My sister-in-law gave me this great, simple recipe. Green beans are sauteed in bacon fat, then tossed with toasted nuts and crumbled blue cheese. Very rich and quite fattening, but great for holidays!

1 pound fresh green beans, cut into 2 inch pieces
¼ cup bacon drippings
3 ounces crumbled blue cheese
½ cup chopped walnuts, toasted
salt and pepper to taste

Steps:

  • Place green beans in a saucepan with one inch of water in the bottom. Bring to a boil over medium-high heat, and cook for 5 minutes, or until tender-crisp. Remove from heat, drain, and set aside.
  • Heat the bacon drippings in a large skillet over medium heat. Add green beans, and toss to coat. Saute until the beans are heated through. Sprinkle with nuts and crumbled blue cheese. Season with salt and pepper to taste.

Steps:

  • Start by trimming the ends of your green beans and slice into 2 inch pieces. Bring a large pot of water to a boil and add the green beans. Cook until tender 5-8 minutes and drain and put the green beans in an ice bath.
  • In a medium sized skillet cook the bacon until crisp. Remove with a slotted spoon and drain the fat. Add the butter to the skillet and garlic and saute until tender. Add bacon, green beans, and parmesan cheese to the skillet and cook until heated through. Salt and pepper to taste.

4 pieces boneless, skinless chicken breasts
Black pepper
4 to 5 ounces blue cheese crumbles
A handful arugula leaves from bulk bins, chopped
A handful baby spinach leaves from bulk bins, chopped
4 slices bacon
2 pounds baby potatoes, halved
Salt
1 pound thin green beans
2 vine tomatoes, halved lengthwise, seeded and thinly sliced
Leaves from 4 fresh thyme sprigs
3 tablespoons extra-virgin olive oil, divided
4 scallions, finely chopped, whites and greens
1/4 cup chicken stock

Steps:

  • Preheat oven to 425 degrees F.
  • Using a small sharp knife cut into the thick end of the chicken and make an incision reaching 2/3 the way down the breast. Loosen up the incision with your fingers to make a hole. Season the chicken with pepper. Combine the cheese with arugula and baby spinach and stuff the breasts. Spiral-wrap the breasts with the bacon tightly to cover the meat evenly. Place chicken on a nonstick baking sheet and roast 20 to 22 minutes until bacon is crispy and chicken is firm.
  • Place the potatoes in a pot and cover with water. Bring to a boil, season water with salt and cook potatoes 15 minutes, or until tender.
  • Bring 1-inch water to a boil. Trim beans. Salt water and add beans to water. Simmer 5 minutes, drain and combine with tomatoes, thyme, 1 tablespoon oil, salt and pepper.
  • Place the potatoes back in the hot pot after draining. Coat the potatoes with 2 tablespoons oil, the scallions, chicken stock and salt and pepper. Toss for 1 minute.
  • Serve chicken with green beans and potatoes alongside.

1 pound haricots verts (baby french green beans) trimmed
three slices smoked bacon
4 ounces shropshire blue cheese, or your favorite blue cheese, crumbled
1 1/2 cups toasted whole pecans, coarsely chopped
freshly cracked black pepper to taste

Steps:

  • 1. bring a large pot of salted water to a boil over high heat. Add the haricots verts and cook for about two minutes. With a slotted spoon or strainer, transfer the beans to a large bowl of ice water to stop cooking. Once there cooled, drain the beans and reserve.
  • 2. In a large skillet over medium heat, cook the bacon until crisp. Transfer to a paper towel lined plate to drain. Add the beans to the bacon drippings and cook over medium heat 2 to 3 minutes. I found this among some recipes my husband's aunt sent me. I tried it once, and it became a family favorite immediately. I save it and use it in the summer when beans are freshest. Then we always have something to look forward to each summer. I often double this recipe just to have enough for my children to have leftovers! You can prepare this ahead of time, but make sure that the casserole is at room temperature before baking. I often use a mixture of both green beans and wax beans in the casserole.

3 cups trimmed green beans, snapped in half
3 slices bacon, diced
6 green onions, chopped
½ cup shredded sharp Cheddar cheese
¼ cup sour cream
¼ cup mayonnaise

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 2 1/2-quart baking dish with a lid.

1 teaspoon cider vinegar
2 teaspoons finely chopped shallot
1 tablespoon olive oil
1/2 cup pecans
3/4 pound green beans
1 1/2 ounces blue cheese such as Maytag

Steps:

  • In a large bowl whisk together mustard, vinegar, shallot, and 1/2 tablespoon oil to make dressing. In a small heavy skillet heat remaining 1/2 tablespoon oil over moderately high heat until hot but not smoking and sauté pecans with salt to taste, stirring frequently, until a shade darker, about 1 minute. Transfer nuts to paper towels to drain and cool. Coarsely chop nuts.
  • Have ready a bowl of ice and cold water. In a large saucepan of boiling salted water blanch beans until just tender, about 3 minutes, and drain in a colander. Steps:

  • Melt the butter in a pan.
  • Add the onions and slowly cook until they caramelize, about 20-30 minutes.
  • Add the butter and let it melt.
  • Add the mushrooms and saute until the mushrooms start to caramelize, about 10-15 minutes.
  • Add the garlic, thyme, salt and pepper and saute until fragrant, about a minute.
  • Add the sherry and deglaze the pan.
  • Add the green beans and saute until bright green and just starting to turn tender but still crisp, about 5 minutes.
  • Melt the butter in a small sauce pan.
  • Add the flour and stir until lightly golden brown.
  • Add the milk and simmer until it thickens.
  • Add the blue cheese and simmer until it melts.
  • Add the green beans and mushrooms and toss to coat.
  • Pour the mixture into an 8×8 inch baking dish.
  • Top with the panko bread crumbs and french fried onions.
  • Bake in a preheated 400F/200C oven until the sides are bubbling and the top is golden brown, about 5-10 minutes.
