This is one of favourite comfort food which is so simple to make and the flavours, amazing!! Coming from a place where rice is staple diet, there are some amazing things you can do to rice to give a zing, a zang and a twist to the same white rice.

Number Of Ingredients 9

Basmati Rice: 2 cups( cooked in 2 cups of water and leave it cool).
1 Big lemon: Squeeze the juice and keep it aside.
2 sprigs fresh curry leaves
1 tsp each of mustard seeds, black gram lentils, yellow split lentils.
1 tsp turmeric
2 green chillies
1 inch ginger cut into very small pieces
1/4th cup groundnuts and cashewnuts(optional)
1 tbsp of sunflower oil

Steps:

  • Now take a saucepan and add tbsp of sunflower oil.
  • Add groundnuts, cashewnuts, mustard seeds, black gram and yellow split lentils and saute for 2 minutes.
  • As soon as the mustard seeds start spluttering, add green chillies, ginger pieces, curry leaves and saute for 1 minute
  • Now add turmeric and salt. Take the freshly squeezed lemon and pour the juice on and put a lid on the saucepan.
  • Switch off and mix this with rice. Serve hot or cold with a pickle or on its own.

1 tablespoon vegetable oil
1 small yellow onion, finely diced
2 cups long-grain white rice
Kosher salt
1/4 cup fresh lemon juice
3 tablespoons chopped fresh mint, plus more for garnish

Steps:

  • Heat the oil in a medium saucepan over medium heat. Add the onions and cook until soft, taking care not to let them color, 3 to 5 minutes. Add the rice and stir to coat with the oil. Add 3 cups water and 1 teaspoon salt and bring to a boil. Reduce the heat to low, then cover and cook until all of the liquid has been absorbed, about 20 minutes. Remove from the heat and fluff with a fork to separate the grains. Let sit, covered, for 5 to 10 minutes.
  • Add the lemon juice and mint to the rice and toss to distribute evenly.
  • Serve hot, garnished with chopped mint.

8 cups chicken broth
½ cup fresh lemon juice
½ cup shredded carrots
½ cup chopped onion
½ cup chopped celery
6 tablespoons chicken soup base

1 cup diced, cooked chicken meat
16 slices lemon

Steps:

  • In a large pot, combine the chicken broth, lemon juice, carrots, onions, celery, soup base, and white pepper. Bring to a boil on high, then simmer for 20 minutes.
  • Blend the butter and the flour together. Then gradually add it to the soup mixture. Simmer for 10 minutes more, stirring frequently.
  • Meanwhile, beat the egg yolks until light in color. Gradually add some of the hot soup to the egg yolks, stirring constantly. Return the egg mixture to the soup pot and heat through. Add the rice and chicken. Ladle hot soup into bowls and garnish with lemon slices.

2 cups converted long-grain white rice
1 (32 fluid ounce) container chicken broth
½ lemon, juiced
1 teaspoon salt
3 bay leaves

Steps:

  • Melt butter in a pot over low heat. Pour in rice and stir to coat in butter. Let simmer on low heat, stirring occasionally, until toasted but not burnt, about 10 minutes.
  • Pour chicken broth, lemon juice, salt, and bay leaves into rice mixture. Bring to a rapid boil; continue to boil for 5 minutes. Reduce heat to a simmer, cover, and let simmer for 20 minutes.
  • Remove from heat and let sit, covered, for 10 minutes. Fluff with a fork and serve.

2 cups long grain rice (uncooked)
Early Harvest Greek extra virgin olive oil
1 medium yellow onion, chopped (just over 1 cup chopped onions)
1 garlic clove, minced
1/2 cup orzo pasta
2 lemons, juice of (PLUS zest of 1 lemon)
2 cups low sodium broth (chicken or vegetable broth will work)
Pinch salt
Large handful chopped fresh parsley
1 tsp dill weed (dry dill)

Steps:

  • Wash rice well and then soak it for about 15 to 20 minutes in plenty of cold water (enough to cover the rice by 1 inch). You should be able to easily break a grain of rice by simply placing it between your thumb and index finger. Drain well.
  • Heat about 3 tbsp extra virgin olive oil in a large sauce pan with a lid (like this one) until oil is shimmering but not smoking. Add onions and cook for about 3 to 4 minutes until translucent. Add garlic and orzo pasta. Toss around for a bit until the orzo has gained some color then stir in the rice. Toss to coat.
  • Now add lemon juice and broth. Bring liquid to a rolling boil (it should reduce a little), then turn heat to low. Cover and let cook for about 20 minutes or until rice is done (liquid should be fully absorbed and rice should be tender but not sticky.)
  • Remove rice from heat. For best results, leave it covered and do not disturb rice for about 10 minutes or so.
  • Uncover and stir in parsley, dill weed and lemon zest. If you like, add a few slices of lemon on top for garnish. Enjoy!

1 1/2 cups white rice
6 tbsp unsalted butter
6 tbsp lemon juice
4 cups chicken broth (2 14.5 oz cans plus 1.5 oz water)

Steps:

  • Add the butter to a medium pot, and melt it on medium heat.
  • At the same time, heat the chicken broth in a smaller pot on medium heat.
  • Add in the rice, and coat it in the butter. Lightly brown the rice, and stir constantly with a wooden spoon to make sure it doesn't burn.
  • Once the rice is well coated in the butter, add the lemon juice. Continue to stir.
  • Using a ladle, add the chicken broth a ladle at a time to the rice. Stir constantly. Add more broth once the rice has absorbed the broth that's been added.
  • Once the rice has absorbed all of the broth, take it off the heat. Let it cool for 10 minutes.

3 cups basmati rice
2 tablespoons olive oil
1/2 medium onion (sliced)
5 cloves garlic (sliced)
1 large lemon - zested and then juiced
1 teaspoon salt
1/2 teaspoon cumin
1/2 teaspoon oregano
1 tablespoon fresh dill - more for the top
Chicken broth

Steps:

  • I rinsed 3 cups of white basmati rice until the water ran clear and then let the rice sit in water while I prepped the other ingredients.
  • In a saucepan on the stove, heat your olive oil. Add the onions and garlic and the salt, cumin, and oregano. Saute. Add the lemon zest and the three cups of basmati rice, drained. Add the lemon juice to the rice and stir it well to coat your rice with the olive oil, herbs, and lemon.
  • Transfer to your rice cooker - or continue cooking on the stovetop.
  • I transferred the very flavorful rice to my rice cooker and added enough chicken broth to go a little higher than the 3 cup mark for white rice.
  • Turn it on! That's it!
  • At the end, I added additional lemon juice and fresh dill. I had read in some places to add additional butter at the end, but I did not do that. It tasted fine! I will definitely try to add butter on another day - I usually don't say no to butter.

Steps:

  • Rinse the rice well a few times until the water runs clear. Put the rice in a bowl and add water to cover it by 1 inch. Let is sit to soak for 20 minutes or until you are easily able to break one grain of rice between your fingers.
  • Heat ¼ cup extra virgin olive oil in a braising pan. Add the onions and cook for 5 minutes, stirring regularly, until soft and golden brown. Add the spinach, lemon juice, garlic, tomato paste, and a big pinch of kosher salt and black pepper. Sautee the spinach until just wilted. Stir in the mint and dill weed.
  • Drain the rice well and add it to the pan. Add 1 ½ cups of warm water. Bring to a boil for 3 minutes until the water reduces a bit. Turn the heat to low and cover.
  • Let the rice cook undisturbed for 20 minutes or until the rice is tender and fully cooked through and all the liquid has been absorbed.

1 cup plus 2 tablespoons water
1-1/2 teaspoons butter
1 teaspoon chicken bouillon granules

2 Tbs EVOO (extra virgin olive oil)
1 large Sweet Onion chopped
3 cloves minced Garlic
4 cups Chicken Broth
1 Bay Leaf
1/2 tsp Sea Salt
1/2 tsp Black Pepper
2 boneless skinless Chicken Breasts
1/2 cup Arborio Rice
Juice from 1 Lemon
3 Eggs
1/4 cup chopped fresh Dill Weed

Steps:

  • In 6 Qt Dutch Oven add EVOO and Onion.
  • Saute over med/high heat 5-6 min until Onions are translucent and softened.
  • Add Garlic and saute 1 minutes.
  • Add Chicken Broth, Bay Leaf, Salt, Pepper, and Chicken Breasts.
  • Bring to boil over med/high heat, cover and turn heat down to med/low.
  • Let simmer 20 minutes.
  • Remove Chicken and shred.
  • Add Chicken back to the pot.
  • Add Rice.
  • Cover and simmer 20 more minutes.
  • Remove Bay Leaf.
  • In a small bowl whisk together Eggs and Lemon Juice.
  • Slowly add in 1 ladle of the broth while whisking, then add egg mixture into the soup.
  • Add in Dill Weed and stir.
  • Let cook about 5 minutes before serving.
  • Taste and add more Lemon juice if needed.
  • Garnish with Lemon Slices and more fresh Dill Weed.
  • Enjoy!

  • To prepare this delicious Greek rice pudding recipe, heat the milk and rice in a large heavy bottomed saucepan. Simmer over medium heat, stirring constantly, until it comes to just below boiling point.
