CAESAR SALAD WITH SPICY PANCETTA AND CORNBREAD CROUTONS
This recipe marks the first time I remember making something and feeling the essence of timing in cooking: the buttered dish, the preheated oven and the melted butter cooling slightly while I gathered and blended all the other ingredients. SO satisfying.

- For the cornbread: Preheat the oven to 400 degrees F.
- Whisk together the cornmeal, flour, sugar, baking powder, salt and baking soda in a large bowl. Whisk in the buttermilk, milk and eggs. Whisk in the melted butter.
- Coat the sides and bottom of a 9-inch skillet with the remaining butter. Pour the batter into the skillet and bake until the center is firm and a cake tester or toothpick inserted in the center comes out clean, 20 to 25 minutes. Let cool. Cut half of the cornbread into cubes. (Devour the other half with butter and jam.)
- For the dressing: Combine the mustard, garlic, a pinch salt and about 1 teaspoon coarsely ground pepper in a food processor. Pulse to blend. With the machine running, pour the lemon juice and caper juice into the mix. Slowly pour in the olive oil and then the canola oil. Transfer the dressing to a bowl. Taste for seasoning. Too lemony? Add more oil. Too oily, add more lemon. Stir in the anchovies, anchovy oil and a few tablespoons grated Parmesan. Refrigerate. (See Cook's Note.)
- For the salad: Preheat the oven to 375 degrees F.
- Spread the cornbread cubes on a baking sheet and bake until browned and toasty, 10 to 12 minutes.
- Add about three quarters of the dressing to a large bowl and toss the romaine with the dressing. Grate some Parmesan over the leaves. Use a tea strainer or sifter to sprinkle the pancetta with an even, light layer of the cayenne. Top with salad with the pancetta and warm cornbread croutons and serve immediately.
CAESAR GREEN BEAN SALAD

- DRESSING: In a small bowl, whisk together lemon juice, Worcestershire, mustard, garlic, anchovies, 1/2 teaspoon pepper and 1/4 teaspoon salt until combined. Slowly whisk in olive oil until emulsified; set aside.
- GREEN BEANS: Line a rimmed baking sheet with a clean dish towel. Bring 4 quarts of water to a boil in a large Dutch oven. Add green beans and 1 1/2 teaspoons salt, return to a boil, cook until tender, about 5-7 minutes. Drain green beans in a colander then spread in an even layer on the prepared baking sheet. Allow beans to cool completely.
- CROUTONS: Meanwhile, toss baguette pieces, olive oil, and pepper in a large bowl until pieces are coated with oil. Transfer to a 12-inch non-stick skillet (reserve bowl). Cook over medium-high heat until, stirring occasionally, until golden brown and crispy about 5-7 minutes. Return croutons to the reserved bowl.
- Transfer dressing, green beans, and half of the Parmesan cheese to the bowl with croutons; toss to combine. Season with salt and pepper to taste. Transfer to a serving dish. Sprinkle with remaining Parmesan cheese, enjoy!
THE BEST CAESAR SALAD
It should not come as a surprise that the best Caesar salad is also the most traditional version. That means it's time to bring out the anchovies and eggs -- and don't skimp on quality Parmesan cheese. We've even included garlicky homemade croutons to balance the tangy dressing.

- Preheat the oven to 400 degrees F.
- For the croutons: Put the olive oil and butter in a small saucepan over medium-low heat. When the butter is completely melted add the garlic and 1/4 teaspoon kosher salt. Carefully swirl the pan to combine. Set aside for 10 minutes to allow the garlic to infuse the oil mixture.
- Put the bread pieces on a baking sheet. Evenly pour the garlic mixture over the bread and toss to coat. Spread the bread in a single layer and bake until golden brown, 8 to 10 minutes. Stir the bread halfway through cooking to ensure even browning. Remove from the oven and sprinkle with black pepper and Parmesan. Set aside to cool.
- For the salad: Soak the anchovies in a small bowl of water for 5 minutes. Rinse with cold water, drain and pat dry. Finely chop the anchovies and garlic, then use the side of your knife to mash them to a paste.
- Add the anchovy paste, egg yolk, Dijon mustard and lemon juice to a large bowl and whisk to combine. While whisking, slowly drizzle in the olive oil in a steady stream until emulsified. Stir in 3 tablespoons grated Parmesan. If needed, add water, 1 teaspoon at a time to thin the dressing. Season with salt and pepper to taste.
- Add the lettuce and croutons to a large bowl and gently toss with the dressing until coated. Top with grated Parmesan and serve immediately.

- Prepare and cook green beans until tender (10-15 mins) If using frozen, follow cooking directions.

- In a large pot bring enough water to cover the green beans to a boil. Once boiling salt the water well, then add in the trimmed green beans. Cook until tender, about 5-7 minutes. Drain the green beans and immediately shock them in a bowl of ice water. Once cool, remove from the ice water to dry on a clean towel.
- In a small bowl or jar whisk together all of the ingredients for the dressing. Refrigerate until ready to serve.
- Preheat oven to 400 degrees F. Place the baguette cubes on a baking sheet and drizzle with olive oil. Sprinkle with salt and pepper and toss together until coated. Spread them out into a single layer and bake for approximately 10 minutes or until golden brown and crisp.
