This is a very simple recipe that tastes great. Put your beans on in early morning and let them cook all day. Handed down by my Grandma who came from a pretty poor family. Goes great with cornbread.

2 pounds fresh green beans, trimmed
1 teaspoon salt, or to taste
1 pound smoked sausage, cut into bite-sized pieces
8 potatoes, peeled and quartered

Steps:

  • Place the green beans in a large saucepan with a lid or a slow cooker. Pour water over the beans to cover; stir in salt. Bring to a boil over medium heat, reduce heat to low, cover, and simmer until the beans are very tender, 3 to 4 hours; add water throughout the cooking time as needed to keep moist.
  • Add the smoked sausage and potatoes; cover and simmer until the potatoes are very tender and the beans and potatoes have absorbed the smoky flavor of the sausage, about 2 more hours.

1 pound bulk Italian sausage
1 medium onion, finely chopped
3 garlic cloves, sliced
4 cans (14-1/2 ounces each) reduced-sodium chicken broth
2 cans (15 ounces each) pinto beans, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes, undrained
1 cup medium pearl barley
1 large carrot, sliced
1 celery rib, sliced
1 teaspoon minced fresh sage
1/2 teaspoon minced fresh rosemary or 1/8 teaspoon dried rosemary, crushed
6 cups chopped fresh kale

Steps:

  • In a Dutch oven, cook sausage and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain., Stir in the broth, beans, tomatoes, barley, carrot, celery, sage and rosemary. Bring to a boil. Reduce heat; cover and simmer for 45 minutes., Stir in kale; return to a boil. Reduce heat; cover and simmer for 25-30 minutes or until vegetables are tender.

1 large onion, chopped
4 cloves garlic, minced
1-1/2 lb. Yukon gold potatoes (about 6), cut into 1-inch pieces

1 can (14-1/2 oz.) fat-free reduced-sodium chicken broth
6-1/2 oz. (1/2 of 13-oz. pkg.) OSCAR MAYER Natural Uncured Turkey Sausage, cut into 1/2-inch-thick slices
2 cups cut-up fresh green beans (1 inch lengths)
1/4 cup KRAFT Grated Parmesan Cheese
1 Tbsp. minced fresh chives

Steps:

  • Heat dressing in large saucepan on medium-high heat. Add onions and garlic; cook 4 min. or until onions are crisp-tender, stirring frequently. Add potatoes, water and broth; stir. Bring to boil; simmer on low heat 20 min. or until potatoes are tender, stirring occasionally.

12 ounces dry mixed beans
1 ½ pounds Italian turkey sausage links
1 (29 ounce) can diced tomatoes
2 (14 ounce) cans chicken broth
1 cup white wine
1 red bell pepper, chopped
1 onion, chopped
2 stalks celery, chopped
2 large carrots, chopped
2 cups frozen green peas, thawed

Steps:

  • Pick through and rinse beans. Place in a 4 quart pot, and cover with at least 2 inches of water. Bring to a boil for 2 to 3 minutes. Cover, and let stand in the refrigerator overnight.
  • Drain and rinse beans. Place beans in slow cooker with canned tomatoes, broth, white wine, and vegetables. Cover, and cook on low for 7 to 8 hours.
  • In a skillet, cook the sausage over medium heat until done. Slice links into 1/2 inch pieces. Add meat to slow cooker, and cook soup another 30 to 60 minutes.

1 (16 ounce) package pork sausage
2 (10.75 ounce) cans condensed cream of mushroom soup
1 cup milk
1 tablespoon soy sauce
1 clove garlic, minced
ground black pepper to taste
2 (16 ounce) packages frozen cut green beans
1 (2.8 ounce) can French-fried onions

Steps:

  • Crumble the pork sausage into a large skillet over medium-high heat. Cook and stir until evenly browned. Drain grease, and set aside.
  • Preheat the oven to 350 degrees F (175 degrees C). Coat a 9x13 inch baking dish with nonstick cooking spray.
  • In a large bowl, stir together the cream of mushroom soup, milk, soy sauce, garlic, and pepper. Mix in the sausage, then add the green beans, and stir until evenly coated. Pour half of the mixture into the prepared baking dish. Top with half of the fried onions. Spread remaining green bean mixture over the onions.

I received this in a email from Whole Foods Market. This is a great, simple soup that is very quick to make. Makes an easy weeknight dinner that is hearty and delicious. I used Aidells portobello mushroom sausage when I made this. I also use Herbamare seasoning instead of salt and pepper.

12 ounces kielbasa or 12 ounces cooked chicken sausage
16 ounces frozen green beans
4 cups chicken stock

Steps:

  • Scrub potatoes well and cut into 1 inch chunks.
  • Cut sausage into 1/2 inch slices.
  • Put all ingredients into a large soup pot.
  • Stir well and bring slowly to a boil.
  • Reduce, heat and simmer about 15 minutes or until the potatoes are tender.
  • Remove bay leaves before serving.

1 tablespoon rubbed dried sage
3 (15 1/2 ounce) cans cannellini beans, rinsed and drained

4 cups water
1 cup macaroni
1 (6 ounce) bag baby spinach leaves, stems removed
1 tablespoon red wine vinegar
1/8 teaspoon salt
1/4 teaspoon ground black pepper
grated pecorino romano cheese

Steps:

  • Preparation:.
  • Crumble the sausage into a large cold pot. Cook over medium-high heat, turning occasionally, for about 3 minutes, or until browned. Remove with a slotted spoon, set aside. Pour off and discard any drippings. Add the garlic and sage.
  • Cook for about 1 minute, or until fragrant. Add the beans, broth and water. Increase the heat to high and bring just to a boil. Scrape up the browned bits at the bottom of the pot.
  • Reduce the heat to medium-low. Cover partially and simmer for 15 minutes.
  • Transfer about half of the beans and enough broth to cover, to a blender or food processor. Purée and return to the pot. Add the macaroni and the reserved sausage.

2 medium-size carrots, thinly sliced
1/4 cup chopped parsley
1/2 tsp dill weed
2 tsp dried italian seasoning

1 pound green beans, trimmed and cut into 1-inch lengths
1 pound smoked bratwurst, thinly sliced and cubed

Steps:

  • In a large pot, cook bacon over medium heat until crisp. Remove from pan, drain,and set aside; discard all but 1 tablespoon of the drippings. Add onions to drippings in pan and cook, stirring occasionally, until soft (about 10 minutes). Stir in stock, potatoes, carrots, parsley, dill weed, italian seasoning, and pepper. This is a recipe from my father who was from Louisiana and loved his greens with bacon! He ended up being a Navy cook during the war and served a version of this soup on his ship. I add other vegetables such as corn, green beans, squash, etc. This soup is better the second day!!

1 lb Italian sausage (I use turkey)
2 tablespoons olive oil
1 tablespoon fennel seed
1/4 cup bacon, ends (I use Hempler's)
1 onion, chopped
2 -3 garlic cloves, chopped
1/2 lb mushroom, sliced
3 cups chicken broth
1 cup cannellini beans, drained
other vegetables (corn, green beans, etc.)
1/4 cup pasta (some small shape)
1 cup water (may need more)
2 bunches mixed greens, chopped (collards,chard,baby bok choy, etc.)

Steps:

  • Saute Italian sausage and fennel seeds in olive oil.
  • When browned, pour into soup pot.
  • Saute the bacon until brown.
  • Pour into soup pot.
  • In same skillet, saute onion and garlic.
  • When lightly brown, pour into soup pot.
  • Saute mushrooms until tender and pour into soup pot.
  • Add beans to soup pot.
  • Add chicken stock to soup pot.
  • Add enough water to cover contents and bring to boil.
  • Add pasta,cover, and simmer for 7 minutes.
  • Add chopped greens and more water if needed to come to about two inches below greens.
  • Cover and simmer for 20 minutes until greens are tender.

Instead of starting with a hambone (which you won't have unless you've just eaten a baked ham) and dried beans (which require significant soaking and simmering time), simply open cans of chicken broth and beans. Minced prosciutto instantly transforms commercial chicken broth into a ham-flavored soup base. Italian sausage reinforces the pork flavor and makes the soup substantial and satisfying. Mashing some of the canned beans thickens the soup and gives it the body of one that's been long simmered. Sauteed onions, carrots and celery add depth of flavor and ensure the soup's homemade feel.

3 (15.8 ounce) cans great Northern or other white beans, undrained
1 quart chicken broth (carton or can)

Steps:

  • Heat oil in a large, deep saute pan or soup kettle over medium-high heat. When pan is hot, add sausages; cook, turning once or twice, until well-browned on all sides, about 5 minutes. (Sausage will not be fully cooked at this point.) Remove from pan. When cool enough to handle, cut into slices 1/4-inch thick.
  • Add prosciutto, onions, carrots, celery and thyme to the empty skillet; cook, stirring often, until well browned, 8 to 10 minutes. In a small bowl, mash one can of beans with a fork into a chunky puree. Add broth, whole and mashed beans, and sausage; cover and bring to a simmer. I usually have the ingredients on hand and it is a hearty dinner that goes together in a flash. This is usually my go to meal after a long day at the office. There really aren't measurements, so feel free to add/subtract as you like. I prefer a simple sprinkling of Greek Seasoning, but you may prefer to cater to your family's tastes.
