Steps:
- Preheat the oven to 200C/400F/Gas 6.
- Cut the potatoes into bite sized chunks and put them in a large ovenproof dish.
- Add the olive oil, lemon rind and juice, water, garlic, bay leaves, rosemary, thyme, oregano, sugar, salt and pepper.
- Stir well.
- Bake the potatoes for 1-1 1/4 hours or until they are cooked through and crispy.
- Stir every now and then during cooking to coat with the herby oil.
- Finally sprinkle with the chopped parsley.
GREEK LEMON POTATOES
Recipe video above. The idea behind this recipe is that the potatoes suck up the amazing lemon-garlic-oregano flavoured broth, then roasted until golden crispy edges. These won't go super crunchy because of the way they're cooked - but you won't miss the crunch because they have flavour unlike any other ordinary roasted potato! - Preheat oven to 200°C/390°F (180°Cfan).
- Cut potatoes: Peel potatoes and cut large ones into thick wedges - about 3cm / 1.2" thick - and medium ones into 3 (see photo in post).
- Coat potatoes: Place potatoes in a roasting pan with all the other ingredients. Toss well.
- Roast 45 minutes: Roast for 20 minutes. Turn potatoes, roast for a further 25 to 30 minutes until the liquid is mostly absorbed by potatoes/evaporated and you're left with mainly oil in the pan.
- To crisp the potatoes (optional): Transfer potatoes to a separate tray. (Note 3) Tilt the original roasting pan and scoop off as much of the oil as you can (some juices is ok), then drizzle over the potatoes.
- Roast 35 minutes: Transfer potatoes to oven and roast for 35 - 40 minutes, turning once or twice, until potatoes are golden and a bit crispy on the edges.
- Heat pan juices: Return pan #1 with the garlic juices to the oven for the last 5 - 10 minutes or so to reduce down and make the garlic golden. (Optional, Note 4)
- Plate up: Transfer potatoes to serving platter. Drizzle over the reduced garlic pan juices (or toss potatoes in the pan). Serve, garnished with lemon wedges and oregano if desired.

- Arrange potatoes in a single layer in a large baking dish or roasting pan.

This Greek Lemon Potatoes recipe uses the best russet Idaho® Potatoes that are roasted in a very flavorful liquid made from chicken broth, extra virgin olive oil, fresh lemon juice, garlic and dry oregano. This is a perfect side dish for the Easter holiday or even a quiet night of Greek food at home.

- Preheat your oven to 400°F.
- Peel and cut your Idaho® Potatoes into halves or quarters. Place them into the "9X13" baking dish.
- Combine Chicken Broth, Olive Oil, Lemon Juice, Garlic, and Oregano (now would be the time to check for the saltiness of your liquid). Keep in mind, this is the liquid in which the potatoes will cook and they'll soak in all these flavors, so it needs to be well seasoned. If you taste it and it is too bland, then add more salt.
- Add Semolina to the liquid, mix it well and then pour it over the potatoes. Cover the potatoes with the foil and roast for 40 minutes.
- Remove from the oven, take off the foil, mix the potatoes and put them back into the oven, uncovered for 20-30 minutes, until most of the liquid has evaporated and the edges are slightly crispy.
- Remove potatoes from the oven, and let them cool off slightly before serving. You may garnish some parsley and some fresh lemon slices for an extra touch. Serve them on your Easter table and I swear they'll have no competition!

- Peel potatoes and cut them in half (from medium size potatoes, quarter if large).
- Let them stand in water while preparing sauce.
- Combine all other ingredients in a gallon size"zipper" bag, and shake to combine.
- Dry off the potatoes, and put all of them in the bag and let marinate for 2 hours.
- Preheat oven to 400 degrees.
- Put the potatoes and marinade in a large casserole, preferrably a white pyrex, approximately 13 x 9 x 3 oval.
- Roast for 1hr 10min, turning occasionally.
- There should be plenty of sauce left over after roasting.
- You can put these under the broiler for 5 minutes to crisp them up if you prefer.

- Remember to BOIL the chicken broth.
- Spray a 9- by 13-in. baking dish with cooking spray.
- In a large bowl, toss potato cubes with lemon juice, olive oil, oregano, lemon zest, salt, and garlic; layer slices in baking dish.

- Combine all ingredients in a large zip lock bag. Let marinate all day in the fridge or until you're ready to start cooking!
- Pour all of mixture, including liquids on a large rimmed baking sheet lined with foil and sprayed generously with cooking spray.
