Kosher salt
2 pounds green beans, trimmed
3 tablespoons white wine vinegar
1/2 teaspoon sugar
2 shallots, thinly sliced
3 tablespoons dijon mustard
1/3 cup extra-virgin olive oil
Freshly ground pepper

Steps:

  • Bring a large pot of salted water to boil. Add the green beans and cook until just tender, 2 to 3 minutes. Transfer to a bowl of ice water using tongs, pushing the beans down to submerge them. Let cool completely, about 5 minutes, then drain and pat dry.
  • Meanwhile, whisk the vinegar, sugar and 1 teaspoon salt in a large bowl. Add the shallots and stir to coat. Let sit until the green beans are ready.
  • Whisk the mustard into the shallot mixture, then gradually add the olive oil, whisking constantly, until smooth and thick. Add the green beans and toss to coat. Season with salt and pepper.

12 ounces green beans, ends trimmed, about 3 cups
2 Tablespoons freshly squeezed lemon juice
1 Tablespoon chopped fresh dill
1/2 Teaspoon sea salt, or to taste
1/4 Teaspoon freshly ground black pepper
1/4 cup olive oil, the best quality extra virgin you have on hand

Steps:

  • Add all the ingredients for the lemon dill dressing to a 1 cup mason jar, secure the lid and shake the dressing together. Or you can whisk them together in a bowl. The dressing separates as it sits, so shake or stir it back together just before you toss it with the green beans.
  • Place the trimmed green beans in a large skillet, (12″) along with 1/4 cup water. Place a lid on the skillet and turn the heat on to high until it comes to a boil. Then lower the heat to maintain a simmer, and steam the green beans just until barely tender and bright green, 6-8 minutes for fresh. Be sure to keep an eye on the level of water in the pan, if it looks like it's running dry, add a few tablespoons more water to finish cooking. If you're using frozen green beans, start checking sooner as they come already partially cooked.
  • Drain the green beans and toss them with the dressing.
  • Serve immediately!

2 large garlic cloves, minced
1 teaspoon red pepper flakes

  • Blanch green beans in a large stock pot of well salted boiling water until bright green in color and tender crisp, roughly 2 minutes. Drain and shock in a bowl of ice water to stop from cooking.
  • Heat a large heavy skillet over medium heat. Add the oil and the butter. Add the garlic and red pepper flakes and saute until fragrant, about 30 seconds. Add the beans and continue to saute until coated in the butter and heated through, about 5 minutes. Add lemon zest and season with salt and pepper.

I love hearts of palm but haven't found too many recipes using them, so I make this often. I've served this salad to several people who said they had never even heard of hearts of palm, and they've said they were pleasantly surprised at how much they enjoyed the taste.

14 7/8 ounces jars, or can of hearts of palm, drained
1/2 large purple onion, cut into very thin strips
1 roasted sweet red pepper from jar, drained
5 cups mixed baby greens
shaved parmesan cheese
1/4 cup fresh lemon juice
3/4-1 teaspoon dried dill (to taste)
1 teaspoon garlic salt
1/2 cup good quality extra virgin olive oil

Steps:

  • Cut hearts of palm (usually found in the canned vegetable section) into 1/2-inch slices. Slice purple onion lengthwise into very thin strips. Cut bell pepper into thin strips.
  • Combine baby lettuce, hearts of palm onion and red pepper in a large salad bowl. Whisk together all ingredients for the salad dressing and toss with salad mixture.
  • Top with shaved Parmesan cheese and serve immediately.

1 lb fresh green beans, trimmed
1 tablespoon lemon juice
1 teaspoon lemon zest
1 tablespoon chopped fresh dill or 1 1/2 teaspoons dried dill
1 tablespoon olive oil
1 teaspoon Dijon mustard

Steps:

  • In a large saucepan bring 1 inch water to boiling. Place green beans on a steamer rack and set the rack in the pan. Cover and steam 7 minutes or until green beans are tender. Immediately transfer green beans to a bowl of ice water then drain.
  • Meanwhile, for the dressing, in a small bowl whisk together the lemon juice, zest, dill, oil and mustard.
  • Place green beans in a large serving bowl. Add dressing, toss lightly to coat.

4 large handfuls haricots verts or green beans, stem ends trimmed
2 tablespoons unsalted butter
