GREEK SALAD WITH OREGANO MARINATED CHICKEN

1 lemon, juiced
2 tablespoons extra-virgin olive oil
1 teaspoon dried oregano
A couple good pinches salt
10 grinds black pepper
4 (6 to 7-ounce) boneless skinless chicken breasts
1/4 cup extra-virgin olive oil
2 tablespoons red wine vinegar
1 lemon, juiced
2 cloves garlic, smashed with the side of your chef's knife
1 teaspoon dried oregano
3 pinches salt
10 to 15 grinds black pepper
2 to 3 hearts romaine lettuce
1 English cucumber, peeled, cut in 1/2 lengthwise, then cut into 1/2-inch chunks
3 vine-ripened tomatoes (about 3/4-pound), cored and cut into 1/2-inch chunks
1/2 red onion, very thinly sliced
1/2 cup pitted kalamata olives, coarsely chopped
1/4 cup crumbled feta cheese

Steps:

  • To marinate the chicken: In a non-reactive dish, combine the lemon juice, olive oil, oregano, salt, and pepper and mix together. Add the chicken breasts to the dish and rub both sides in the mixture. Cover the dish with plastic wrap and let marinate in the refrigerator for at least 30 minutes and up to 4 hours.
  • To make the dressing: Combine all the ingredients in a resealable container and shake vigorously. Refrigerate until ready to serve, and then bring to room temperature before tossing salad.
  • Assemble the salad: cut off any dark tips and the bitter white bottoms from the romaine leaves. Cut the lettuce into 1-inch strips and place in a bowl that is large enough to hold all the salad ingredients comfortably. Scatter cucumbers, tomatoes, red onion, olives, and feta over the top. You can prepare the salad up to a few hours in advance. Cover it with a moist paper towel and refrigerate until 30 minutes before serving.
  • To cook the chicken: Heat a nonstick skillet or grill pan over high heat. Add the chicken breasts and cook, turning once, until well browned, about 4 to 5 minutes on each side or until cooked through. Let the chicken rest on a cutting board for a few minutes before slicing it into thin strips.
  • Give the dressing a good shake and pour it into a nice little serving bowl, using the lid to strain out the garlic.
  • Toss salad just before serving and fan chicken out on top.

GRILLED GREEK CHICKEN

1/2 cup extra-virgin olive oil
1 bunch fresh oregano, leaves picked
4 cloves garlic, finely minced
Juice of 1 to 2 lemons
Kosher salt and freshly cracked black pepper
1 whole organic chicken, quartered

Steps:

  • In a medium bowl, whisk together the oil, oregano leaves, garlic, lemon juice and salt and pepper, to taste. Pat the chicken dry and place in a re-sealable plastic bag. Pour the mixture over the chicken and seal the bag, pressing out any excess air, and then turn the bag over several times to distribute the marinade. Put the chicken bag in a shallow dish and marinate, in the refrigerator, for at least 12 hours and up to 24 hours.
  • Preheat the oven to 350 degree F.
  • Place a grill pan over moderately-high heat until very hot. Place the chicken skin-side down and cook until well browned, 10 to 13 minutes. Flip the chicken over and cook for another 8 to 10 minutes. Transfer the chicken to a sheet pan and finish cooking in the oven until golden brown and cooked through, 25 to 30 minutes. Let the chicken rest 10 minutes before serving.

Hands up who doesn't like marinated chicken.... Yep, thought so - there isn't a single hand. So pleeaase try these Greek baked chicken drumsticks, wings or thighs (your choice). They're sticky and caramelised and full of gorgeous Greek flavours.

3 pounds chicken pieces ((drumsticks, wings and/or thighs - see notes))
1/3 cup olive oil
1 large lemon ((zest and juice))
7 garlic cloves (crushed)
3 tablespoons dried oregano
1½ tablespoons honey
1½ teaspoons salt
black pepper (to taste)
1 tablespoon honey
1 small lemon (for squeezing over at the end)
a good sprinkle of crumbled feta & a big handful of olives (optional)

Steps:

  • Pierce a few holes in the chicken wings with a skewer to help the marinade infuse into the flesh.
  • Put all the marinade ingredients into a big ziplock bag, then add the chicken pieces to the bag. Massage the bag to make sure all the chicken gets well coated in the marinade. Leave for the flavours to infuse for at least half an hour (overnight is even better!).
  • Preheat oven to 180C/350F. Line a rimmed baking tray with foil or baking paper and put a metal rack on the tray. Spray the rack with oil.
  • Shake any excess marinade off the chicken (reserve the marinade) and place on the rack (skin side up if using wings or thighs). Bake for 35 to 55 minutes or until sticky and golden and the juices run clear when the chicken is poked.
  • Mix the tablespoon of honey into the reserved marinade. Then turn and baste the chicken all over 2 to 3 times during cooking.
  • Pile the cooked chicken pieces into a bowl. Drizzle with the juice of ½ a lemon and garnish with lemon slices and the feta and olives, if using.

4 boneless skinless chicken breasts
1/3 cup olive oil
1/4 cup red wine vinegar
2 tbsp lemon juice
4 garlic cloves (, minced)

  • Mix all the ingredients, minus the chicken breast in a mason jar or a bowl.
  • Place the chicken breasts in a dish and pour the marinade over them, turning them in the marinade to ensure that they are completely coated. Cover the dish with a lid or plastic wrap and place in the fridge for at least an hour.
  • Preheat grill to medium high heat, around 450F.
  • Place the chicken on a hot grill and close the lid. After the chicken has cooked for about 5 minutes, lift the lid and turn the chicken breasts over. Close the lid and let the chicken cook some more. The chicken is finished cooking when the meat has an internal temperature of 165F, when checked with a digital thermometer. Grilling boneless skinless chicken breast takes about 12-15 minutes, but can vary depending on the size and thickness of the meat.
  • Remove from the grill and let the chicken breast rest for a few minutes before serving to allow the juices to draw back into the centre of the meat.
  • Serve with tzatziki, greek salad, and rice.

1 pound boneless (, skinless chicken breasts (about 2 large breasts))
⅓ cup plain Greek yogurt
¼ cup olive oil
4 lemons
4-5 cloves garlic (, pressed or minced)
2 tablespoons dried oregano
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper

Steps:

  • Place the chicken pieces in a freezer bag or a bowl and set aside.
  • Add the Greek yogurt and olive oil to a medium size bowl. Zest one of the lemons and add to the bowl. Juice that lemon into the bowl with the zest. Slice the other three lemons and set aside. Add the minced garlic, oregano, kosher salt and black pepper to the lemon juice and zest and stir. Pour half of the marinade into the freezer bag or the bowl with the chicken pieces and reserve the other half of the marinade for basting. Marinate the chicken for 30 minutes or up to 3 hours in the refrigerator.
  • When ready to grill, prepare the grill by lightly oiling the grate with vegetable oil or cooking spray and set to medium high heat.

1 kg top sirloin beef cut in chunks (35 oz.)
2 tsps mustard
1-2 tsps honey
juice of 1 lemon

1/4 cup red wine vinegar
1/4 cup fresh lemon juice

5 roma tomatoes, diced into 3/4-inch pieces
1 14.5 ounce can artichoke hearts, quartered

1 teaspoon dried oregano
1/2 teaspoon minced fresh dill

Steps:

  • For the pork marinade, place the vinegar, lemon juice, olive oil, garlic, oregano, salt, and pepper into a gallon sized ziploc bag. Close the bag and use hands to mix the marinade together in the bag. Add the pork and marinate for up to 4 hours. Allow pork to sit at room temperature for 30 minutes before grilling.
  • For the tzatziki, place the diced cucumber in a food processor and pulse until finely chopped. In a mixing bowl, mix together the cucumber, yogurt, olive oil, lemon juice, and dill. Season with kosher salt and pepper to taste. Transfer to a serving bowl and refrigerate for at least an hour before serving.
  • For the tomato and artichoke salad, gently combine the tomatoes, artichokes, feta, olives, onion, garlic, oregano, and dill in a mixing bowl. Season with kosher salt and pepper to taste. Let stand at room temperature for at least an hour before serving.
  • Grill the pork on medium heat for 20-30 minutes, rotating the pork every ten minutes or so. Allow the pork to rest for 10 minutes before cutting into 1/2 inch-thick slices.
  • To serve, place a few slices of pork in the middle of the pita and add some of the tomato and artichoke salad and tzatziki sauce on top. Fold up pita and enjoy!

This would also be a great marinade for poultry. This is simple, quick and quite tasty!! Please allow time for marinading, as it isn't included in the prep time. Cavender's All Purpose Greek Seasoning includes salt, pepper, oregano, garlic, onion powder, parsley, flavor based seasoning and 5 other spices not listed. I would recommend grilling the shrimp and using the marinade to baste the shrimp during the initial cook time. This marinade will easily cover/marinade 1 1/2 lbs shrimp.
