1 lb green beans, fresh or frozen,regular or french style
1/2 cup sliced fresh mushrooms
1/4 cup chopped onion
1 clove garlic, minced
1 tablespoon butter
1 tablespoon flour
1/8 teaspoon fresh coarse ground black pepper
1/4 cup beef broth
1/4 cup half-and-half
2 tablespoons cream sherry (like Harvey's Bristol Cream)

Steps:

  • cook beans according to package, or fresh (clean and snap) boil 20-25- minutes.
  • Drain and return to saucepan.
  • In small saucepan cook mushrooms, onion, garlic in butter about 5 minutes, til tender.
  • stir in flour, pepper.
  • carefully add beef broth and half and half.
  • cook and stir til thickened and bubbly.
  • stir in sherry.
  • stir sauce into beans and heat through.

Zest and juice of 1 lemon
1 tablespoon unsalted butter
2 cups French green beans (about 8 ounces)

Steps:

  • Stir together the creamy horseradish, mustard, lemon zest and juice in a small bowl.
  • Melt the butter in a large skillet over medium heat. Add the green beans and sauté until barely tender, 5 minutes. Add the horseradish mixture and continue sautéing until the beans are tender and coated in the sauce. Add salt and pepper to taste. Serve immediately.

6 tablespoons butter
2 shallots, finely chopped (about 3 tablespoons)
8 ounces portobello mushrooms, sliced
8 ounces white mushrooms, sliced
2 sprigs fresh thyme
1 tablespoon chopped fresh sage leaves, or 1 teaspoon dried sage
3 tablespoons all-purpose flour
3/4 cup sherry
3/4 cup heavy cream
2 pounds fresh green beans, trimmed
Frizzled leeks, recipe follows
Vegetable oil, for deep frying
1 leek
Superfine flour, for dredging (recommended: Wondra Flour)
Salt and freshly ground black pepper

Steps:

  • Melt 4 tablespoons butter in a large skillet over medium heat. Add the shallots and saute until translucent, about 3 minutes. Add the mushrooms, thyme and sage and saute until most of the liquid has evaporated, about 10 minutes. Stir in the flour and cook 5 more minutes. Next add the sherry and stir until thickened. Add the cream and simmer an additional 5 minutes. Set sauce aside. (Recipe can be made to this point up to 2 days before, refrigerated.)
  • Melt the remaining butter in a large skillet over high heat. Add the beans, toss to coat with the butter and saute until bright green, about 7 minutes. They'll still be crispy. Season with salt and pepper and place on a platter.
  • Bring the sauce to a simmer and spoon over the beans. Top with the frizzled leeks.
  • Heat a couple inches of oil to 350 degrees F in a large, heavy pot. To check the oil temperature, drop a bread cube into it. If the cube browns within 30 seconds the oil is hot enough.
  • Trim leek, slice in half lengthwise, and wash well under running water. Cut the root end off the leek and then cut each half lengthwise into long, thin strips.
  • Season flour with salt and pepper. Dredge leek strips in flour. Fry leeks for 1 to 2 minutes, or until crisp and golden. Drain on paper towels.

This is a really old recipe that I've had forever. They're simple but good. You can substitute 1 pound of asparagus for the beans if you'd like.

1 pound fresh green beans, trimmed and snapped
1 tablespoon butter
¼ cup heavy cream
2 tablespoons grated Parmesan cheese
ground nutmeg
salt, to taste
ground black pepper, to taste
2 tablespoons grated Parmesan cheese

Steps:

  • Bring a large pot of lightly-salted water to a boil; drop in the green beans and return to a boil. Cook uncovered until the beans are bright green and barely tender, about 6 minutes. Drain and set aside.
  • Melt the butter in a large skillet over medium-low heat; whisk the cream, 2 tablespoons of Parmesan cheese, and nutmeg into the melted butter. Bring the mixture to a simmer. Gently stir the beans into the mixture to coat; season with salt and pepper. Return to a simmer, transfer to a serving dish, and sprinkle with 2 tablespoons of Parmesan cheese to serve.

1 pound fresh green beans, trimmed
2 tablespoons butter
½ cup minced onion
1 tablespoon minced garlic
1 tablespoon sesame seeds
¼ cup soy sauce
2 tablespoons mayonnaise
1 teaspoon sriracha hot sauce
¼ teaspoon ground allspice
salt and ground black pepper to taste

Steps:

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add green beans, cover, and steam until tender, 2 to 6 minutes.
  • Melt butter in a saucepan over medium heat; cook and stir onion and garlic for 2 minutes. Add sesame seeds; cook and stir until sesame seeds are golden brown, 3 to 5 minutes.
  • Mix soy sauce, mayonnaise, sriracha hot sauce, and allspice into onion mixture. Add green beans and toss to coat; season with salt and pepper.

1 cup small white pearl onion, cut in half
1/2 lb mushroom
2 tablespoons all-purpose flour
1 cup chicken broth
1/2 cup heavy cream
2 tablespoons cream sherry
ground nutmeg, a pinch

fresh ground black pepper
8 cups water
2 lbs green beans, ends trimmed and cut in to 1-inch lengths

Steps:

  • In a skillet over moderate heat, melt the butter.
  • Add in onions; cook/stir for 3 minutes.
  • Add in mushrooms; cook, stirring a few times, until the liquid from the mushrooms has evaporated.
  • Sprinkle the flour over the mushrooms and onions; stir until blended.
  • Cook 2-3 minutes, stirring to make sure the vegetables don't stick to the bottom of the pan.
  • Gradually stir in the broth and whisk it until it comes to a boil.
  • Add in cream and sherry; cook, stirring, until the sauce thickens.
  • Add in nutmeg; season with salt and pepper.
  • Bring water t a boil in a saucpan; add in green beans; return water to a boil.
  • Cook beans until crisp-tender, about 3 minutes; drain the beans.
  • To serve, place warm beans in a serving dish and pour the warm sauce over them.

1 small shallot, minced

  • In a 6-qt. stockpot, bring 4 quarts water to a boil. Add beans; cook, uncovered, just until crisp-tender, 2-3 minutes. Remove beans and immediately drop into ice water., In a small skillet, melt butter over medium-high heat. Add shallot; cook and stir until lightly browned, 2-3 minutes. Add garlic; cook 30 seconds longer. Remove from heat. Drain beans and pat dry., In a large bowl, combine beans, shallot mixture and cheese; toss to coat. 1 1/4 lbs green beans, trimmed and cut in half
coarse salt
2 tablespoons extra virgin olive oil
2 tablespoons butter (divided)
1 medium onion, sliced
1 garlic clove, minced
2 portabella mushroom caps, halved and and thinly sliced (I have used criminis and they work wonderfully too)
coarse salt
fresh ground black pepper, to taste
1/2 cup dry sherry
1 tablespoon Worcestershire sauce

Steps:

  • Simmer green beans in a skillet in salted boiling water, 5 minutes.
  • Drain and set aside.
  • Return skillet to medium heat.
  • Add oil and 1 tablespoon of butter to pan.
  • Add onions and sauté 2-3 minutes.
  • Add garlic and mushrooms, season with salt and pepper.
  • Sauté for 3-5 minutes.
  • Return green beans to pan.
  • Heat through while adding sherry and Worcestershire sauce.
  • Reduce sherry for 3-4 minutes then add final tablespoon of butter.
  • Transfer vegetables to a serving plate.

6 ounces shiitake mushrooms, stemmed and sliced
6 ounces oyster mushrooms, sliced
3/4 teaspoon dried thyme
3 tablespoons chopped shallots
1/2 cup Madeira
1 cup whipping cream
1 pound fresh green beans, trimmed
Vegetable oil (for deep-frying)
2 large leeks (white and pale green parts only), thinly sliced crosswise

Steps:

  • Melt 2 tablespoons butter in heavy large skillet over medium-high heat. Add all mushrooms and thyme; sauté 5 minutes. Add 2 tablespoons shallots; sauté until mushrooms are tender, about 3 minutes. Add Madeira and simmer until almost all liquid evaporates, about 2 minutes. Add cream and simmer until slightly thickened, about 2 minutes. Set sauce aside. Cook beans in large pot of boiling salted water until just tender, 5 minutes. Drain. Transfer to bowl of ice water; cool. Drain. (Sauce and beans can be made 6 hours ahead. Cover separately; chill.)
  • Pour enough oil into large deep saucepan to reach depth of 4 inches. Heat oil to 350°F. Place 1/4 of leeks in small metal strainer. Lower strainer into oil; fry until golden, 40 seconds. Lift strainer from oil. Drain leeks on paper towels. Repeat with remaining leeks in 3 more batches. Season leeks with salt.
  • Melt 1 tablespoon butter in heavy large skillet over medium heat. Add beans and remaining 1 tablespoon shallots; toss to heat through. Season with salt and pepper. Place beans on platter.
  • Bring sauce to simmer. Spoon sauce over beans. Sprinkle with fried leeks.
