a food processor to a paste. Score the chicken pieces with a knife, then coat in the marinade. Cover and chill for at least 2 hours or overnight to marinate. For the mango salsa, place all the ingredients in a bowl. Season and toss to combine. Set aside. Preheat the oven to 180C. Place the chicken pieces on a baking tray and bake, turning once, for 35-40 mins until cooked through. Serve the chicken with mango salsa and coriander leaves.

1 1/2 cups cubed mangoes
1 clove garlic, crushed
1 teaspoon chopped cilantro (coriander)
1/2 cup sugar

Tabasco sauce
2 tablespoons Worcestershire sauce
