GREEK OMELETTE RECIPE WITH FETA CHEESE
Add a mediterannean twist to your plate with this flavourful Greek omelette recipe with feta cheese, black olives and tomato!

- To make this delicious Greek omelette recipe start by preparing the ingredients first.
- Remove the seeds and extra juice from the tomato and cut the flesh in small cubes. Set aside.
- Remove the pits from the olives and cut in small pieces. Set aside.
- Crumble the feta cheese with your hands or using a fork and set side.
- Crack the eggs in a bowl and season with salt and pepper. Beat the eggs with a fork until combined.
- Heat a small-medium non stick frying pan over medium heat.
- Add 2 tbsps olive oil and the beaten eggs. Using a spatula, drag the omelette towards the one end of the pan and tilt the pan to let the raw eggs fill the empty side. Repeat this process for approx. 1-2 minutes until the omelette is cooked. (the eggs are set but the top is still slightly moist)
- Remove the pan from the heat and add the tomato, feta cheese, olives, oregano.
- Slip the spatula underneath omelette, tip to loosen and gently fold omelette in half. Sprinkle with grated cheese and serve.

- In a large bowl, beat together eggs and cream until well blended. Stir in all other ingredients. Spoon into a well-greased muffin tin, dividing evenly among the cups.
- Bake at 350 for 20 minutes or until set in the center. Allow them to cool slightly before removing them from the muffin tin. Allow them to cool fully before placing them in a zipper-seal bag and storing them in the fridge. Eat within 5 days.

- 1. Preheat oven at 350 F. In a large mixing bowl, beat eggs and milk. Add salt and pepper to taste.
- 2. Spray muffin pans with Pam. Insert ham slices into muffin pan wells. Spoon 1 Tbsp each of cooked, crumbled turkey sausage into each ham lined well.
- 3. Evenly distribute the diced mushrooms and tomatoes into each well.
- 4. Then add 1 Tbsp of cheese on top of each.
- 5. Pour egg mixture about 3/4 full into each well until all are filled. Evenly distribute any remaining egg mixture.
- 6. Bake at 350* for 20 minutes. If you don't mind a few extra calories, add a little more shredded cheese to the top of the omelets the last 5 minutes of baking. Serve with whatever sides you like. Fruit, hash-browns, English muffins, etc.
OMELET MUFFINS
I make these muffins on a Sunday night and freeze them. I take a couple of them to work and just pop them in the microwave for 45 seconds to 1 minute.

- Preheat the oven to 350 degrees F (175 degrees C). Lightly grease 2 muffin tins. Line a baking sheet with aluminum foil.
- Lay bacon strips in a single layer on the baking sheet. Bake in the preheated oven until browned and crisp, about 30 minutes. Reserve grease. Drain bacon slices on paper towels. Chop into small pieces.
- Transfer bacon grease to a skillet. Cook onion in the skillet over medium heat until transparent. Drain on paper towels.
- Whisk eggs and milk together in a bowl. Add bacon, onion, spinach, Colby Jack cheese, hot pepper sauce, Italian seasoning, salt, and pepper. Scoop mixture into muffin pans using an ice cream scoop, filling cups 3/4 full.
- Bake in the preheated oven until muffins harden at the edges, about 50 minutes.

- Heat 1 tablespoon oil in a medium skillet over medium heat. Add onion and 1/8 teaspoon salt; cook, stirring, until starting to brown, about 4 minutes. Remove from heat. Set aside to cool for 5 minutes.
- Whisk eggs, spinach, feta, milk, dill, pepper, the remaining 1/8 teaspoon salt and the cooked onions in a large bowl.
- Lay phyllo sheets on a clean, dry work surface. (Cover the sheets with a kitchen towel to keep them from drying out while you assemble the cups.) Pour the remaining 2 tablespoons oil in a small bowl. Place a sheet of phyllo on a clean cutting board. Lightly brush with oil. Lay another sheet of phyllo on top and lightly brush with oil. Cut the phyllo into 6 pieces (in half horizontally and in thirds vertically). Place one square in a muffin cup, pressing it down the bottom and sides. Add another square, alternating the position so the sides of the muffin cup are covered. Repeat the process with the remaining squares; then with the remaining phyllo sheets and oil.
