THE BEST GREEK CHICKEN MARINADE

THE BEST Greek Chicken Marinade image

This garlic, lemon, and oregano Greek marinade can be used for chicken that's grilled, baked or pan-fried and is great any which way you choose.

Provided by Heidi

Categories     Main Course

Time 50m

Number Of Ingredients 8

1 pound boneless (, skinless chicken breasts (about 2 large breasts))
⅓ cup plain Greek yogurt
¼ cup olive oil
4 lemons
4-5 cloves garlic (, pressed or minced)
2 tablespoons dried oregano
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper

Steps:

  • Place the chicken pieces in a freezer bag or a bowl and set aside.
  • Add the Greek yogurt and olive oil to a medium size bowl. Zest one of the lemons and add to the bowl. Juice that lemon into the bowl with the zest. Slice the other three lemons and set aside. Add the minced garlic, oregano, kosher salt and black pepper to the lemon juice and zest and stir. Pour half of the marinade into the freezer bag or the bowl with the chicken pieces and reserve the other half of the marinade for basting. Marinate the chicken for 30 minutes or up to 3 hours in the refrigerator.
  • When ready to grill, prepare the grill by lightly oiling the grate with vegetable oil or cooking spray and set to medium high heat.
  • Grill the chicken, basting with the reserved marinade and turning often so each side browns and has light grill marks, until cooked through, about 15-20 minutes or until the chicken juices run clear. During the last 5 minutes of cooking add the 3 sliced lemons to the grill, turning once or twice. Allow the chicken to rest for 5 minutes before slicing and serve with the grilled lemons. Refrigerate leftovers for up to 3 days.

Time 13h5m

Yield 4 servings

Number Of Ingredients 6

1 bunch fresh oregano, leaves picked
4 cloves garlic, finely minced
Juice of 1 to 2 lemons
Kosher salt and freshly cracked black pepper
1 whole organic chicken, quartered

Steps:

GRILLED SPATCHCOCKED GREEK CHICKEN

Grilled Spatchcocked Greek Chicken image

We're big fans of spatchcocking - that's when the backbone of a chicken is removed and flattened out. The beauty of this extra step is that all parts of the chicken finish cooking at around the same time, so no more dry breast meat!

Provided by Food Network Kitchen

Categories     main-dish

Time 3h20m

Yield 4 servings

Number Of Ingredients 8

1 whole chicken (3 1/2 to 4 pounds) spatchcocked
1 cup extra-virgin olive oil
Juice of 2 lemons and zest of 1
3 garlic cloves, finely grated
2 tablespoons chopped fresh oregano
Kosher salt and freshly ground black pepper
2 scallions, sliced
1/4 cup roughly chopped fresh dill

Steps:

  • To spatchcock the chicken, use strong kitchen scissors or poultry shears and cut down either side of the spine. Pull out the spine, turn the chicken over and press down on the breast of the chicken to flatten it out to one thickness.
  • Whisk together the olive oil, lemon juice and zest, garlic, oregano, 1 1/2 teaspoons salt and 1/4 teaspoon pepper in a medium bowl. Put the chicken in a gallon-size resealable plastic bag in a rimmed dish. Pour in half of the marinade, reserving the rest for serving later. Seal the bag and rotate it around to evenly distribute the marinade. Refrigerate for 1 hour.
  • Remove the chicken from the marinade and discard the marinade. Pat the chicken dry with paper towels and season generously all over with salt and pepper; let sit at room temperature for 30 minutes.
  • Prepare a grill for medium indirect heat: For gas grills (with 3 or more burners), turn all the burners to medium-high heat; after about 15 minutes turn off one of the middle burners and turn the remaining burners down to medium. For charcoal grills, bank one chimney starter-full of lit and ashed-over charcoal briquettes to one side of the grill. Set up a drip pan on the other side to avoid flare-ups. (Be sure to consult the grill manufacturer's guide for best results.)
  • Place the chicken skin-side up on the indirect side of the grill with the legs facing the hotter side. Cover and cook until an instant-read thermometer inserted in the thickest part of the thigh (avoiding the bone) reads 150 to 160 degrees F (almost cooked through), about 50 minutes.
  • Move the chicken over to the direct-heat side of the grill. After 2 minutes, flip the chicken to char and crisp up the skin side, another 3 or 4 minutes. Check that the temperature in the thigh is now at least 165 degrees F. If it is not, then move the chicken back to the indirect side, cover and cook until the final temperature is reached. Remove from the grill; let rest 20 minutes before carving.
  • Stir the scallions and dill into the reserved marinade. Drizzle over the chicken or serve on the side.

THE BEST GREEK CHICKEN MARINADE

The Best Greek Chicken Marinade image

Made with lemon, garlic, and fresh herbs, this chicken marinade takes just minutes to whip together and calls for only a handful of fresh and healthy ingredients.

Provided by Jessica Randhawa

Categories     Main Course

Time 2h30m

Number Of Ingredients 11

1/2 cup olive oil
5 cloves garlic (minced)
2 lemons (juiced)
1 lemon (zested)
1 tablespoon fresh thyme (chopped)
1 tablespoon fresh oregano (chopped)
2 teaspoon fresh rosemary (chopped)
1 tablespoon fresh parsley (chopped)
1 teaspoon salt
1 teaspoon freshly ground black pepper
6 large chicken breasts ((approximately 4 pounds))

Steps:

  • Prepare the marinade. Add all ingredients for the marinade (olive oil, garlic, lemon juice, lemon zest, fresh thyme, fresh oregano, fresh rosemary, fresh parsley, salt, and black pepper) to a large shallow mixing bowl. Mix well to combine.
  • Marinate the chicken. Add the chicken breasts to the marinade and mix well to coat in the marinade. Allow chicken to marinate for at least 30 minutes to two hours.
  • Prepare the grill. Clean grill grates and lightly oil with vegetable oil or cooking spray. Set grill to medium-high heat.
  • Grill the chicken. Remove the chicken from the marinade and place directly on the grill. Discard remaining marinade. Cover the grill and allow chicken to cook for approximately 5 minutes before reducing heat to medium. Allow chicken to cook for an additional 2 minutes, then use tongs to flip each breast over. Grill for an additional 5-7 minutes (or longer), or until the thickest part of your chicken registers 160 degrees F. with a digital meat thermometer.
  • Allow chicken to rest. Remove chicken breasts from the grill and set aside to a clean plate. Tent with foil and allow to rest for 5 minutes before slicing and serving. Enjoy!

GREEK MARINADE FOR GRILLED CHICKEN

Greek Marinade for Grilled Chicken image

Chicken marinade with olive oil, garlic, oregano, thyme, lemon juice and red wine vinegar. Perfect for grilling or for souvlaki. Great with pork or lamb also.

Provided by Steve Cylka

Categories     Main

Time 30m

Number Of Ingredients 9

4 boneless skinless chicken breasts
1/3 cup olive oil
1/4 cup red wine vinegar
2 tbsp lemon juice
4 garlic cloves (, minced)
1 tbsp oregano
2 tsp thyme
1 tsp salt
1 tsp ground black pepper

Steps:

  • Mix all the ingredients, minus the chicken breast in a mason jar or a bowl.
  • Place the chicken breasts in a dish and pour the marinade over them, turning them in the marinade to ensure that they are completely coated. Cover the dish with a lid or plastic wrap and place in the fridge for at least an hour.
  • Preheat grill to medium high heat, around 450F.
  • Place the chicken on a hot grill and close the lid. After the chicken has cooked for about 5 minutes, lift the lid and turn the chicken breasts over. Close the lid and let the chicken cook some more. The chicken is finished cooking when the meat has an internal temperature of 165F, when checked with a digital thermometer. Grilling boneless skinless chicken breast takes about 12-15 minutes, but can vary depending on the size and thickness of the meat.
  • Remove from the grill and let the chicken breast rest for a few minutes before serving to allow the juices to draw back into the centre of the meat.
  • Serve with tzatziki, greek salad, and rice.

GRILLED GREEK CHICKEN

Grilled Greek Chicken image

The secret to this simple grilled chicken is a very powerful marinade and 'roasting' it slowly over semi-indirect heat on the grill.

Provided by Chef John

Categories     World Cuisine Recipes     European     Greek

Time 4h35m

Yield 6

Number Of Ingredients 9

6 cloves garlic (or more to taste), crushed or very finely minced
2 tablespoons dried oregano
1 teaspoon red pepper flakes, or to taste
1 teaspoon freshly ground black pepper
½ cup lemon juice
¼ cup olive oil
1 tablespoon distilled white vinegar
6 chicken leg quarters
1 lemon, cut into wedges

Steps:

  • Whisk garlic, oregano, red pepper flakes, black pepper, lemon juice, olive oil, and vinegar together in a large bowl.
  • Make 2 slashes on the skin side down to the bone in the thigh section and 1 in the leg section of each leg quarter. This will help infuse pieces with marinade and allow faster cooking on the grill. Season both sides of chicken generously with kosher salt. Transfer to bowl with marinade and thoroughly coat all sides. Cover and marinate in refrigerator 4 to 12 hours.
  • Transfer chicken to paper-towel-lined sheet pan to drain slightly.
  • Place leg quarters on grill skin side down over semi-direct heat (avoid intense direct heat so chicken cooks evenly and skin doesn't burn). Cook 6 or 7 minutes. Turn chicken and cook another 6 to 7 minutes. Continue cooking and turning until internal temperature reaches 165 degrees F (74 degrees C), 8 to 10 more minutes. Serve with lemon wedges.

  • Place the bird, breast side down, on a cutting board. Using kitchen shears or a large knife, cut along one side of the backbone from tail to neck. Pull open the bird, then cut along the other side of the backbone and discard the backbone or save it for stock. Turn the chicken breast side up and open it as flat as possible, as you would a book. Press down firmly on the breast to break the breastbone—you will hear and feel popping—and flatten the chicken.
  • Season the chicken generously on both sides with salt and pepper. Place the chicken in a large resealable plastic bag so that it lies flat or place it in a baking dish or other large container. Add the marinade and seal the bag, squishing the marinade around the chicken or turning the chicken to coat. Refrigerate for at least 24 hours and up to 48 hours—the longer the more flavorful. Be sure to turn the bag or chicken several times during marinating.
  • At least 30 minutes before you’re ready to grill, remove the chicken from the refrigerator. Drain and discard the marinade. Pat the chicken dry.
  • Prepare a charcoal or gas grill for indirect grilling over medium heat. If using charcoal, pile the lit coals on one side of the grill and place a drip pan in the area without coals. If using gas, preheat the burners, then turn off 1 or more of the burners to create a cooler zone. The temperature inside the grill should be 350º to 375ºF (180º to 190ºC). Brush and oil the grill grate.

  • In a large bowl, combine olive oil, minced garlic, rosemary, parsley, thyme, oregano, salt, pepper, lemon juice and lemon zest. Add the chicken breasts to the marinade, tossing to coat. Cover the bowl with plastic wrap then refrigerate for 1–3 hours.
  • Remove the chicken from the marinade then remove excessive herbs and garlic clinging to the chicken, but leave just a little bit. Grill the chicken breasts for about 4–5 minutes per side until they’re cooked through. Transfer the grilled chicken to clean a plate then allow to rest for about 5 minutes.
  • Serve the chicken garnished with a sprinkling of feta cheese, kalamata olives and diced tomato. Enjoy!
