½ medium head cabbage, thinly sliced
10 ounces purple daikon radishes, halved and sliced
4 ounces queso blanco, crumbled
⅓ cup chopped peanuts
2 oranges, peeled and diced
4 tablespoons diced shallot
1 lime, juiced
2 tablespoons extra-virgin olive oil, or to taste
salt and ground black pepper to taste

Steps:

  • Combine cabbage, radishes, queso blanco, peanuts, oranges, and shallot in a bowl. Drizzle with lime juice and olive oil. Add salt and pepper. Toss to combine.

SWEET ORANGE COLESLAW

This recipe came from one of my mom's cookbooks called "Quilter's Cooking Companion". It's easy to make and has great texture and flavor!

Number Of Ingredients 8

3 cups coleslaw mix
2 cups cooked brown rice
2 granny smith apples
1/2 cup chopped pecans
1/2 cup frozen orange juice concentrate
1/2 cup mayonnaise
1/2 teaspoon Dijon mustard
1/2 teaspoon seasoned salt

Steps:

  • Chop the apples (I don't peel them).
  • In a small bowl mix the orange juice concentate, mayo, dijon, and salt. In a large serving bowl toss the coleslaw mix, rice, and apples.
  • Mix the dressing with the slaw until well coated. Stir in the pecans.
  • Chill before serving.

SWEET COLESLAW

Adding a little orange juice to make the dressing a little sweeter. This recipe easily makes enough for 10 people or more. If it's on the thin side, add another 1/2 cup of mayonnaise. If it's too thick, thin with more orange juice.

  • Stir mayonnaise, sour cream, sugar, white balsamic vinegar, orange juice, and pepper together in a bowl.
  • Toss cabbage and carrots together in a large bowl. Drizzle dressing over the cabbage mixture and toss to coat.

3 cups shredded cabbage
1 medium navel orange, peeled and sectioned
1 cup seedless red grapes, halved
1 medium apple, chopped
1/2 cup finely chopped celery
3/4 cup reduced-fat orange yogurt
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 cup slivered almonds, toasted

Steps:

  • In a large bowl, combine the cabbage, orange, grapes, apple and celery. Stir in the yogurt, salt and pepper; toss until well coated. Cover and refrigerate until serving. Sprinkle with almonds just before serving.

A delicious coleslaw with a little citrus twist! Adapted from Cooks Recipes. If you like your slaw a little wetter, make another 1/2 recipe of the dressing. Enjoy! This is southwestern also made in Spain, they like to use citrus.

1/2 cup mayonnaise
2 tablespoons frozen orange juice concentrate, thawed
1 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon black pepper
3 cups shredded green cabbage (you may add in some red if you like)
1 cup shredded carrot
1/2 green bell peppers or 1/2 red bell pepper, thinly sliced
2 tablespoons golden raisins

Steps:

  • In a medium bowl, stir together mayonnaise, orange juice concentrate, sugar, salt and black pepper.
  • Stir in the shredded cabbage, carrot, green bell pepper, and golden raisins.
  • Mix to coat, cover and keep in refrigerator until ready to serve.

1 small cabbage, cut into slivers
1 carrot, grated
1 (8 ounce) mandarin oranges, drained
1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon Dijon mustard
1 teaspoon fresh ginger, minced
1/2 teaspoon celery seed
salt and pepper

Steps:

  • Mix cabbage and carrots in a large bowl.
  • In a small bowl combine mayonnaise, sour cream, mustard, ginger, celery seed, salt and pepper.
  • Pour over cabbage and carrots and mix well. Lightly fold in mandarin oranges.
  • Cover and chill at least 4 hours for flavors to blend.

1/2 cup thinly sliced red bell pepper
2 oranges
2 tablespoons tamari soy sauce
1/4 cup orange juice

1 tablespoon mirin
1 tablespoon seasoned rice vinegar
1 teaspoon dark sesame oil
1 teaspoon lime juice
2 teaspoons sugar

Steps:

  • Section the oranges and combine with coleslaw and bell pepper in a large bowl.
  • Mix the dressing together from the remaining ingredients and add to the vegetables.
  • Let stand for at least 15 minutes before serving.
