Baked Lemon Salmon with Creamy Dill Sauce image

This Oven Baked Lemon Salmon with Creamy Dill Sauce is the perfect healthy meal that comes together in only 30 minutes. The salmon is topped with a simple, yet flavorful Greek yogurt dill sauce that everyone is sure to love.

1 cup plain greek yogurt
1 small shallot (minced)
1 lemon (juiced)
1/2 teaspoon prepared horseradish
1/4 teaspoon garlic powder
1 tablespoon fresh dill (plus additional for garnish)
salt to taste
1.5 pounds salmon (about an inch thick, cut into four pieces)
1 lemon
2 teaspoons olive oil
1/4 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Mix all the sauce ingredients together and put in the fridge. You can also do this ahead of time.
  • Preheat oven to 400 degrees. Line a baking sheet with aluminum foil.
  • Slice 4 very thin lemon rounds from the center of the lemon. Use the rest of the lemon to squeeze lemon juice on the fish.
  • Place the salmon fillets on the foil lined baking sheet. Spread the olive oil on top of the fish and sprinkle the garlic powder, salt and pepper on top.
  • Top each piece of salmon with a thin lemon slice.
  • Bake for 15-20 minutes or until the salmon is flaky, and has reached an internal temperature of 135-145F.
  • Remove from oven and serve with the Greek yogurt dill sauce for salmon.

1 to 1-1/2 teaspoons lemon-pepper seasoning
1 teaspoon onion salt
1 small onion, sliced and separated into rings
6 lemon slices
1/4 cup butter, cubed
DILL SAUCE:
1/3 cup sour cream
1/3 cup mayonnaise
1 tablespoon finely chopped onion
1 teaspoon lemon juice
1 teaspoon prepared horseradish
3/4 teaspoon dill weed
1/4 teaspoon garlic salt
Pepper to taste

Steps:

  • Line a 15x10x1-in. baking pan with heavy-duty foil; grease lightly. Place salmon skin side down on foil. Sprinkle with lemon pepper and onion salt. Top with onion and lemon. Dot with butter. Fold foil around salmon; seal tightly,, Bake at 350° for 20 minutes. Open foil carefully, allowing steam to escape. 1 (2 pound) salmon fillet
1 teaspoon lemon-pepper seasoning
1 teaspoon onion salt
1 small onion, sliced and separated into rings
6 slices lemon
¼ cup butter, cut into small chunks
⅓ cup sour cream
⅓ cup mayonnaise
¼ cup dry white wine
1 tablespoon capers
1 tablespoon finely chopped onion
1 tablespoon caper brine
1 teaspoon lemon juice
1 teaspoon prepared horseradish
¾ teaspoon dried dill weed

4 (6 oz.) wild salmon fish fillets (OR 1 wild Alaskan salmon fillet)
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 tablespoon lemon juice
1/2 tsp EACH lemon pepper, dried oregano, garlic powder, sugar, salt
1/2 cup Greek yogurt (nonfat works great)
2 tablespoons mayonnaise (nonfat works great)
1 tablespoon chopped dill
1 minced garlic clove (or 1/4 tsp garlic powder)
1/2 tablespoon lemon juice
1 teaspoon red wine vinegar
1/4 tsp EACH dried oregano, dried parsley
Salt and pepper to taste
1 cup cherry tomatoes, halved
1 cup chopped cucumber
3 tablespoons kalamata olives (or regular) (halved)
1/4 cup chopped red onion
2-3 tablespoons crumbled feta
1/2 -1 jalapeno, seeded, deveined, minced ( or a pinch of red pepper flakes)
1/2 tablespoon chopped dill
1 minced garlic clove
1/2 TBS EACH olive oil, red wine vinegar, lemon juice
1/2 teaspoon dried oregano

Steps:

  • Whisk the olive oil, balsamic, lemon juice and seasonings listed under "salmon" together in a 9x13 baking dish (or large piece of foil with sides folded up on a baking sheet if using a large fillet). Add salmon and turn to coat (I drag the salmon across the dish to coat thoroughly). Brush any remaining wet rub onto the salmon. Line salmon in a single layer and let sit at room temperature while you prepare your Dill Sauce and Salsa, up to 30 minutes at room temperature.
  • Preheat oven to 400 degrees F.
  • For the Dill Sauce, whisk all of the ingredients together in a medium bowl. Season with salt and pepper to taste. Cover and refrigerate.
  • For the Salsa, combine all of the ingredient in a medium bowl. Cover and refrigerate.
  • Bake salmon at 400 degrees F for approximately 12-15 minutes or until salmon is cooked through and flakes easily with a fork (cooking time may vary depending on thickness of salmon).
  • Serve salmon with Dill Sauce, Salsa and fabulous with extra freshly squeezed lemon juice.
