Just like a Greek restaurant or even better! Whether you decide to grill them or fry them in a cast iron skillet (or regular pan), these homemade Greek Lamb Chops are a family favourite! Once you try these you will never look back!

1/4 cup olive oil
Juice of 1 lemon ((about 1/4 cup lemon juice))
2 tsp dried oregano (preferably Greek, or 1/2 cup chopped fresh)
4 cloves garlic (minced)
1 tsp salt
1/2 tsp freshly ground black pepper
8 lamb chops
1 tbsp olive oil (for cooking)

Steps:

  • Using paper towels, pat dry chops and discard any shards or bone fragments.
  • Mix all of the ingredients together in a small jug or bowl.
  • Arrange lamb chops in a large baking dish or on a large plate, and pour the marinade all over the lamb, rubbing it into the meat. Cover with plastic wrap and marinate for half an hour, or for a deeper flavour, marinate overnight in the refrigerator, turning the chops from time to time (before cooking, let lamb chops sit at room temp 30 minutes).
  • Heat oil in a pan (cast iron preferably or grill plates) over high heat until just starting to smoke. Fry or grill lamb in 2 batches for 3-4 minutes each side, depending on thickness until done to your liking. (Usually, at 3 minutes per side they are medium, and at 4 minutes they are medium-well.)
  • Let rest for 5 minutes before serving.Sprinkle with a little extra dried oregano for added flavour and a little extra lemon juice (optional).

  • Arrange the chops on a rack in a pan, drizzle with any remaining marinade and grill/broil in oven for about 3 minutes each side at medium high heat for medium-rare, or until cooked to your liking.

1 rack of lamb
coarse salt and ground black pepper
2 tbsp olive oil
1 tbsp fresh rosemary (finely chopped)
1 tbsp fresh thyme leaves
4 to 5 garlic cloves (pressed)
2 to 3 tbsp balsamic vinegar
1/4 cup red wine
1 1/2 cups greek yogurt (higher fat content)
1 English cucumber (or 4 cocktail cucumbers)
4 garlic cloves (pressed)
2 tbsp olive oil
2 tbsp fresh chopped dill
1 tbsp fresh chopped mint
salt and pepper (to taste)

Steps:

  • This recipe is great for scaling up for more servings! Increase the marinade ingredients for each additional rack. First, carefully portion the rack of lamb into single chops using a large, sharp knife. Turn the rack towards yourself to see the bones for easier portioning. Place the portioned chops into a casserole dish. Watch my video recipe to see how it's done.
  • Drizzle a the olive oil over the lamb chops, then season generously with coarse salt and black pepper; I recommend using Maldon salt flakes or kosher salt. Season both sides of the lamb chops. Next, sprinkle the fresh herbs over the chops. Gently press the pressed garlic into the chops so it sticks better to the meat. Drizzle the vinegar and wine over the chops and turn them to ensure they are well coated. Marinate the chops for 30 minutes in the refrigerator, turning after 15 minutes to marinate the meat evenly.
  • While the lamb chops are marinating, prepare your choice of dipping sauces and side dishes. Check out my recommendations above in my recipe post! Once the lamb is marinated, preheat an outdoor grill to 500F for 5 minutes, until the grill grates are extra hot. Reduce the flame to medium and add the lamb chops, spacing them 3 to 4 inches apart.
  • Grill the chops for 2 to 3 minutes per side, more for thicker chops. Once both sides are grilled, transfer them to the top rack of the grill, or to the side. Finish cooking the lamb with indirect heat for another 2 to 3 minutes. These instructions are for medium-done chops. Grill for 1 minute less per side for medium-rare doneness. Ensure that the temperature reaches 145F. Remove the chops from the grill and let the meat rest for 5 minutes before serving.
  • For the tzatziki sauce: gently peel the cucumber(s) and remove large seeds, if desired. Grate the cucumber(s) into a bowl lined with a cheesecloth; you'll need approximately 1 1/2 cups of grated cucumber. Season the cucumber lightly with salt and let it stand for 5 minutes to release water. Wring the cucumbers of excess water as much as possible. Place the grated cucumber into a large bowl with the greek yogurt, pressed garlic, chopped dill and mint. Add the olive oil and season to taste with salt and pepper. If desired, add also 1 tablespoon of lemon juice.

1 tablespoon olive oil
1 cup chicken broth
2 cloves garlic, peeled and sliced
1 cup grape tomatoes, halved
1/2 cup kalamata olive, pitted and sliced

  • bring a pot of salted water to a boil.
  • add orzo, cook according to package directions, drain.
  • transfer to a platter, toss in feta cheese, set aside.
  • meanwhile, in a saute pan heat olive oil.
  • season lamb chops w/salt and pepper, saute 5 minutes per side, remove and keep warm.
  • add 1/2 c chicken broth to deglaze the pan, scraping up browned bits.
  • add garlic, cook for a minute.
  • add tomatoes, olives, remaining broth, cook for 2 minutes.
  • add mint, oregano, lemon juice and zest, cook for 1 minute.
  • season to taste with salt and pepper.
  • add lamb chope on top of orzo, pour tomato olive mixture over all. top with crumbled feta.
  • garnish with mint and lemon slices, if desired.

Coming from "Greek Roots" I have been indulging myself for years cooking dishes from the "Old World" and creating my own along the way. Here is my latest creation, so good and easy to make.

4 -6 small t-bone type lamb chops (thick cut)
1/4 cup olive oil
1 (14 ounce) can tomatoes, diced
1 (8 ounce) can tomato sauce
1 1/2 tablespoons Cavenders All Purpose Greek Seasoning, adjust to taste ((found in most stores, spice section)
1 cup dried parsley
1 tablespoon cinnamon
1 (14 ounce) can Italian cut green beans or 1 (14 ounce) can frozen Italian cut green beans
3/4 cup instant rice
1/2 cup Burgundy wine (optional)

Steps:

  • In a large skillet, medium coat lamb chops with the Greek seasoning and brown with the olive oil.
  • Remove chops and add the diced tomatoes, tomato sauce, cinnamon, parsley and the remainder of the Greek seasoning (do not drain the olive oil). Stir and sauté sauce mixture for approx 10 min on low-med heat uncovered.
  • Return chops to the center area of pan and spoon on sauce mixture. Note: It is important that you turn the chops 3 or 4 times during the whole process keeping them heavenly coated with sauce. Reduce heat to low temp and cover.
  • Simmer 1 hour stirring periodically.
  • Remove chops again and add rice and green beans, mixing together well.
  • Return chops and simmer for another =hour or until meat is very tender and easy to pull from bone.
  • Enjoy with a nice Greek salad!

Steps:

  • Place the garlic, rosemary, oregano, 1 1/2 teaspoons salt, and 3/4 teaspoon pepper in the bowl of a food processor fitted with the steel blade and pulse until the herbs are finely minced. Add the lemon juice, olive oil, and red wine and combine. Place the chops in a glass or ceramic dish just large enough to hold them in a single layer. Pour the marinade over the chops, turning to coat both sides. Cover with plastic wrap and refrigerate for at least 2 hours but preferably overnight.
  • When ready to cook, prepare a grill with one layer of hot coals or turn a gas grill to medium-high heat. Remove the lamb from the marinade, sprinkle generously with salt and pepper, and grill for 4 to 5 minutes on each side. Remove to a platter, cover tightly with aluminum foil, and set aside to rest for 10 minutes. Serve hot with the cold Yogurt Mint Sauce.

  • PREPARE LAMB CHOPS Preheat oven to 180ºC (360ºF) fan bake. Cut eggplant into small cubes (about the same size as the cherry tomatoes). Slice lemon into wedges, thinly slice onion and crush garlic.

  • Prep your grill to 350°F (See Note 2). Grill to your liking, although for a nice medium with a little pink I do 3-4 minutes per side until internal temp reaches 130°F over medium heat.
