A good side dish when your guests are vegetarians and meat lovers. (As in my house.)

Ingredients

3 cups thinly sliced potatoes
2 cups frozen green beans
½ teaspoon dried thyme
¼ teaspoon ground black pepper
1 teaspoon vegetarian Worcestershire sauce
1 cup vegetable broth, divided
1 teaspoon cornstarch
¼ cup chopped fresh parsley

Steps:

In a large skillet over medium-high heat combine potatoes, green beans, thyme, pepper, Worcestershire sauce and 3/4 cup of broth. Bring to a boil; reduce heat to medium-low, cover and simmer 15 to 20 minutes or until vegetables are tender.
In a small bowl blend remaining broth and cornstarch. Stir in parsley; add to potato mixture. Cook, stirring, until bubbly and thickened.

In large skillet, heat 1/4 cup water over medium high heat. When simmering, add the green beans and cover. Cook the green beans for 7 to 9 minutes until green and tender, stirring once or twice. Remove the beans from the skillet to a bowl.
In the same skillet, heat the olive oil over medium high heat. Add the shallot and mushrooms and cook, stirring, 4 to 5 minutes until lightly browned.
Reduce heat to medium low and add the garlic. Cook for 1 minute until fragrant. Add the heavy cream and spices and stir until combined. Add the green beans back to the skillet and cook 1 minute. Add the kosher salt and fresh ground pepper.
