GREEK CHICKEN AND SPINACH ROULADE WITH LEMON BUTTER SAUCE

Greek Chicken and Spinach Roulade with Lemon Butter Sauce image

I came up with this recipe after making steak gyros, I always end up with left over tzatziki sauce and always ended up throwing some away. This was born out of the hate of wasted good food.

LEMONY GREEK CHICKEN, SPINACH AND POTATO STEW

Lemony Greek Chicken, Spinach and Potato Stew image

If your favorite Greek foods are the lively vegetable dishes, this meal-in-a-bowl stew is for you. A simple mix of lemon, garlic and lots of herbs enliven the potatoes and spinach and using ground meat ensures a lot of flavor in very little time. Ground turkey or pork would be just as good, if you prefer. Russets can be substituted for Yukon golds, but their texture will be more grainy and less creamy. Mature spinach or frozen spinach works best here because of its mellow flavor, as opposed to baby spinach, which is more tannic. Add the amount of dill that sounds best to you, or if you don't like it, swap in a few tablespoons of fresh parsley or mint.

Categories     dinner, soups and stews, main course

Time 35m

Yield 4 to 5 servings

Number Of Ingredients 15

1/4 cup extra-virgin olive oil
1 red or yellow onion, finely chopped
8 large garlic cloves, smashed and finely chopped
1 1/2 teaspoons coarse kosher salt, plus more to taste
1 pound ground chicken
1 heaping tablespoon roughly chopped fresh rosemary (leaves of about 1 large sprig) or 1 1/2 teaspoons dried rosemary
1 1/2 teaspoons dried oregano
1 teaspoon red-pepper flakes
Black pepper
1 1/2 pounds Yukon gold potatoes (about 3 medium), scrubbed and chopped into 1/2-inch chunks
6 cups chicken broth
Juice of 1 large lemon (about 1/4 cup juice)
1 (8-ounce) bunch mature spinach, stems included, chopped, or 1 1/2 cups frozen leaf spinach
1/4 to 1/3 cup lightly packed roughly chopped dill
Crumbled feta and crushed pita chips, for topping

Steps:

  • In a large pot or Dutch oven, warm the oil over high heat. Add the onion, garlic and salt and cook, stirring, until the onion and garlic are softened and just starting to brown, 5 minutes. (Decrease the heat to medium-high if necessary to prevent scorching.)
  • Decrease the heat to medium-high and add the chicken, rosemary, oregano, red-pepper flakes and several generous grinds of black pepper. Cook, breaking up the chicken into crumbles, until the meat starts to lose its translucent pinkness and is turning white, about 2 minutes. Add the potatoes and stir well to combine. Add the chicken broth and half the lemon juice, scraping up any browned bits on the bottom. Bring to a rolling boil and then lower the heat to maintain a very brisk simmer. Simmer until the potatoes are nearly tender, 15 minutes.
  • Add the spinach and dill, to taste. Continue to simmer briskly until the potatoes are tender, about 5 minutes more. Taste and add some or all of the remaining lemon juice, as well as more salt and pepper, if desired. Serve in bowls topped with feta and crushed pita chips.

GREEK CHICKEN AND SPINACH

Greek Chicken and Spinach image

This was a quick "throw together" meal one night recently, and it worked out great. Sorry, no exact proportions on a lot of things. It's very much an "eyeball" recipe. Use as much or as little of the ingredients as you like.

CHICKEN ROULADE WITH SPINACH FETA CHEESE AND ROASTED RED PEPPER.

Chicken Roulade With Spinach Feta Cheese and Roasted Red Pepper. image

I made this for Valentines Dinner and it was a big hit. I saw some of this recipe on a foodnetwork show(not sure which one) I added a pack of Lipton savoury herb and garlic dip mix to the breadcrumbs,to add a little extra flavour, before frying them off, there recipe called for deep frying before roasting, I fried this one off in a little oil in a skillet, before roasting. It worked really well. The chicken came out moist and juicy, and full of flavour.

Lipton Recipe Secrets savory herb with garlic soup mix

  • Put the chicken on top of a piece of cling film, and season each breast with salt, black pepper, and garlic powder. Then cover with another piece of cling film and pound chicken till it flattens out (not too much it is easy to overdo this) and the seasoning is embedded in the meat.
  • Take each breast and layer it with the spinach leaves first then the feta and the red pepper.
  • Fold in the sides of each breast and roll up and secure with tooth picks.
  • Cover with cling film and chill for at least 2 hours.
  • Preheat oven to 325°F .
  • In a large dish big enough to dip the chicken in beat the eggs.
  • Next to the eggs, use another dish about the same size and combine bread crumbs and garlic dip mix.
  • Put the oil in a skillet and allow to get hot.
  • While the oil is heating, take the chicken and first dip into the egg till coated and then into the bread crumbs, making sure all surfaces are covered.
  • When the oil is hot add the chicken to the skillet, one at a time, and turn using tongs, when each side has become lightly browned. Then place on a baking sheet. Repeat with each breast.
  • When all the chicken has been browned, place baking sheet, and roast for about 25 minutes or till the internal temperature is 170°F or juices run clear.
  • Enjoy.
