GREEK TURKEY BURGERS

Steps:
- Add all ingredients to a large mixing bowl and mix until thoroughly combined
- Take the mixture and form six 5oz burger patties - it helps to wet your hands before forming the patties
- Heat a greased grill pan or outdoor grill over medium heat
- Cook the patties for 7 minutes each side on an uncovered grill pan or open grill
- Remove from heat, allow to cool slightly and enjoy!

MY BIG FAT GREEK BURGERS

- In a small bowl, stir together the yogurt, oil, lemon juice, garlic, dill, and salt and pepper.
- Heat 2 teaspoons of oil in a nonstick skillet over medium-high heat. Add the onion and cook until soft and translucent, about 3 minutes. Add the spinach and cook until wilted, about 1 minute. Remove the pan from the heat. Add the feta cheese, dill and 1/4 teaspoon black pepper and stir to combine.
- Divide the turkey into 4 equal sized rounds. Make 2 equal sized patties out of each round so you have 8 patties total. Put 2 tablespoons of the spinach-feta mixture onto half of the patties. Top with remaining patties working the turkey around the edges to seal burgers closed. Season the burgers on both sides with the salt and remaining 1/4 teaspoon pepper.
- Spray a nonstick grill pan with cooking spray and heat over medium-high heat, or prepare the grill. Grill the patties until cooked through, about 5 minutes per side.
- To serve, place a burger on the bottom half of each bun, top with about 2 tablespoons of yogurt sauce, then 2 or 3 cucumber slices and a lettuce leaf. Top with the other half of the bun and serve.

- Preheat the oven to 250 degrees F.
- Place the turkey, egg yolk, oregano, salt and pepper in a large bowl. Grate half the red onion and add it to the bowl. Mix with your hands, then form into four 1/2-inch-thick patties. Place on a sheet pan or plate lined with parchment paper.
- Put the pitas on a baking sheet and place in the oven to warm.
- Heat the olive oil in a large cast-iron or other nonstick skillet over medium-high heat. When the oil is hot, add the patties and cook until they are brown on the outside and no longer pink in the center, approximately 5 minutes on each side.
- Remove the pitas from the oven and cut the tops off. Slice the remaining 1/2 red onion. Spread some tzatziki inside each pita. Fill each with lettuce, a patty, some chopped cucumber, red onion and feta, then serve with chips on the side.

- To make the Tzatziki:.
- In a medium bowl, stir to combine all ingredients. Add 1-2 tablespoons water to thin sauce if needed.
- For the burgers:.
- Equipment: Nonstick skillet and mixing bowls.
- In a large bowl, mix to combine ground turkey, olives, parsley, dried oregano, garlic, 1/2 cup crumbled feta cheese, salt and pepper. Divide into 4 portions and shape into burger patties.
- Warm olive oil in a large nonstick skillet over medium heat, then fry turkey patties until cooked through, about 4 minutes per side.
- To assemble turkey burgers, layer lettuce, tomato slices, onion slices onto open pita and top with burger. Garnish with remaining crumbled feta cheese and a dollop of tzatziki.

My take on a "Greek-style" burger. I like to eat this on pita bread in place of a bun. I didn't add this in the directions, but I generally make these ahead of time and put them in the fridge for at least 1-2 hours before grilling. They hold together better.

- Cut 1/4 (triangular shaped) from each pita. Chop the cut out pieces, transfer to a small bowl and sprinkle with milk. Let soak 5 minutes, then drain and squeeze excess milk.
- Puree soaked bread, onion, garlic, herbs, and lemon juice in a food processor. Transfer back to bowl and mix in lamb. Season with salt and pepper then form 4 patties.
- Heat olive oil in a skillet over medium-high heat, then add patties. Cook until medium, about 3-4 minutes on each side.
- Whisk yogurt, mint, garlic, mustard and honey in a small bowl. Stir in cucumber and season with salt and pepper.
- Warm pitas in toaster oven, oven, or microwave if desired. Open each pita and stuff with burger, arugula, and red onion. Add tomato, kalamata olives, and cucumber if desired. Serve with dressing and feta.

- Prepare charcoal grill for direct heat cooking.
- Remove cooking rack from grill and spray with non-stick cooking spray.
- In medium bowl combine turkey, olives, parsley, garlic, cinnamon, nutmeg, salt and pepper.
- Evenly distribute mixture into four burgers (approximately 4 1/2 inches in diameter). Grill burgers 2 to 3 minutes per side until meat thermometer registers 160 to 165 degrees F.
