GREEK EASTER EGGS

Greek Easter Eggs image

I found how to make this dye online, but I changed the technique because I did not get good results that way. The first Easter that I celebrated with my husband's family was wonderful. After Easter dinner, a tray of red-dyed hard-boiled eggs was placed on the table. (The deep red eggs remind us of the blood of Christ.) Everyone chose one egg and then paired up two-by-two. Taking the eggs and matching fat or pointed end to end, as they said 'Christos Anesti' they tapped the ends of the eggs together and whoever's egg remained unbroken 'won'. This continued (both ends of the egg can be used as long as matching ends tap each other) until the last person had at least one end of their egg in tact. This was a fun and joy-filled way to help celebrate.

Time 2h15m

Yield 12

Number Of Ingredients 5

5 cups water
12 yellow onions, skins removed and reserved
2 tablespoons white vinegar
12 eggs
olive oil

Steps:

  • Combine water, onion skins, and vinegar in a pot; bring to a boil. Set aside onions for another use. Reduce heat, cover pot, and simmer, stirring occasionally to make sure skins are submerged, for 30 minutes. Remove pot from heat, remove cover, and cool dye to room temperature, at least 30 minutes.
  • Remove skins from dye and discard skins. Place eggs in the dye and bring to a boil; cook for 15 minutes. Remove pot from heat and leave eggs in the dye until a deep red color is reached, about 30 minutes more.
  • Transfer eggs to a wire rack to dry, about 15 minutes.
  • Rub olive oil onto each egg to make them shiny. Store eggs in the refrigerator.

HOW TO MAKE EASY GREEK EASTER BREAD - STEP BY STEP

How to Make Easy Greek Easter Bread - Step by Step image

A delicious and highly aromatic Greek Easter bread that is perfect to have at breakfast time or as part of a Spring brunch

Provided by Marilena Leavitt

Categories     Holiday Bread

Time 1h20m

Yield 4-5 loaves

Number Of Ingredients 16

4 oz. butter, room temperature
1½ cups sugar
1¼ cups whole milk
---- zests of a lemon & an orange
3 TBSP. fresh orange juice
½ cup warm/tepid water
2 tsp. sugar
1¼ TBSP. active dry yeast
3 large eggs
7½ cups all purpose, unbleached flour
2 tsps. ground mahlepi
--- pinch ground mastic (optional - I don't always use it)
½ TBSP. olive oil
1 large egg
1 TBSP. milk
¼ cup sesame seeds (or sliced almonds)

Steps:

  • In a large pot over medium low heat add the butter, the sugar and the milk. Cook for a few minutes, until the butter is melted. Add the zests, remove from heat and let the mixture cool slightly. Add the orange juice.
  • In a glass measuring cup, mix the warm water, the sugar and the yeast. Allow it to sit for 5 minutes, until it bubbles and the yeast is activated.
  • Beat the three eggs and add them to the reserved butter/milk mixture.
  • Sift the flour, mahlepi (and mastic if using) and place in the bowl of a stand mixer. To the dry ingredients, add the reserved butter/milk mixture and the yeast mixture. Mix to form a soft and pliable dough, adjusting the flour as necessary. Rub the surface with the oil and cover with plastic wrap. Let it rise for two hours.
  • Punch the dough down and divide it into four equal portions. Divide each portion into three balls. Cover the rest and work with three balls at a time: Roll each ball into a 10"-12" long log. Pinch the top ends of the logs together and then braid the logs. When you get to the end, pinch the bottom ends together. Tuck the top and bottom ends underneath the dough. Place braided loaf on a parchment lined baking sheet. Repeat steps with the remaining dough. Let the bread rise at room temperature for an hour.
  • Pre-heat oven to 350° F. In a small bowl, whisk together remaining egg and milk. Brush the tops of the loaves with the egg/milk mixture and sprinkle with sesame seeds or sliced almonds. Bake (in batches) for 20-25 minutes. Allow the bread to cool completely before serving.

DYED GREEK EASTER EGGS RECIPE

Dyed Greek Easter Eggs recipe image

These brightly colored Greek Easter eggs are the ultimate symbol of Greek Easter! Preparing these vibrant and colourful Easter eggs on Holy Thursday, always makes me realise that it's Easter time. Discover how to make them to perfection with this traditional easter egg recipe!

Provided by Eli K. Giannopoulos

Categories     Side

Time 20m

Yield 12

Number Of Ingredients 5

12 eggs
1 package red egg dye powder
6 cups warm water
1/3 of a cup vinegar
olive oil, for shinning

Steps:

  • To prepare these colourful Greek Easter eggs, start by boiling the eggs. Wash thoroughly the eggs and place them (in one single layer) gently in an empty pot. Add enough cold water to cover the eggs by 3-4 cm.
  • Season the water with a good pinch of salt and bring to the boil. If you like your eggs hard-boiled, but juicy at the same time, boil the eggs for 6 minutes.
  • Remove the pot from the stove and place the eggs under cold running water for about 1 minute to stop the cooking process. Crack one egg to check if you are happy with the result.
  • After the eggs cool down, start preparing the dye for your Greek Easter eggs. Place the warm water and the dye powder in a large glass bowl and stir, until dissolved. Add the vinegar and stir to combine. Place carefully the eggs (comfortably) in the bowl and set aside for 2-3 minutes. Remove with a slotted spoon on a rack over some kitchen paper and let them dry for about 40 minutes.
  • To give a little shine on your dyed Greek Easter eggs, wipe them with a paper towel with a little olive oil.

EASTER HARD BOILED EGGS

Easter Hard Boiled Eggs image

A Gruszecki tradition and now ours, is that each person gets a colored egg at the beginning of the meal, right after "grace". Each person uses his/her egg to tap on everyone else at the table, while wishing them a Happy Easter. Part of the trick is to be the last one with an egg not crushed. After you smack eggs with everyone at the table, the egg gets peeled and eaten. The following are a few hints that will help you cook the best hardboiled eggs: The fresher the egg, the harder it will be to peal it. You should purchase your eggs 2 weeks before you'll be cooking them in order to get them to peal easy. And, the way to get the yolk to be in the center of the egg after it's boiled, is to store them on their side. This relieves the pressure on the membrane within the egg that holds it suspended. The green coloring on the outside of the yolk is caused by cooking them too long. Cooking by the directions below will eliminate that. Time 12m

Yield 12 Eggs, 12 serving(s)

Number Of Ingredients 2

1 dozen egg, or
1 large egg, per person plus extras

Steps:

  • Place the eggs in a pot with enough cold salted water to cover.
  • Place over high heat and bring to a boil.
  • Boil for 5 minutes only, then take off the heat and let the eggs sit in the pot, covered, for an additional 10 minutes.
  • You'll get perfect hard boiled eggs using this method, without the outside of the yolk turning green.
  • Drain the water out and either run cold water in or use ice cubes.
  • If you don't cool them off quickly enough, they will develop a green skin between the yolk and the white.
  • Peel the eggs, quarter and plate them.
  • You can make these eggs a day or 2 ahead of Easter.
  • If you wish to dye them, purchase "Paas" dyes or another edible dye version and follow the package directions.

TSOUREKI (GREEK EASTER SWEET BREAD)

Tsoureki (Greek Easter Sweet Bread) image

This is a traditional Easter bread served in Greece to break the Lenten fast. It is traditionally braided, with a red-dyed*, hard-boiled egg inserted at one end, and then baked. Beautiful to look at - delicious to eat. Like many yeast breads, these loaves require two risings, so take that into consideration when timing to make them. I like to eat it most at breakfast, with a piece of graviera (a Greek cheese resembling Swiss) and a huge glass of ice-cold milk. A bite of tsoureki; a nibble of cheese; a swallow of cold milk - heaven!!!

Provided by evelynathens

Categories     Yeast Breads

Time 1h20m

Yield 3 loaves

Number Of Ingredients 14

2 cups milk
2 (1/4 ounce) envelopes active dry yeast
8 -9 cups bread flour
1 3/4 cups sugar
1 cup almonds, very finely chopped (optional)
1 teaspoon salt
1 orange, zest of, grated
2 teaspoons finely ground anise seed or 1 tablespoon mahlepi
1 teaspoon ground masticha (optional)
1/4 cup butter, melted
5 eggs, very well beaten
1 egg yolk
2 -3 tablespoons milk
1/2 cup slivered almonds

Steps:

  • Warm two cups of milk and place in a large bowl. Add the yeast, one cup of the flour, and 1/4 cup of the sugar. Cover and proof for one hour.
  • In a large bowl, combine seven cups of flour, the ground almonds, salt, remaining sugar, orange rind, aniseed or mahlepi and masticha (if using). Make a well in the center. Add the yeast mixture, melted butter and eggs. Work from the center outwards, bringing flour into the well, stirring the mixture until a dough begins to form.
  • Dust a worksurface with a little of the remaining flour and knead, adding more flour if necessary, until the dough is smooth and doesn't stick to your hands, about 12 minutes.
  • Place in an oiled bowl, cover with a cloth, and set aside in a warm, draft-free place to rise until doubled in bulk, about two hours. Punch down dough.
  • Divide into nine small balls and roll each into strips 10-12 inches long, and about 2 inches in diameter. Lay three strips side by side, pinching together at one end, and braid. Pinch together at the other end to hold the loaf intact.
  • Optional: At this point you can press a red-dyed egg between the strips of the braid or just leave the braided loaf plain.
  • Repeat the procedure to make the second and third loaves.
  • Place the breads on parchment-lined baking sheets, covered, and let rise for two hours, or until doubled in bulk. While the braids are rising, preheat oven to 340F (170°C), placing rack in middle rack of oven.
  • Beat together the egg yolk and remaining milk. Brush over tsoureki loaves and sprinkle with slivered almonds.
  • Bake for about 35-40 minutes, or until golden brown. I check my breads after about 15 minutes as they do tend to colour quickly and drape them with aluminum foil to prevent excess browning. The bread should sound hollow when tapped on the bottom. Remove and cool on racks.
  • *The special red dye used by Greeks to dye Easter eggs, as well as the spices Mahlepi (Mahleb) and Masticha can be found at all good ethnic grocery stores and in the Penzeys Catalague.

TSOUREKI (SWEET GREEK EASTER BREAD)

Tsoureki (Sweet Greek Easter Bread) image

This recipe was passed down to me from my Greek aunt. Traditionally the bread was made exclusively for Easter celebrations and had red-dyed hard boiled eggs nestled in the braids of the loaf. Nowadays the bread is popular at breakfast and is served all year round, without the hard boiled eggs.
