GREEK LEMON CHICKEN AND POTATOES



Greek Lemon Chicken and Potatoes image

I don't have the energy or courage to cater for a living but, if I did, this Greek lemon chicken and potatoes would be one of my go-to entrees, and not just for big, fat weddings. It's a proven crowd-pleaser, simple to make, and easy on the wallet.

4 pounds skin-on, bone-in chicken thighs
1 tablespoon kosher salt
1 tablespoon dried oregano
1 teaspoon freshly ground black pepper
1 teaspoon dried rosemary
1 pinch cayenne pepper
½ cup fresh lemon juice
½ cup olive oil
6 cloves garlic, minced
3 russet potatoes, peeled and quartered
⅔ cup chicken broth, plus splash to deglaze pan
chopped fresh oregano for garnish

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Lightly oil a large roasting pan.
  • Place chicken pieces in large bowl. Season with salt, oregano, pepper, rosemary, and cayenne pepper. Add fresh lemon juice, olive oil, and garlic. Place potatoes in bowl with the chicken; stir together until chicken and potatoes are evenly coated with marinade.
  • Transfer chicken pieces, skin side up, to prepared roasting pan, reserving marinade. Distribute potato pieces among chicken thighs. Drizzle with 2/3 cup chicken broth. Spoon remainder of marinade over chicken and potatoes.
  • Place in preheated oven. Bake in the preheated oven for 20 minutes. Toss chicken and potatoes, keeping chicken skin side up; continue baking until chicken is browned and cooked through, about 25 minutes more. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Transfer chicken to serving platter and keep warm.
  • Set oven to broil or highest heat setting. Toss potatoes once again in pan juices. Place pan under broiler and broil until potatoes are caramelized, about 3 minutes. Transfer potatoes to serving platter with chicken.
  • Place roasting pan on stove over medium heat. Add a splash of broth and stir up browned bits from the bottom of the pan. Strain; spoon juices over chicken and potatoes. Top with chopped oregano.

This easy Greek chicken and potatoes recipe is a family favorite. The secret is in the lemon-garlic sauce, which doubles up as a marinade. Whether you choose to marinate the chicken for a couple of hours (I usually don't) or cook it right away, the flavors will surprise you in the best way possible.

3 lb chicken pieces, bone in and skin on (I used 2 breasts and 3 legs)
Salt
4 gold potatoes (about 2 lb), scrubbed clean, cut into thin wedges
1 medium yellow onion, halved then sliced
1 tsp black pepper
1 lemon, sliced
1 cup chicken broth
6 to 12 pitted quality kalamata olives, optional
Fresh parsley, for garnish
1/4 cup extra virgin olive oil (I used Private Reserve Greek extra virgin olive oil)
1/4 cup lemon juice
12 fresh garlic cloves, minced
1 1/2 tbsp dried rosemary (or dried oregano)
1/2 tsp ground nutmeg
Greek Salad
Tzatziki Sauce
Pita Bread

Steps:

  • Preheat oven to 350 degrees F.
  • Pat chicken dry and season generously with salt (lift the skins and apply salt underneath as well). (see optional step in notes)
  • Arrange potato wedges and onions in the bottom of a baking dish or pan. Season with salt and 1 tsp black pepper. Add the chicken pieces (see optional step in notes).
  • Make the lemon-garlic sauce. In a small mixing bowl, whisk together 1/4 cup extra virgin olive oil with lemon juice, minced garlic, rosemary, and nutmeg. Pour evenly over the chicken and potatoes.
  • Arrange lemon slices on top. Pour chicken broth into the pan from one side (do not pour broth over the chicken).
  • Bake in heated oven uncovered for 45 minutes to 1 hour, until chicken and potatoes are tender. (Chicken's internal temperature should register at 165 degrees F). If you like, place the pan under the broiler briefly to allow the chicken skins to gain more color (watch carefully).
  • Remove from heat and add kalamata olives, if you like. Garnish with a little bit of fresh parsley.
  • Serve with Greek salad Taztaziki sauce and a side of pita bread, if you like. Enjoy!

4-5 boneless skinless chicken thighs
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 tablespoon olive oil
1 small red onion (sliced)
1 green pepper (sliced)
8 ounces sliced mushrooms
3 cloves garlic (smashed and sliced thin)
1 teaspoon kosher salt
1 & 1/2 teaspoons dried oregano
black pepper ( to taste)
2 cups cherry tomatoes (halved)
1 & 1/2 teaspoons dried oregano
1/2 cup Kalamata olives (sliced)
1/2 cup feta cheese (crumbled)
2 tablespoons olive oil
2 tablespoons red wine vinegar
hot Israeli couscous (for serving)

Steps:

  • Preheat your oven to 425 degrees F.
  • Heat a large 12 inch cast iron skillet over medium high heat. Pat the chicken dry with paper towels. Sprinkle 1 teaspoon salt and 1/2 teaspoon black pepper over both sides of the chicken.
  • Add 1 tablespoon oil to the hot pan and swirl. When it is shimmery, add the chicken to the pan with plenty of space in between each thigh. Sear the chicken for about 2 minutes, and when it is nice and brown, flip each thigh and sear for another minute or two until brown. You are not cooking the chicken, just searing the outside. Remove the chicken to a plate and set aside.
  • Add more oil to the pan if necessary. Keep the heat at medium high. (If your veggies aren't prepped yet, turn the pan off.) When it is hot, add the red onion, green pepper, mushrooms, and garlic.
  • Season with 1 teaspoon salt, 1 and 1/2 teaspoons oregano, and black pepper to taste. Saute for 3 minutes, then remove from heat.
  • Stir in 2 cups sliced cherry tomatoes. Place the seared chicken on top of the vegetables, and add any juices to the pan. Sprinkle with another 1 and 1/2 teaspoons oregano.
  • Transfer to the oven and cook at 425 for about 15 minutes, or until a meat thermometer inserted into the chicken registers 160 degrees.
  • (This is a good time to make the Israeli couscous if you're making it.)
  • Remove from the oven and sprinkle with 1/2 cup Kalamata olives and 1/2 cup feta cheese. Drizzle with 2 tablespoons olive oil and 2 tablespoons red wine vinegar.
  • Serve over couscous, rice, potatoes, or cauliflower rice!

1/4 cup crumbled low-fat feta cheese
3 skinless, boneless chicken breasts (8 to 10 ounces each), trimmed
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
1 cup low-sodium chicken broth
2 tablespoons white wine vinegar
2 tablespoons finely chopped sun-dried tomatoes
8 ounces ditalini (about 1 3/4 cups)
1 tablespoon chopped fresh mint

Steps:

  • Combine 2 cups spinach, the feta and 3 tablespoons water in a bowl. Insert a paring knife into the thickest part of each chicken breast, cutting along the side to make a deep 2-inch-wide pocket. Stuff the spinach mixture into the pockets.
  • Heat a large nonstick skillet over medium heat and add the olive oil. Season the chicken with salt and pepper. Add to the skillet, rounded-side down, and cook until browned, about 3 minutes per side. Add the chicken broth, vinegar and sun-dried tomatoes. Partially cover and cook until the chicken is just cooked through, about 15 minutes.
  • Meanwhile, bring a pot of salted water to a boil. Add the ditalini and cook as the label directs. Put the remaining 1 1/2 cups spinach in a colander; drain the ditalini over the spinach to wilt it. Return to the pot.
  • Remove the chicken to a cutting board and slice. Add the pan sauce to the ditalini along with the mint and 1/4 teaspoon salt; toss. Serve with the chicken.

1 teaspoon coriander

Steps:

  • Heat oven to 200 degrees F. You will use it to keep the chicken warm.
  • Cut chicken breasts in halves the horizontal way to make thinner chicken cutlets. Pat dry and season with salt and pepper. Combine oregano, paprika, and coriander in a small bowl. Season the chicken with the spice mixture on both sides.
  • In a large skillet heat 2 tbsp extra virgin olive oil until shimmering but not smoking. Add the chicken cutlets and cook for 3 to 4 minutes on one side, then turn over and cook for another 3 minutes or so. To check for doneness, cut into a piece with a thin-bladed knife and take a peek. Transfer the chicken to an ovenproof platter and put it in the oven.
  • In the same skillet, now add a tiny bit more extra virgin olive oil. Add ghee and melt. Sautee the mushrooms for 5 minutes. Add broth, green onions, garlic, salt and pepper. Bring to a boil.
  • Add the chicken back to the pan, spoon some of the sauce on top. Serve immediately.

1/2 teaspoon salt (or to taste)

5 sprigs fresh thyme
2 lemons (cut in thirds)
1 cup kalamata olives (pitted)

Steps:

  • Preheat your oven to 350°F.
  • Season the chicken thighs with salt and pepper on both sides.
  • In a large 12 inch skillet heat the olive oil over medium-high heat. 1/4 cup balsamic vinegar
1 tablespoon honey ((regular or sugar-free))
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/2 teaspoon dried thyme
1.5 lb. boneless skinless chicken thighs ((4-5 pieces))
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1 tablespoon ghee (or olive oil)
1 lb. sliced mushrooms
1 tablespoon minced fresh garlic

2 tablespoons chopped parsley (for garnish)

Steps:

  • Prepare the sauce: In a small bowl, whisk together the balsamic vinegar, honey, kosher salt, black pepper, and dried thyme. Set aside.
  • Season the chicken thighs with kosher salt and black pepper.
  • Heat the ghee in a large (12-inch) nonstick skillet over medium heat, swirling to coat. Add the chicken thighs in a single layer and cook, undisturbed, for 7 minutes. Flip the chicken pieces and cook until cooked through (their internal temperature should reach 165ºF), about 7 more minutes. Remove to a plate and cover with foil to keep warm.
  • Add the mushrooms to the same skillet with a splash of water (about 2 tablespoons). Gently stir the mushrooms while also scraping the bottom of the skillet to remove the tasty brown bits that have stuck to it.
  • After the mushrooms have started reducing a bit in volume, stir in the garlic.
  • Cook the mushrooms and garlic, stirring often, until the mushrooms are tender and browned, and the liquid that they have released has evaporated, 5-7 minutes.
  • Add the sauce to the skillet. Simmer, uncovered, stirring occasionally, until the sauce thickens, about 5 minutes. Stir in the butter until it melts.
  • Add the chicken thighs back to the skillet, turning them to coat in the sauce. Cook for a couple more minutes to heat through.
  • Divide the chicken and mushrooms between four plates. Drizzle or brush with the pan juices and sprinkle with parsley. Serve immediately.

8 -10 chicken pieces
5 -7 large potatoes, peeled, then cut into four pieces lenghwise (I like to use Yukon gold or russets)
3 -5 tablespoons olive oil
salt and pepper
1 large onion, thinly sliced
1 cup chicken stock or 1 cup broth
3/4 cup olive oil
2 tablespoons fresh minced garlic (or to taste)
2/3 cup fresh lemon juice (you can use a little less lemon juice)
1 tablespoon dried oregano
1 teaspoon dried thyme (rubbed between your fingers to release the flavors)
1 lb button mushroom (or to taste, make certain that the mushrooms are small)

Steps:

  • Set oven to 400 degrees.
  • Sprinkle the onion slices in the bottom of a large roasting pan.
  • Season chicken pieces with salt and pepper, then brown the chicken in a large skillet on both sides for about 6 minutes on each side; place on top of the onion slices along with potatoes in the roasting pan.
  • Pour the chicken stock or broth around the browned chicken pieces.
  • Then sprinkle oregano all over in the roasting pan.
  • In a bowl mix together olive oil, garlic lemon juice and thyme.
  • Pour over and around the chicken, mixing together slightly with a wooden spoon to combine with the broth.
  • Add in the small button mushrooms around the chicken.
  • Cover and bake in a 400 degree oven for about 30 minutes.
  • Uncover, mix juices slighty and baste the chicken with a wooden spoon, then return to oven (uncovered) and bake for about 20 minutes more or until the chicken is cooked through.
  • *NOTE* if you find that the potatoes are done before the chicken, just remove to a bowl.

1 pound 500 grams white mushrooms sliced
1 pound 500 grams leeks sliced in rings (the white part)
5-6 spring onions sliced (the white part)
2/3 cup olive oil
1 cup grated or crushed tomatoes
1 tablespoon tomato paste
Salt/pepper to taste
Parsley

Steps:

  • In a large pot add the olive oil and sauté the spring onion at medium to low
  • heat for about 2 minutes.
  • Add the mushrooms and leek and a bit of salt continue sautéing for another 3-4 minutes.
  • Add the tomato and the tomato paste and stir, and then add just enough hot water to partially cover the vegetables.
  • Cover the pot and simmer (it should not be boiling for about 30-35 minutes). It should not be watery.
  • Remove from heat and let it cool to room temperature.
  • Sprinkle with parsley and freshly ground pepper and serve.

1/4 cup flour
1 lb mushroom, sliced

1 1/2 cups canned low-salt chicken broth
1/4 cup fresh lemon juice
1/4 cup dry white wine
Chopped fresh parsley

Steps:

  • Heat olive oil in heavy large skillet over medium-high heat. Sprinkle chicken with salt and pepper; dust with flour. Add chicken to skillet; sauté until brown, about 2 minutes per side. Using tongs, transfer chicken to plate. Add mushrooms, garlic and oregano to same skillet. Sauté until mushrooms brown, about 10 minutes. Add broth, lemon juice and wine and boil until sauce is slightly reduced, about 5 minutes. Add chicken to sauce. Reduce heat and simmer uncovered until chicken is cooked through, about 2 minutes per side. Season with salt and pepper.
  • Transfer chicken and mushroom sauce to platter. Sprinkle with parsley.

2 cups cooked shredded chicken
6 ounces spinach
½ teaspoon salt
½ teaspoon pepper
½ teaspoon red pepper flakes
½ teaspoon oregano
1 cup Greek yogurt
½ cup organic chicken stock
1 teaspoon garlic powder
Fresh basil, for serving

Steps:

  • Preheat oven to 350 degrees F.
  • Spray a pan with cooking spray. Add 8 ounces sliced white mushrooms and cook over medium heat until softened, about 3 to 5 minutes.
  • Add 2 cups shredded chicken, 6 ounces spinach, ½ teaspoon salt, ½ teaspoon pepper, ½ teaspoon red pepper flakes, and ½ teaspoon oregano to the pan. Cook until the spinach is slightly wilted, about 1 minute. Remove from heat and set aside.
  • In a small bowl, mix 1 cup Greek yogurt, ½ cup organic chicken stock, and 1 teaspoon garlic powder until well combined. Add to the pan with the other ingredients, and mix well.
  • Place the ingredients in a greased small casserole pan or baking dish. Bake for 20 minutes.
  • Serve with fresh basil and enjoy.

  • Preheat the oven to 200C, 400F, Gas 6
  • Brush a little olive oil over each mushroom and arrange, upside down, on a non stick baking tray.
  • Mix the tomatoes, onions,garlic,cheese, olives and parsley together and season with salt and freshly ground black pepper.
  • Divide de mixture equally between each mushroom. Transfer to the preheat oven and bake for 15 minutes or until the mushrooms are tender and the filling is pipping hot.
  • Serve hot or warm. These make great party snacks, or server 2 per person with a crisp salad for light and healthy meal
