2 tablespoons red wine vinegar
2 garlic cloves, finely chopped
1 tablespoon Dijon mustard
1 cup extra-virgin olive oil
1/4 cup minced fresh chives
Black pepper, as needed
1 pound haricots verts, trimmed
2 2/3 cups cooked fresh corn kernels (from about 4 corn cobs)
1/2 pound carrot, peeled and coarsely grated (2 cups)

Steps:

  • In a small bowl, whisk together salt, vinegar, garlic and mustard. Whisking constantly, slowly whisk in oil until incorporated. Whisk in chives and pepper.
  • Bring a pot of salted water to a boil. Drop in haricots verts and cook until just tender, 2 to 3 minutes. Drain, cool and chop into bite-size pieces.
  • In a large bowl, toss together haricots verts, corn and carrot. Toss in dressing and season with salt and pepper.

4 cups green beans, ends cut
2 corn on the cob, white preferably
2 tablespoons olive oil
1 red onion, large, cut in 1/8-inch rounds
2 tablespoons chopped garlic
1/4 cup white wine
2 teaspoons sea salt
1 teaspoons black pepper
3 tablespoons butter
1/4 cup diced Roma tomatoes
3 tablespoons grated Parmigiano-Reggiano

Steps:

  • In a medium sauce pot, bring water and 1 teaspoon salt to a boil. Add green beans and blanch for 3 minutes. Remove from water and put into an ice water bath. Drain.
  • Heat grill or gas burners. Place cleaned corn on the cob on the grill or burner. Turn corn and lightly brown all the way around. Let cool and slice the kernels off the cob.
  • In a large saute pan over medium heat, add oil, after 45 seconds add onions and saute for 4 to 5 minutes, add green beans, corn, and garlic. Saute for 4 minutes, deglaze with wine, season with salt and pepper, and butter.
  • Garnish with Roma tomatoes and Parmesan.

Lima beans are almost always on the menu when you visit a traditional Gullah or Low Country soul food restaurant. They've usually been slow-cooked for hours with a smoked turkey leg or ham hock. To be honest, I'm not a huge fan of that way of cooking them, so this salad is my favorite way to serve lima beans. I love the tangy vinaigrette and the colorful crunchy vegetables added to the beans. This is another one of those recipes that gets better the longer it sits in the fridge.

One 12-ounce package frozen Fordhook lima beans, thawed
3 cups chicken broth
1 slice thick-cut bacon
1 cup fresh corn kernels (from 2 ears corn)
1 cup grape tomatoes, halved lengthwise
1 small red bell pepper, diced (about 1 cup)
1 small green bell pepper, diced (about 1 cup)
1/2 small red onion, thinly sliced (about 1 cup)
4 cloves garlic, minced
Kosher salt and freshly ground black pepper
1/3 cup sherry vinegar
1 tablespoon honey
1 teaspoon celery seeds
1/3 cup extra-virgin olive oil

Steps:

  • For the salad: Combine the lima beans, broth and bacon in a small saucepan. Bring to a boil. Reduce the heat and simmer until the lima beans are tender and cooked through, adding the corn during the last 2 minutes of cooking, 10 to 12 minutes. Remove and discard the bacon and drain the beans and corn. Set aside to come to room temperature.
  • Make the vinaigrette: Sprinkle the garlic with about 1/4 teaspoon salt. Use the flat side of a chef's knife to press down on the garlic and drag it across the cutting board. Keep mincing, pressing and dragging the garlic until it forms a paste. Place the garlic paste in a large bowl. Add the vinegar, honey and celery seeds. Gradually whisk in the oil until combined. Season with salt and pepper.
  • Add the lima beans and corn, tomatoes, peppers and onions and toss until combined. Season with additional salt and pepper if needed. Serve at room temperature.

4 (6- to 8-ounce) skin-on salmon fillets, patted dry

1 pound green beans, stem end trimmed and beans halved crosswise
Kernels from 4 ears of corn (about 4 cups)
1/2 small red onion, thinly sliced
3 tablespoons lime juice (from 2 limes)

Steps:

  • Heat the broiler to high and set a rack in the upper third in the oven. In a medium bowl, stir to combine 2 tablespoons oil with the turmeric and red-pepper flakes. Season the salmon all over with 1 teaspoon salt, then toss to coat in the spiced oil.
  • On a sheet pan, toss the green beans, half the corn kernels, 1 tablespoon olive oil and a sprinkle of salt. Spread into an even layer, then nestle the salmon among the vegetables, skin side up.
  • Broil until the green beans are blistered and charred in spots, and the salmon's skin is crisp and the flesh is opaque and flakes easily with a fork, 6 to 10 minutes. These beans go well with any meat as well as fried chicken, ham or pork chops. The blended flavors of lima beans, corn and bacon drippings make anyone feel like they are seated at Grandma's table!

Steps:

  • Heat oven to 350 degrees. Spread almonds on a baking sheet and bake until golden, 6 to 7 minutes.
  • Meanwhile, in a large (12-inch) deep skillet with a lid, heat oil over medium. Add garlic and stir until fragrant, 30 seconds.
